This hamburger potato casserole is a flavorful and easy recipe. The final result is a cross between a baked goulash and beef stew. Crispy but tender shredded potatoes top a casserole of juicy ground beef bound together with a creamy cheesy sauce.

Cheesy Ground Beef and Hashbrown Casserole

beef

olive oil (divided)

carrots

onions

garlic

scallions

salt and black pepper (to taste)

oregano

chicken broth

sour cream

cheddar cheese (1 8-ounce package, divided)

Idaho all-purpose potatoes ((about 3/4 pound), peeled and grated)

Preheat the oven to 375°F. Lightly oil a shallow 2-quart baking dish or spray with nonstick cooking spray.

Heat a large skillet over medium high heat.  Add the ground beef and cook, stirring frequently, until the beef is completely browned.  Drain in a colander.  Carefully wipe out the skillet, and return it to medium heat.

Heat 1 tablespoon of the the olive oil in the skillet over medium heat. Add the carrots, onions and garlic and sauté for 4 minutes, until tender. Add the scallions and the browned ground beef and stir to combine. Season with salt and pepper and stir in the oregano and chicken broth.  Bring to a simmer then stir in the sour cream, and 1 cup of the shredded cheese. Simmer for 3 minutes,  until the cheese is melted and everything is blended.

Turn the mixture into the prepared baking dish.  Place the shredded potatoes in a clean dishtowel and twist and squeeze over the sink to remove as much water as possible from the potatoes.  Shake the potatoes into a medium sized bowl.   Toss the shredded potatoes with the remaining tablespoon of oil, and season with salt and pepper.

Evenly distribute the potatoes over the ground beef mixture. Bake for 40 to 50 minutes until the potatoes are tender and browned on top. Sprinkle the remaining cup of shredded cheese on top of the potatoes and return the casserole to the oven for 5 minutes, until the cheese has melted. Serve hot.

Preheat the oven to 350 degrees F. Spray the inside of a 9x13 baking dish with cooking spray and set aside.

In a large skillet set over medium heat, add beef and onion and cook until no longer pink, 5-6 minutes. Remove from heat, drain off any excess grease, and stir in garlic, Worcestershire sauce, 1 teaspoon kosher salt, and ½ teaspoon pepper and cook for another 2 minutes.

In a large mixing bowl, combine condensed soups, milk, sour cream, Italian seasoning, and ½ cup cheddar cheese.

Spread ½ cup of the soup mixture in the bottom of the prepared baking dish.

Arrange ⅓ of the sliced potatoes in a shingled layer in the baking dish. Top with half of the meat, then pour on half of the sauce, spreading it evenly. Repeat with remaining ingredients to create a second layer. Layer on the remaining potatoes, then sprinkle on the rest of the cheese.

Cover the dish with aluminum foil, place on a rimmed baking sheet, and bake for 80 minutes. Remove the foil and bake for another 20 minutes, or until the potatoes are fork tender and cheese is melted.

Allow to sit for 10 minutes, then garnish with parsley and serve.

21 oz Cream of Mushroom Condensed Soup (2 cans)

Milk

Preheat oven to 350.

Brown the ground beef, drain and set aside.

Peel potatoes, slice and set aside.

Combine cream of mushroom soup, milk, onion powder and garlic powder in a medium bowl.

Stir until blended and set aside.

Grease a 9x13" baking dish.

Layer about 1/2 the potatoes on the bottom.

Top with a layer of about 1/2 the beef.

Then layer 1/2 the soup and 1/2 the cheese.

Repeat another set of layers of potatoes, beef and soup.

Cover with foil and bake for 90 minutes.

Check to make sure potatoes are tender. If not, re-cover and bake another 15 minutes.

Remove foil and top with remaining cheese.

Bake 15 more minutes.

Allow it to sit for 8-12 minutes to firm and cool slightly.
