Greek salmon is delicious, flaky, and tender. This healthy oven-baked salmon is packed with Mediterranean flavors and is ready in just 20 minutes. 

Greek Salmon

lb. salmon, cut into fillets

tablespoons olive oil

tablespoon lemon juice, freshly squeezed

tablespoon fresh dill, chopped

oregano

clove garlic, grated

teaspoon salt

teaspoon ground black pepper

Preheat the oven to 400 degrees. Pat dry salmon fillets and place skin-side down on a lined quarter sheet baking pan.

In a small mixing bowl, stir to combine olive oil, lemon juice, dill, oregano, garlic, salt, and pepper. Brush or pour the marinade over the salmon and let it sit while the oven is preheating.

Bake for 15 minutes. Let rest for 5 minutes, then serve with an extra squeeze of lemon juice on top, if desired.

This recipe is restaurant quality!  Our new daughter in law has not stopped talking about how delicious it was!   The only thing I changed was I cooked it on the grill in a stainless steel baking pan and added some fresh spinach 5 minutes before I pulled it off!

For such a quick and easy recipe, this dish is awesome!

OMGosh, this might be my favorite dish ever! I served this over a bed of fresh baby spinach with roasted beets on top. I used 1 Tbsp fresh oregano and 1/2 Tbsp dried dill because that's what I had. Absolutely delicious. Can't wait to make this again.

Y’all, this was sooo good.  I really like the warm salmon with the cool feta mixture.  I am not a fan of dill but it was not overpowering and really complimented the fish.  I will definitely make this again.

I made this for dinner on Friday. My husband and I were blown away with how good it is. I wished I had made more so I could have it for leftovers too. Oh well, I am making it again tomorrow for dinner instead.

Delicious! I had left over topping.. do yourself a favour and save some for the next day. I put this on top of my eggs the next day. A piece of toast, bed of Arugula, over easy or poached eggs with the greek topping over it all. The left over smashed potatoes were dynamite the next day with this too!

So much flavor and color!  A beautiful dish aesthetically as well. I served it over rice pilaf.

My family loved this!  I did not have fresh dill so I used a teaspoon of dried dill and added just a little more fresh garlic (because we are garlic fiends!) and it was absolutely outstanding! This is our favorite Salmon recipe!  It’s so quick and easy, yet tastes wonderful and appears to be a dish that requires time and expertise to make!  Guests have asked for the recipe - the highest compliment.  Thank you for sharing this great recipe and giving step-by-step instructions to make it easy to follow.

Grilled Salmon served over optional quinoa (or rice) with greens, grilled vegetables, fresh veggies and  Tzatziki Sauce. Feel free to substitute chicken or tofu for the salmon ( see notes). If going grain-free, leave out the quinoa and add more grilled veggies.

Grilled Salmon with Tzatziki 

salmon (serves 2)

olive oil

salt and pepper

lemon- sliced in half

tomato

small eggplant, sliced (or sub zucchini)

Everyday Quinoa (tastes great here)

spinach

Fresh veggies- radishes, cucumber, microgreens, sprouts

Fresh herbs- dill, mint parsley

Set the quinoa or rice to cook on the stove, according to directions.  (Quinoa only takes roughly 20-30 minutes)

Brush salmon with olive oil and season with salt and pepper. Set aside. Brush the eggplant or zucchini with olive oil and season with salt and pepper.

Make the optional  Tzatziki Sauce, or use store-bought.

Place salmon on a well-greased grill, along with the lemon (open side down), the tomato (open side down) and the sliced eggplant.  Grill salmon on both sides for 3-4 minutes, shorter or longer depending on the thickness of the cut. Grill the lemon and tomato until deep grill marks appear, and flip the eggplant, grilling till tender and translucent. (You will use the grilled lemon to squeeze over the salmon before serving.)

When veggies and salmon are done, assemble the 2 bowls.

Divide quinoa among two bowls. Top with a handful of greens. Add any fresh veggies you like and drizzle with a little olive oil, sprinkle with salt and pepper and a squeeze of the grilled lemon. Arrange the grilled vegetables and salmon over top. Squeeze more of the grilled lemon over the whole bowl. Spoon a few generous spoonfuls of tzatziki sauce over top of the salmon. Scatter with fresh dill or other herbs.

Pour yourself a glass of white wine. Enjoy!

