This easy Greek style rice is so easy to make and makes the perfect side dish for your greek chicken or souvlaki. With just a handful of ingredients, you can make this restaurant style Greek rice pilaf at home! It is wonderful served hot or allow it to cool and serve it at room temperature as part of a picnic. Or portion it out with some grilled chicken and fresh spinach for your lunch prep!

Greek Style Rice Recipe (Greek Pilaf)

onion

garlic

tbsp extra virgin oil

white rice

oregano

lemons

vegetable broth

parsley

tbsp extra virgin olive oil

Salt and pepper

Peel and chop the onion into small chunks then peel and mince the garlic.

Heat the extra virgin olive oil in a large saute pan/ deep frying pan (Use one you have a lid for)

Add in the onions and cook over low heat for 4-5 minutes until soft, Add the garlic and cook for a further minute.

Pour in the rice and stir to coat in the olive and onion mixture.

Add the zest and juice of one lemon, the dried oregano and then pour in the hot vegetable broth.

Bring to a simmer then cover and cook for 15 minutes over low heat.

Once the time is done, remove the pan from the heat and leave it covered for 10 minutes.

Once this time is done, remove the lid and squeeze over the juice of the remaining lemon.

Taste the rice for salt, then garnish with your fresh herbs and finish with extra virgin olive oil and plenty of black pepper and salt if needed.

Authentic Greek Lemon Potatoes Recipe

potatoes ((see note))

lemon juice

olive oil

Greek oregano (, or regular if you don’t have Greek)

sea salt

black pepper

veggie broth (, low sodium if needed)

Preheat

Cut potatoes into 8 or 16 pieces, depending on size of potato. You want the pieces around the same size for even cooking.

Season

Put in a baking dish. Add the rest of the ingredients and use your hands to coat.

Bake

Bake for 45-50 minutes until brown on the edges or if you made the soft version, until the broth has evaporated and they are cooked through.

Serve

Serve alone or with a Greek salad, Gyro, or other Greek dish!

Greek Orzo with Lemon and Herbs Recipe

vegetable/chicken broth ((see note 1))

extra virgin olive oil (to taste)

lemon juice (to taste)

Finely chop the onion and garlic.½ onion3 cloves garlic

Heat the extra virgin olive oil in a small saucepan over medium heat.2 tbsp extra virgin olive oil

Add the onion, garlic, and salt, then cook gently until softened (about 2-3 minutes)¼ tsp salt

Add in the oregano, dill and black pepper. Then stir in the orzo until well coated in the oil and herbs.1 tsp dried oregano1 tsp dried dill¼ tsp black pepper1 cup orzo

Add the zest of the lemon (reserve ½ teaspoon for garnish later) and then pour over the broth and bring to a simmer. Simmer the orzo for 10 minutes or until cooked through. (There should be very little liquid left once cooked - see note 1)1 tbsp lemon zest2 ½ cups vegetable/chicken broth

Once cooked, add salt and pepper to taste. Then transfer the orzo to a serving dish and finish with a drizzle of olive oil, a squeeze of lemon, fresh dill and the reserved lemon zest.saltpepperextra virgin olive oillemon juicefresh dill

I tried this with a red lentil version instead; the colour and nutty flavour really made this dish an instant favourite with my friends and family! So yum

I made this tonight and served it with Greek marinated chicken, but it would also be great with salmon . I didn’t have dill so used lemon thyme, I also added some frozen peas in the last five mins. Will definitely make this again.

Made this for 8 servings. Only thing I changed was I used lemon infused olive oil and cooked the onions a bit longer. Otherwise, made it exactly as written and it turned out perfectly. All my guests enjoyed it!
