Truly the best baked chicken meatballs made with ground chicken. They are tender and moist and filled with flavor. Great on top of spaghetti, inside a meatball sub or served all by themselves!

The Best Baked Chicken Meatballs

Preheat oven

Preheat the oven to 400° and line a large baking sheet with parchment paper or a reusable silpat, spray with cooking spray.

Mix meatballs

In a large bowl combine the bread crumbs, milk, salt, pepper, parsley, Italian seasoning, onion powder, shallots and garlic.In another bowl whisk together the egg and extra virgin olive oil. Pour it into the bread crumb mixture. Add the cheese and ground chicken to the bread/egg mixture. Lightly combine, do not overmix or you will have tough meatballs.

Roll 20 meatballs

Form the chicken mixture into 20 meatballs, placing them on the prepared baking sheet. They will be a little smaller than a golf ball. Spray the tops of each meatball with the baking spray.

Bake 20 mins

Bake the meatballs for 20 minutes until they are cooked through (165° internal temp). For a golden top place them under the broiler for 3-4 minutes.

These meatballs can be served on top of spaghetti with marinara sauce or in a meatball sub!

Prep the vegetables (onion, carrot, garlic): clean and peel and throw them in a food processor along with avocado and seasonings.

Prepare The Ingredients

Pulse the ingredients a few times until finely chopped, then add the egg and tomato paste, pulse another few times until incorporated.

Then add the ground chicken and mix by hand or with a spatula. Don&#39;t mix in the food processor it will make the texture very wet and will be harder to handle.

If you can&#39;t find pre-made ground chicken, use your food processor to finely ground some chicken breasts. If you can, add some thigh meat as well for a more round flavor.

Mix The Ingredients

Use a small cookie or ice cream scoop to evenly portion out the meatballs. Place one by one in a baking sheet lined with parchment paper, or if you have mini muffin pan, use that, it will help keep the shape better.To help with stickiness when rolling: lightly dampen hands with some oil.

Form The Meatballs

Place in a 400-degree F oven and bake for 20 minutes until slightly golden browned. They usually have a lighter color than those made with red meat. You can turn the broil function for the last minute or two of baking for a more golden surface.Baking the meatballs is easier, healthier and mess free. But you can also fry them if you like.

Bake The Meatballs

Keep everything the same, you just need to replace the egg with parmesan cheese and add some bread crumbs (or flour) in order to absorb the extra moisture.  Add them at the end with the meat and mix by hand.For the grain free / gluten free version opt for a nut/ seed flour or arrowroot flour.

Egg Free Chicken Meatballs Version

Grind your own chicken in the food processor with shallots, herbs and seasonings for this easy and moist kofta. Option to air fry or bake in the oven!

Place chicken breast in the bowl of a food processor. Grind chicken until minced.

Add fresh mint, parsley, shallots, garlic, egg, bread crumbs, shawarma spice, and salt.

Pulse until everything comes together thoroughly.

Using a small ice cream scoop shape them into small meatballs. Approximately 2 tablespoons.

Place in air fryer, spray with olive oil spray or brush with a little olive oil.

Cook at 350 degrees F. for 13-15 minutes.

If you don't have an air fryer, bake at 375 degrees F. for 18-20 minutes or until cooked through.

Serve with hummus and a salad or in a wrap.

A meal prep friendly twist on chicken tikka masala.

Chicken Tikka Meatballs

almond flour

tsp garam masala

tsp chili powder

turmeric

tbsp avocado oil

yellow onion

ginger

tomatoe sauce

full fat coconut milk

Preheat oven to 350F and line a baking sheet with parchment paper

Combine all meatball ingredients in a large mixing bowl

Using a 1.5 tbsp measuring scoop, scoop out meatballs onto the baking sheet and roll into tighter balls (about 15 meatballs)

Bake meatballs for 15 minutes and then remove from the oven

While the meatballs bake, dice the onion, and mince the garlic and ginger

Heat avocoado oil in a large nonstick frying pan or an enameled cast iron casserole dish over medium-low heat

Add the diced onion to the pan and saute until soft and fragrant about 4 minutes

Add ginger, garlic and spices to the pan and saute for another minute

Add tomato paste to the pan and saute for another minute

Pour tomato sauce and coconut milk to the pan, mix thoroughly and increase the heat to medium-high until the sauce bubbles

Reduce the heat to medium-low and allow the sauce to simmer for about 15 minutes

Turn off heat and add baked meatballs to the pan. Toss the meatballs so that they are fully covered in the sauce

So flavorful and delicious! The recipe doubled was perfect for our family of 6. We will definitely make it again very soon, so easy to make too!

Egg Roll Chicken Meatballs with Sweet Chili Sauce

lb Chicken Breast (Ground

Shredded Cabbage (140 grams)

Carrots (Chopped, 64 grams)

White Onion (Chopped, 40 grams)

Green Onion (Chopped, about 25 grams)

1½ Tbsp Minced Garlic (about 4-5 cloves)

Tbsp Minced Ginger (about 6 grams)

1½ Tbsp Coconut Aminos (or Low Sodium Soy Sauce)

Salt

½ tsp Black Pepper

Almond Flour (40 grams, see notes for sub)

Water

Rice Vinegar (or White Wine Vinegar)

tsp Chicken Broth

tsp Coconut Aminos (or Low Sodium Soy Sauce)

1½ tsp Crushed Red Chili Pepper Flakes

1½ tsp Minced Garlic (1-2 cloves)

tsp Minced Ginger

Stevia Sweetener (¼ cup sugar worth (Use your brand's Conversion Chart))

¼ tsp Xanthan Gum (see notes for sub)

Preheat oven to 350°F and lightly grease a baking sheet.

If using whole chicken breast, cut into large chunks and place in a food processor.

Pulse (do not process, use the pulse option, or the chicken will form mush) about 10-15 times until it turns into a ground chicken. Set aside.Work in batches if needed.

Place cabbage, carrots, white onion and green onion in food processor and pulse until finely chopped.

Prepare Chicken and Vegetables:

In a large bowl combine chicken, chopped vegetables, coconut aminos/soy sauce, garlic, ginger, salt, pepper and, almond flour, and stir until uniform.

Spoon out a heaping 1-2 tablespoons worth of the mix, toss between hands to shape into meatballs (about 20) and transfer to baking sheet. Use clean hands!

Bake for 23 minutes.

Make Meatballs:

While meatballs cook, heat a small pot over medium and combine vinegar, water, broth, coconut aminos or soy sauce, chili flakes, garlic, ginger and stevia sweetener. Bring to a simmer. Simmer for 3-4 minutes until it starts to thicken.

Add in xanthan gum, whisking until it starts to thicken. Set aside.

Sauce will thicken more when cooled. Add more water if too thin.

Cook Sauce:

Transfer meatballs to a serving dish, top with sauce and garnish with more cilantro.

Serve with your choice of side. Rice or Cauliflower Rice go well!

I absolutely love this recipe! I tried it out once, then went shopping for more ground chicken that same week to make two more batches. It's great that so many veggies sneak their way into a savory chicken dish. It actually tastes like an egg roll!