We grilled the salmon with eggplant and zucchini.    we had quinoa, arugula, cherry tomatoes and the delicious tzatziki for our bowls.  The grilled lemon added a nice touch. This recipe was delicious! I ended up baking my King salmon as recommended in the notes, and it turned out moist and flakey. The quinoa recipe, as well as the tzatziki elevated the dish and will be in constant rotation now. Greek Salmon Salad Bowls

salmon

avocado or olive oil

cups chopped romaine lettuce

tomatoes,

cup diced green bell pepper

cup kalamata olives

cup marinated artichokes, havled

cup quartered English cucumber

cup thinly sliced red onion

oz feta cheese, crumbled

teaspoon dried oregano

dill

cup olive oil

tablespoons red wine vinegar

tablespoon lemon juice

teaspoon oregano

Bring the salmon to room temperature and then pat the fish dry with a paper towel. Season the salmon liberally with salt and pepper.

Heat a large pan over medium-high heat. Once hot, add 1/2 tablespoon of avocado or olive oil.

Cook the salmon 4-5 minutes per side until golden brown and cooked through.

While the salmon is cooking, make the salad and whisk together the dressing.

Let the salmon cool for a bit before starting to assemble the salads. Transfer the salad to bowls, place the salmon fillets over the salad, and then drizzle over the dressing.

This Mediterranean dish features flaky, tender salmon, pan-seared on the stove top with oregano, paprika, salt, pepper, and olive oil. The Greek salmon is then dressed with vibrant marinated veggies (kalamata olives, green olives, cherry tomatoes, cucumber, red onion) and feta cheese mixture.

oz cherry or grape tomatoes

cucumbers (quartered)

lb salmon ((4 fillets))

Combine the marinade ingredients in a small mason jar. Whisk with a fork until emulsified.

In a large mixing bowl, add sliced cherry tomatoes, quartered cucumber slices, olives, sliced red onions, and the marinade. Mix the marinade thoroughly with the veggies. Season with salt and pepper, if needed. Let the vegetables marinate while you cook the salmon.

Prepare marinated veggies

In a small bowl, toss together cubed feta cheese with extra virgin olive oil, dried oregano, and freshly ground black pepper.

Heat a large, high-sided skillet (I used cast iron) over medium heat for about 4 minutes until hot. I used 4 salmon fillets with skin-on. Season the top of the salmon (the non-skin part) with paprika, dried oregano, salt, and pepper, using 1 tablespoon of olive oil to rub the spices on top of the fish.

Add 2 tablespoons of olive oil to the hot skillet—the oil should sizzle. Add salmon fillets, skin side up. Slide them around with the spatula a little to ensure they are covered with olive oil on the bottom, and don&#39;t stick to the bottom of the pan. Cook them on medium heat for 4 minutes, undisturbed.

Flip the salmon to the other side, skin side down. Cook on medium or low-medium heat for 5 more minutes. Remove from heat.

If you&#39;re OK with salmon having the skin on the bottom, skip this step: To remove the skins, carefully slide a wide spatula between each salmon fillet and the skin to carefully separate the flesh from the skin. Transfer the salmon (without skin) to a plate. Remove skins from the skillet. You can eat them later or discard them if you don&#39;t like them.

Pan-sear the salmon

Serve Greek pan-seared salmon on a large serving platter or individual plates, topped with the marinated vegetables and the feta mixture. Garnish with fresh herbs (optional).

Assembly

This no-fail salmon recipe delivers on flavor without the fuss. Feel free to swap in whatever tender green herbs you have on hand (like parsley or cilantro). Serve with Greek salad and your favorite grain.

Get ready. Position a rack in the center of the oven and heat the oven to 400°F.  Lightly oil a baking dish that’s large enough to hold the salmon.

Make a Greek-style sauce. In a small bowl, whisk together the lemon juice, half of the zest, garlic, oregano, dill, and enough olive oil to generously coat the salmon (about 1/3 cup).

Prep the salmon. Pat the salmon dry and season with salt and pepper on both sides. Place in the prepared baking dish and scatter on the green onions and cherry tomatoes. Spoon the Greek sauce over everything.

Roast the salmon. Bake in the heated oven until the thickest part of the salmon flakes easily with a fork, 8 to 15 minutes. Sprinkle with the remaining lemon zest and dill and serve.
