This Hasselback potato gratin recipe delivers all the creamy decadence of a classic potato gratin but with more crispy edges.

Hasselback Potato Gratin Recipe

(85 grams) finely grated Gruyère or Comté cheese

Parmigiano-Reggiano cheese

(480 milliliters) heavy cream

garlic, minced

thyme

salt and black pepper

Adjust oven rack to middle position and preheat oven to 400°F. Combine cheeses in a large bowl. Transfer 1/3 of cheese mixture to a separate bowl and set aside. Add cream, garlic, and thyme to cheese mixture. Season generously with salt and pepper. Add potato slices and toss with hands until every slice is coated with cream mixture, making sure to separate any slices that are sticking together to get the cream mixture in between them.

Grease a 2-quart casserole dish with butter. Pick up a handful of potatoes, organizing them into a neat stack, and lay them in the casserole dish with their edges aligned vertically. Continue placing potatoes in casserole, working around the perimeter and into the center until all potatoes have been added. Potatoes should be very tightly packed. If necessary, slice additional potato, coat with cream mixture, and add to casserole (see note). Pour excess cream/cheese mixture evenly over potatoes until the mixture comes half way up the sides of the casserole. You may not need all excess liquid (see note).

Cover tightly with foil and transfer to oven. Bake for 30 minutes. Remove foil and continue baking until top is pale golden brown, about 30 minutes longer. Carefully remove from oven, sprinkle with remaining cheese, and return to oven. Bake until deep golden brown and crisp on top, about 30 minutes longer. Remove from oven, let rest for a few minutes, and serve.

Rub the potatoes with oil and seasonings, slice them into accordion hasselback slices, put prepared hasselback potatoes in the air fryer and the air fryer will cook them to perfection!

Air Fryer Hasselback Potatoes

Wash and dry your potatoes. Rub with vegetable oil.

Take 2 pencils and place on either side of the potato, front and back. Then slice the potatoes accordion style, making sure not to cut all the way through.

Then use the brush to baste the potatoes with oil, making sure to coat thoroughly along the cuts.

Season with salt and pepper and any other seasonings to taste.

Place the potatoes in the air fryer basket. Set temperature to 390F for 35 minutes.

Remove when finished and enjoy!

Air Fryer Hasselback Potatoes Recipe - Delicious Crispy Skin, Amazing Texture! 🥔😋

The seasoned Hasselback potato turns out crispy on the outside and tender on the inside. Almost like thick potato chips, but better! Cool kitchen hacks for easier slicing, too.

How to Make a Hasselback Potato

russet potatoes ((medium, about 6" in length))

tbsp bacon fat

tsp kosher salt

tbsp herbs of choice

tbsp melted butter

Preheat the oven to 425°F.

Line a baking sheet with either aluminum foil, parchment paper or a silicone mat or use a baking stone (as in video).

Rub the potatoes all over with bacon fat or olive oil and sprinkle with kosher salt. Slice off a thin portion on one side of the potato and set aside.

Place the potato on the flat cut side and using chop sticks or wooden spoons, place one on either side of the potato lengthwise. Make 1/8” thick slices, cutting down to the chop stick or wooden spoon. This way you do not cut through the potato, you just achieve the proper slices to fan out.

Place the potato slice flat side down on the lined baking tray and place the fan sliced potato cut side down on top of the slice. This will make the potato fan out on the arch.

Mince herbs like thyme and parsley. Add to the melted butter along with any seasoning you prefer.

Lightly brush the potato and in between slices, get in and around each slice as best you can. Season with kosher salt, fresh cracked pepper or seasoning of choice.

Bake for 30 minutes, baste with butter and continue baking for another 20 minutes. Potatoes will be crispy and golden brown. Top with any remaining butter, fresh herbs and serve.

Place In a 9x13 inch baking dish and gently toss with olive oil, salt, and pepper. Transfer to the oven and roast for 20-25 minutes.&nbsp;3. Meanwhile, in a medium bowl, combine the cream, garlic, cheese, thyme, and a pinch each of salt and pepper.&nbsp; 3. Remove the potatoes from the oven and pour the cream over them, arrange the potatoes in a mostly even layer. Place the slices of butter around the potatoes. Return to the oven and roast for another 20-25 minutes, until the sauce thickens and the potatoes are tender. Season with flaky salt just before serving. Enjoy!

Start by preheating your oven to 350 degrees F. Then work on washing and scrubbing your potatoes. Once clean pat dry.

Now, you will want to slice your potatoes thin all the way across not cutting the bottom part of the potato. You want the bottom of the potato to stay intact so it holds together.

Now take your oil and brush the potato all over, making sure to get in the creases you cut. Season with salt and pepper.

Place your potatoes in the air fryer, and cook for 20-25 minutes.

Remove potatoes and re-brush with oil, and then top with grated parmesan cheese if you want. Place back in the air fryer and cook another 5-10 minutes or until your potatoes are fully cooked.

Then serve up your Hasselback potatoes plain or add a dollop of sour cream, green onions, etc.
