Grilled Portobello Mushrooms bathed in a simple balsamic herb marinade, topped with fresh mozzarella cheese, cherry tomatoes and basil and grilled to perfection. Drizzled with a rich balsamic glaze.

Grilled Portobello Mushrooms Caprese

portobello mushrooms (cleaned, stems and gills removed)

Balsamic Glaze

extra virgin olive oil, oil

balsamic vinegar

garlic (grated)

rosemary (finely chopped)

salt and ground black pepper (to taste)

mozzarella cheese balls

cherry tomatoes

basil (thinly sliced, (divided))

In a large resealable bag or shallow dish, mix all the marinade ingredients. Add the mushrooms and gently toss to coat. Marinate for 10 minutes, flipping once.

Heat the grill or grill pan to medium high heat. Make sure your grill grates are clean. Oil the grates right before cooking.

In a medium bowl, mix the fresh mozzarella, tomatoes, 1 tablespoon of basil and vinegar. Season with salt and pepper to taste.

Remove the mushrooms from the marinade and place them on the hot grill, stems side down. Cook for about 4-5 minutes. Flip the mushrooms and cook on the other side for about 5 to 6 minutes or until the mushrooms are heated through and tender.

To fill the mushrooms with ease, you may want to remove the mushrooms from the grill and place them on a plate or sheet pan. Fill each portobello mushroom with the caprese salad and close the grill lid to allow the heat to melt the cheese. If using a grill pan, cover the grill pan with a large lid (from a pan/pot) or place the grill pan under a pre-heated broiler for a few minutes or until the cheese melts.

Remove from the grill (or broiler), Drizzle with balsamic glaze and garnish with the remaining 1 tablespoon of basil. Serve immediately.

Preheat a grill to medium-high heat (375 to 450 degrees Fahrenheit).

Clean the portobello mushrooms and remove the stems. Drizzle the gill sides with the olive oil and use your hands to rub all over the mushrooms, including the bottoms. Then drizzle the gill sides with balsamic vinegar, sprinkle with kosher salt, and add several grinds of black pepper.

Place the mushrooms directly on the grill grates gill side up and grill 10 to 14 minutes until tender and juicy. Liquid will pool in the cap. Flip the mushrooms (this drains the liquid into the grates) and cook for an additional 2 to 3 minutes until browned.

Whisk together the balsamic vinegar, olive oil, garlic powder, black pepper and salt in a shallow baking dish.

Remove the stems and gills from the mushrooms.  Add them to the baking dish and flip them to coat them in the marinade mixture.  Let the mushrooms marinade for at least 5 minutes.

Preheat a grill over medium high heat (approximately 400 degrees F).  Brush the grill grates with an oil to prevent the mushrooms from sticking to the grill.  Remove the mushrooms from the marinade and shake off any excess marinade.  Place them on the grill on direct heat.  Cook for 3-4 minutes per side until the mushrooms are a deep golden brown color.

Serve the mushrooms topped with the fresh parsley.  Enjoy!

Place the mushrooms on the grill in a single layer cap side down. Grill for 8 minutes, then flip over and grill until knife tender and caramelized, about 4-6 more minutes.

Serve immediately with fresh parsley, if desired.
