If it's not smooth and melty, return it to the microwave for another 15 seconds. Then, whisk in the food coloring followed by the rice cereal. Stir until well-blended.

Mini Chocolate Skull Cakes

unsalted butter (3 sticks)

cocoa powder

Preheat oven to 350˚ F. Spray skull cake pan with non-stick cooking spray and flour well. Set aside.

In a small sauce pan, whisk the butter, cocoa powder, salt, and water over medium heat until butter is melted. Remove from the heat and set aside.

In a large bowl, whisk together the flour, sugar, and baking soda. Slowly add the chocolate mixture into the flour mixture while whisking. When batter is too thick, switch to a spoon. Add eggs, sour cream, and vanilla extract and mix until combined.

Fill skull cavities about 90% full (cake won&#039;t rise a huge amount). Bake for about 25 minutes or until a toothpick inserted into the middle of a skull comes out clean. Let skulls cool completely (about an hour) before glazing.

For the glaze, whisk together confectioner&#039;s sugar, milk, and vanilla extract in a small bowl. Generously brush glaze on cooled cakes and do a second or even third coat until the skulls are well coated (some of the glaze will be absorbed by the cake). Enjoy!

White Candy Melts

*Use regular pink candy melts not bright pink candy melts.

Pour white and pink candy melts into a microwave safe bowl.

Heat for three 30 second increments on high power, stirring well after each.

If needed heat for 10 second increments on high power, stirring after each until melted.

Spoon 1 tablespoon of candy coating into each brain cavity reserving the remaining candy to top off the brains once filled.

Brush the candy around the entire interior of the mold.

Freeze for 3-5 minutes just until the candy hardens.

Candy Brain shells

Stir the preserves until very runny, adding a drop or so of water if needed.

If needed, you can warm your jelly, just be sure it's only slightly warm when you pour it into the brain.

Spoon 1 tablespoon into each brain.

Jelly Blood

Combine the 4 ounces of white candy melts with the peanut butter chips in a microwave safe bowl.

Heat on high power for two 30 second increments, stirring after each.

Heat for 15 second increments on high power, stirring after each until melted.

Stir in the peanut butter.

Allow the fudge to cool for 5 minutes.

Pour a heaping tablespoonful into each brain on top of the jelly, filling to 1/8th of an inch from the edge of the mold.

Freeze the brains for 10 minutes.

Remove and let sit for 5 minutes.

Re-heat the pinkish candy coating in the microwave for 10 second bursts at high power, stirring after each until melted.

Spoon about a teaspoon of the candy coating on top of each brain, over the peanut butter fudge layer.

Smooth it out by gently tapping the mold on the table.

Wipe off any candy coating on the top edge of the brain mold.

Freeze for about 5 minutes until the candy hardens.

Remove from freezer and un-mold by peeling away the silicone mold from the brains.

Halloween Dirt Cups consist of alternating layers of Oreo crumbs and chocolate mousse. To get the appearance of a Halloween graveyard we add candy decorations such as gummy worms, pumpkin candies, and cracker &quot;gravestones.&quot;

Halloween Dirt Cups

3.9 oz instant chocolate pudding mix

oz frozen whipped topping (thawed)

Oreo

gummy worms

pumpkin candy corns

Mint Melanos (for tombstones)

Black frosting (for writing on tombstones)

In a large bowl whisk the instant pudding and cold milk for 2 minutes. Let pudding sit for 5 minutes. Fold in the thawed frozen whipped topping. 

In the bottom of plastic cups, or jars, place 1-2 tablespoons of the oreo crumb mixture. Layer the chocolate pudding, then add another layer of oreo crumbs, pudding, then finish with Oreo crumbs. 

Refrigerate for 1 hour. 

Decorate the tops of the dirt cups with gummy worms, tombstones, and any other festive treats. Serve cold.

Mummy Halloween Brownies

oz white chocolate melts

Bake brownies according to recipe (or package directions) and place in the freezer to cool.

While brownies are cooling, pour melting chocolate into a microwave-safe bowl.

Heat white chocolate melts in the microwave in 30 second increments, stirring in between each, until they are completely melted.

Pour melted chocolate into a small ziplock bag and cut a small opening in one of the corners.

Cut brownies into 12 rectangles.

Squeeze melted chocolate out of the ziplock and onto brownies in a back and forth zig-zag motion.

Immediately place eyeballs onto melted chocolate.

Put finished mummies in the fridge to set.

In a food processor, finely chop the Oreos.

Add the cream cheese and pulse to combine.

