Perfect Filet Mignon cooked two different ways - pan seared and finished in the oven, or grilled!

Filet Mignon

(about 6-ounces each) filet mignon steaks

olive oil

salt salt

black pepper

Preheat oven to 400˚F.

Let steaks rest at room temperature for 30 minutes.

Rub steaks with olive oil.

Combine salt and pepper in a small mixing bowl.

Rub steaks all over with the salt and pepper mixture.

Set a cast iron skillet over high heat and wait for the pan to get hot.

When the skillet is hot, add the steaks to the skillet and cook for 3 minutes; flip over and continue to cook for 2 more minutes.

Transfer skillet to the oven and cook for 4 more minutes, or until internal temperature registers at 125˚F for medium-rare, or 130˚F for medium.

Remove from oven and let steaks rest for at least 5 minutes before cutting.

Serve.

Oven Method

Preheat grill to HIGH heat.

Oil your grill grates with avocado oil, vegetable oil, or any other high smoke point oil. Don’t use olive oil.

Place the prepared steaks on the preheated grill. (NOTE: Remember to let the steaks sit at room temperature for 30 minutes before cooking - also, season the steaks with salt and pepper.)

Cook the steaks for 5 minutes per side, or until internal temperature registers at 125˚F for medium-rare, or 130˚F for medium.

Remove from Grill and let rest 5 minutes before cutting.

To Grill

The simplest way to grill filet mignon without ruining it. Grilled to perfection in 10 minutes and topped with my favorite herb butter.

Soften the butter in a microwave safe bowl until malleable, 10-15 seconds. Stir in herbs and garlic until fully mixed. Spoon the butter onto tin foil doing your best to reshape it to resemble a stick of butter. Place in refrigerator for about 10 minutes and remove 5 minutes before adding to the filet.

For the herb butter

Season both sides of the filet generously with salt and pepper and fresh rosemary. Rub with a little olive oil and let rest for 30 minutes before cooking, this is to bring the steak to room temperature and ensure your cooking times are more accurate.

Preheat grill to high heat. Keep the lid closed and let the internal temp to get up to around 500° F.

Place the filets face down and sear undisturbed for 5 minutes. Flip the filets and sear for an additional 5 minutes. This is ideal for medium-rare.

For rare, sear for 4 minutes a side. Medium rare, 5 minutes. Medium, 6-7 minutes. Medium well, 8+ minutes. Remember, depending on the size of the steak, the more or less time it will take. This recipe is ideal for a 8-10 ounce portion, roughly 2 inches thick.

Remove filets from the grill and set on a plate. Let sit for 5 minutes before serving. This is important to bring your steak to its final serving temperature. Top with a slice of garlic and herb butter and serve.

How to Grill Steak Perfectly Every Time

prime filet mignon (you could also buy Choice)

prime ribeye steak

avocado oil

salt

unsalted butter,

garlic clove, minced

rosemary

thyme

sea salt

To make the garlic herb butter, to a small bowl add butter, garlic cloves, rosemary, thyme and salt. Using a spoon mix together until combined. Set aside at room temperature.

Garlic Herb Butter:

Remove steaks 30 minutes prior to grilling to take the cool off.

Heat grill to medium high heat, approximately 350-400°F.

Pat steaks dry with a paper towel. Lightly brush both sides of steak with avocado oil.

Liberally season both sides with salt and pepper. (the thicker the steak the more salt you&#8217;ll want, the measurements are a base!!!

Place seasoned steaks on searing hot grill and close the grill. DO NOT TOUCH. Flip at recommended time below for desired doneness.

3 to 4 minutes per side for rare (120°)

4 to 5 minute per side for medium-rare (130°)

5 to 6 minutes per side for medium (140°)

6 to 8 minutes per side or well done (150°+)

Once steaks reach doneness temperature immediately remove from grill and let rest for 5-10 minutes to allow juices to redistribute.

Top with a scoop of garlic herb butter before serving.
