This creamy Harissa pasta is a super quick, one-skillet meal. Harissa paste, nondairy cream, and just a few herbs combine to make a flavorful vegan dinner in just 1 Pan. Soyfree. Options for nutfree glutenfree.

Creamy Vegan Harissa Pasta

garlic (minced)

spaghetti (or other pasta of choice)

cashew cream or tofu cream

vegan parmesan

Heat a large skillet over medium heat and add the oil. Once the oil is hot add the garlic, onion, and a good pinch of salt. Cook until the onion is translucent.

Then mix in the mushrooms and harissa paste and cook until the mushrooms are just about cooked. You can reserve some of the mushrooms for garnish at this point or continue with the next step.

Mix in all of the herbs and nutritional yeast. Then add in the bell pepper, water or stock and salt.

Let the liquid get boiling hot, then add the spaghetti and press it into the liquid. Cover with the lid and continue to cook for about 11 to 16 minutes, depending on your stove and the skillet and the spaghetti. Check after 10 minutes and stir really well so that noodles don&#39;t stick to each other. If you need more water, you can add some hot water at this point.

When the spaghetti is cooked to preference, add in the nondairy cream along with the vegan parmesan. Once the sauce is boiling, switch off the heat.

Taste carefully and adjust salt and flavor, then serve it in bowls topped with some more vegan parmesan and a sprinkle of fresh parsley. If you have reserved some of the mushrooms, add those now, as well.

Prepare the pasta according to package directions. Before draining the pasta, reserve ½ cup of the pasta cooking water and set it aside.

In a blender, combine the harissa, coconut cream, reserved pasta water, sugar, and salt. Blend until you have a smooth and creamy sauce.

In a large skillet or pot over medium-low heat, add the blended sauce and the cooked pasta.

Stir the pasta into the sauce, allowing it to simmer and thicken for about 5 minutes, ensuring an even coating.

Garnish with the parsley and pistachios before serving.

This delicious spicy harissa pasta is made in only 15 minutes. Quick, simple and perfect for a weeknight dinner!

Boil the pasta according to the package instructions. 

In a skillet, heat up olive oil over medium heat until it&#39;s warm.

Add peel and sliced onions, washed cherry tomatoes, and finely chopped garlic. Sautee for a few minutes, until the onion is soft and translucent.

Add harissa paste, lemon juice, and seasoning to the skillet with the onions and tomatoes, and stir to combine. Sautee for about a minute or two, or until the sauce becomes fragrant.

Turn the temperature down to low, and allow the sauce to rest while you stir occasionally until the pasta is boiled. If the sauce becomes dry, you can add a spoonful of pasta water to make it more creamy.

When the pasta is cooked, drain off most of the excess water. Transfer the drained pasta to the skillet with the sauce, along with a spoonful of leftover pasta water. Use tongs to coat the pasta evenly in the sauce.