Shape the mixture into balls and transfer to a parchment-lined baking sheet.

Make the Chocolate Ganache: Place chocolate in a medium bowl. In a small saucepan, heat heavy cream until just bubbling around the edges. Pour the cream over the chocolate, stir once, then let sit for 5 minutes. Stir until completely melted and smooth. Cover with plastic and set aside until slightly thickened, about 30 minutes.

Add a drop of black food gel to the ganache and stir to combine.

Dip the balls into the melted chocolate and transfer to a wire rack set over a parchment-lined sheet tray.

Break chocolate wafers into quarters to create "wings" and place on balls.

Add candy eyes and banana Runts as "teeth."

Try an eerie twist on the traditional candy apple for a delicious Halloween treat.

"Poison" Candy Apples

apples

wooden candy apple sticks

corn syrup

black gel paste food coloring

Wash and dry apples thoroughly. Place on a baking sheet and poke firmly with dowels. Line a second baking sheet with buttered parchment paper, and set aside.

Place a candy thermometer in a medium saucepan and add sugar, 3/4 cups water, and corn syrup. Place over medium heat; whisk until sugar is dissolved. Let the temperature rise without stirring until it reaches the hard-crack mark at 310 degrees F. Remove pan from heat. Carefully remove thermometer, and add food coloring.

Swirl pan to mix in the color completely. Swipe and twirl the apple through the candy, shake off excess, and place on buttered baking sheet. Repeat with remaining apples.

A meringue-topped chocolate ganache tartlet is the perfect sweet and spooky Halloween dessert.

Meringue Ghost Tartlets

graham cracker planks (1 packet)

tbsp. butter

bittersweet chocolate, finely chopped

To make Graham Cracker Crust: Crush graham crackers into pieces. Transfer to the bowl of a food processor; add sugar. Process until crackers form a very fine crumb. Add butter, and pulse to combine.

Pack graham cracker mixture into 8 (2 1/2-inch) mini tart pans; transfer to a baking sheet, and bake 20 minutes or until the edges of the tartlets darken slightly. Let cool.

To make Chocolate Ganache: Heat cream in a small saucepan over low heat until barely simmering. Remove from heat, add chocolate, and whisk well until very smooth. Spoon into graham crusts.

To make Meringue Ghosts: Heat 3 inches of water in a saucepan over medium-high heat. Bring to a boil, and reduce heat to low. Place sugar and egg whites in a heat-proof bowl. Place bowl over the water and whisk to combine the sugar and egg whites. Stir constantly until sugar is dissolved and mixture is hot to the touch. (Rub a bit between your fingers. If it feels gritty, the sugar has not dissolved.)

Remove bowl from the stove and beat egg white mixture with the whisk attachment of an electric mixer until shiny stiff peaks form. Transfer meringue to a plastic pastry bag, snip the end to about 1 1/2 inches wide, and pipe 4-inch-tall ghost shapes onto the ganache.

Use a small paint brush dipped in cocoa to form the eyes and mouth. Serve immediately.

Line a large half sheet baking pan with parchment paper or a silicone baking mat. Set aside. 

Melt the semi-sweet chocolate either on the stove or in the microwave:

On the stove: Bring 2 inches of water to a low simmer in a saucepan over medium-low heat. Then turn the heat to low and place a large heatproof bowl of chocolate chips on the mouth of the pot. Make sure that there is a gap of a few inches in between the bottom of the bowl and the water (You can also place a bowl on a steamer attachment on top of your pot). Stir the chocolate constantly as it melts. Stir until the chocolate is completely smooth and melted. This should take a few minutes.

In the microwave: The second way to melt chocolate (and an easier way) is in the microwave. Place the chocolate into a microwave safe bowl and microwave in 30-second intervals. Remove the bowl at each interval and stir well. Repeat until the chocolate has completely melted. Stir until completely smooth

Melt the white chocolate by repeating the above process.

Spread the melted semi-sweet chocolate in a thin layer onto the prepared baking sheet, forming an approximate 9x12-inch rectangle, about ⅓-inch thick. Dollop the melted white chocolate on top. Use a toothpick to swirl the semi-sweet and white chocolates together.

Immediately arrange the m&amp;m’s, candy corn, and candy eyes onto the swirled chocolate, pressing them lightly into the chocolate, if necessary. Sprinkle the remaining gaps in the surface with sprinkles.

Transfer the pan to the refrigerator to allow the chocolate to set, about 45 minutes. Transfer the parchment paper to a cutting board and cut the bark into pieces. Serve immediately.
