This green bean recipe will become your new favorite side dish. Inspired by a classic French recipe (haricots verts amandine), these green beans feature buttery toasted almonds, tender shallot and a squeeze of lemon. Recipe yields 4 generous side servings; you can double the recipe by cooking it in a large Dutch oven.

Green Beans Amandine

unsalted butter, sliced into several pieces

almonds

shallot (about 1 small)

haricots verts

lemon juice,

salt,

black pepper,

In a large skillet over medium-low heat, melt the butter. Once it’s completely melted, add the almonds. Cook, stirring constantly with a heatproof spatula or wooden spoon, until the butter has browned and the almonds are beginning to brown, about 7 to 8 minutes. (Your patience will pay off, I promise!)

Add the shallot and cook, while stirring constantly, for 1 minute. Stir in the lemon juice and 1 tablespoon water. While stirring, cook until the liquid thickens enough that your spatula leaves an open trail on the pan behind it, about 1 more minute. 

Use your spatula to scoop all the mixture into a bowl, and set it aside for now. Return the empty skillet to the stovetop, and add the green beans, ½ cup water and ½ teaspoon salt. Cover and cook over medium heat, stirring occasionally, until the beans are nearly tender, about 9 to 10 minutes. 

Remove the lid and cook over medium-high heat until the liquid evaporates, about 2 to 4 minutes. 

Off the heat, add the reserved almond mixture to the skillet and toss to combine. Season with salt and pepper, to taste, and serve. Leftover green beans will keep the fridge, covered, for about 4 days. 

Lovely recipe! I used olive oil, and sunflower seeds instead of nuts and it worked wonderfully.. Also swapped out the shallot for spring onion, which also worked well! Xx

Hallo Kate, another good recipe. I use a collapsable stainless steel basket which fits any pan &amp; is brilliant for steaming veg. This means veg keep flavour &amp; instead of goodness going into the water. You can put in a selection of veg &amp; even tiny new potatoes as flavours don’t transfer. Sometimes i steam a whole cauliflower, eat half with other veg &amp; slice the rest to fry up the next day. Cauli with almonds or fried breadcrumbs scattered on top is great. Green beans with chopped onions &amp; olive oil &amp; lemon is another family favourite. Well done kate.

I have followed Cookie and Kate for almost five years and have loved every recipe I have tried.  I made the Green Beans Amandine last night and it is the best recipe ever!  My husband and I finished the entire 1# batch and we both raved about how good they were.  The lemon juice is the perfect flavor addition.  Yum!

Fabulous! I just made for breakfast.  After tasting the almond concoction, I almost didn't add the beans. I plan on having again tomorrow. A very nice uptick from my usual Lao inspired scrambled egg/green bean dish. Not my favorite veg. Thank you.

I usually make string beans almondine ea yr for Thanksgiving. How do you think it’ll come out if I prep the shallot/almond step in advance and refrigerate it?
I can then blanch the beans on Thanksgiving and mix it in. I’d leave the shallot mix at room temp well in advance 
or possibly warm briefly in the microwave so it doesn’t lower temp of beans too much? Thanks for all your healthy recipes!!

These are truly the “Best Green Beans” ever! Our new family favorite! You right, Kate, the patience needed to brown the butter and almonds was well worth it! Sometimes if I can see a shortage of time making a meal, I will go ahead and brown the butter and almonds and add the shallot and lemon juice and water as recipe indicates. Then set it aside.

Made these for Thanksgiving dinner, and omg. These were the best green beans I've ever eaten. My husband is not a big fan of green beans and he also thought they were fantastic.  This recipe is a keeper.

These green beans are everything! I made these as a thanksgiving side, and they are spectacular. It doesn’t seem like a green bean could taste this good, but those brown butter toasted almonds and shallots are better than bacon. This method of cooking green beans leaves them tender without getting mushy. They come together quickly and are so delicious. I’m going to make these often! Best Green Beans Recipe

This green beans almondine recipe is one of my favorite ways to serve green beans. It&#039;s so simple to make, and it&#039;s absolutely delicious. The toasted almonds offer the perfect crisp, nutty contrast to the tender green beans. A squeeze of lemon juice takes it all over the top.

