Ground Turkey Tacos

lb Ground Turkey

Cup Diced Onion

Cup Diced Red Bell Pepper

Cup Diced Yellow Bell Pepper

Tbs Garlic

Cup Salsa

Tbs Taco Seasonings

Water

Salt

Taco Size Tortilla Shells OR Lettuce Wraps

Instant Pot Directions:

Place 1 cup water or Broth in Instant Pot

Place 1 lb Ground Turkey on trivet in Instant Pot

Set to Manual High (Pressure Cook) for 5 minutes and quick release

Remove cooked ground turkey and discard any liquids in the pot. Clean or wipe out pot and put back in Instant Pot.

Set to Saute' and Add cooked Turkey and with a wooden spoon chop up meat

Add diced onion and bell peppers and stir

Add Taco Seasoning, salsa and water and stir.

Watch and stir for 4-5 minutes until vegetables are tender.

Spoon filling into tortilla shells

Stove Top Directions:

Over medium/high heat Add ground Turkey to frying pan. Add Salt and Pepper. Cook until it reaches 165 degrees

Add bell peppers, onions, taco seasoning, salsa, and water and stir.

Cook until vegetables have softened to desired consistency.

Add filling to tortilla shells and enjoy

Heat oil in a 12-inch non-stick skillet over moderately high heat.

Add turkey season with salt and pepper and let lightly brown on bottom, about 3 minutes.

Reduce heat slightly, turn turkey, add garlic. Break up turkey and let just barely cook through.

Add chili powder, ancho chili powder, cumin, optional paprika and saute 30 seconds longer.

Pour in salsa and toss. Reduce heat to low. Cover and let simmer for a few minutes. Note that every salsa is different, if mixture is a little dry you can add a splash of chicken broth or water as needed.

Serve turkey mixture over individual warmed tortillas topped with cheese, lettuce, tomatoes, and optional hot sauce.

Prep Ingredients: Before you begin cooking, prepare your toppings and have them ready for assembly. This will ensure your tacos are served fresh and hot when ready.

Cook the Ground Turkey: Brown the turkey in a large skillet over medium-high heat, breaking it into smaller pieces as it cooks.

Season: When no longer pink add the taco seasoning and mix well. Add the onion, garlic, bell pepper, water and tomato sauce, stir and cover. In a large skillet, heat oil over medium-high heat. If you’re using a nonstick skillet, you may not need oil.

Brown Meat and Vegetables

Add onion, bell peppers, and ground turkey. Cook, breaking up the meat, until the meat is no longer pink and the vegetables are cooked.

Add Seasoning

Add flour and taco seasoning and stir to combine, continuing to cook for 1 to 2 minutes or until spices are fragrant.

Simmer

Stir in water, and reduce heat to medium-low. Continue to simmer over medium-low heat, stirring occasionally until water is mostly evaporated, about 10 minutes. You can keep this at a low simmer, partially covered, until you’re ready to serve, adding more water if necessary to keep the mixture from drying out.