Green Beans Almondine

green beans (preferably haricot verts, trimmed)

olive oil

shallot (thinly sliced)

sea salt (plus

garlic (grated)

lemon juice

black pepper

Bring a large pot of salted water to a boil and set a large bowl of ice water nearby. Drop the green beans into the boiling water and blanch for 2 minutes. Drain, and immediately immerse in the ice water to stop the cooking process. Drain, and transfer to a towel to dry.

Heat a cast-iron skillet over medium heat. Add the almonds to the dry skillet and toast until golden brown, 2 to 3 minutes. Remove the almonds from the pan and set aside.

Add the oil to the pan (turn down the heat down if necessary), then add the shallot and the salt and sauté for 2 minutes. Add the green beans and sauté, 2 to 4 more minutes, until the green beans are warmed through and tender. Remove the pan from the heat, add the garlic and lemon juice and toss. Season to taste with salt and pepper and transfer to a serving dish. Top with the almonds and serve.

Prepare the green beans by washing them and trimming the stems off the top and if they are very large you can cut them in half.

Toast the almonds in a dry skillet over a medium heat until they are browned then set aside, this will only take a few minutes. If you are not dairy free then you could toast them in a little butter.

Clean the skillet then add the coconut oil and cook the chopped shallots for 3-4 minutes until soft, and add the garlic in the last two minutes of cooking.

In a separate pan add one cup (250mls) of water and the green beans and cook for about 5-7 minutes until just crisp tender.

Drain the beans and toss them in the lemon juice, cooked shallots and garlic, and a little salt and pepper.

Serve topped with the toasted almonds.

Fill a large saucepan 2/3 with water and bring to a rapid boil. Add 1 Tbsp salt and green beans. Return to a boil and boil for 3-7 minutes or until crisp-tender  (timing depends on the size of the green beans).

Drain beans immediately in a colander and rinse them with cold water to stop the cooking process. Drain and set aside.

In a large skillet, over medium heat, melt 3 Tbsp butter. When butter is foaming, add the almonds and 1/4 tsp salt and pepper and and stir constantly for 2-3 minutes or until nuts are golden and toasted (don&#39;t walk away as they burn quickly).

Add garlic and stir for 30 seconds until fragrant but do not brown. Turn off the heat and add the remaining Tablespoon of butter then add green beans. Season with more salt and pepper to taste.

Grate fresh lemon zest and toss to combine. Transfer beans to a serving platter and pour over the skillet sauce and almonds. Garnish with more lemon zest and serve right away.

Bring a large pot of salted water to boil. Set a large bowl of ice water nearby. Add green beans into boiling water and blanch for 2 minutes. Drain and immediately put them in the ice water to stop the cooking process. Drain them once cooled off.

Green Beans Almondine (Amandine) Recipe

haricot verts or fresh green beans

unsalted butter

Juice of ½ lemon (about 1 tablespoon)

salt and fresh cracked pepper

Add the green beans to a large pot of boiling salted water and cook for 3 minutes.

Remove the beans and immediately shock them in an ice bath for 1 to 2 minutes or until cooled.

Drain the beans and set them aside.

Add 2 tablespoons of butter to a large 12” stainless steel pan over low to medium heat.

Pour in the almonds and cook for 4-6 minutes or until browned while frequently stirring.

Scoot the almonds to one side of the pan, and on the other side of the pan, add the garlic, shallots, and 1 tablespoon of butter and cook while frequently stirring for 30 to 45 seconds or until fragrant.

Mix the garlic and shallots with the almonds.

Add the green beans and butter, salt, pepper, and lemon juice.

Mix until everything is combined.

Serve the green beans with the toasted almonds, shallots, and garlic on top.
