Healthy Baked Chicken Parmesan

boneless, skinless chicken breasts

almond meal

chickpea flour

oregano

basil

thyme

garlic powder

tsp sea salt

tsp black pepper

olive oil

25- oz tomato sauce

tbsp grated parmesan cheese

Preheat your oven to 500 degrees F.

In a large mixing bowl, combine almond meal, chickpea flour, dried oregano, dried basil, dried thyme, garlic powder, sea salt, and black pepper.

Now, dredge the boneless, skinless chicken breasts in the seasoned almond meal mixture and then shake off any excess.

Heat olive oil in large oven-safe skillet over high heat.

Add the coated chicken and sear until golden-brown on both sides, about 2 minutes per side. We aren’t looking to cook through, just get a nice golden crust on the chicken.

Pour the tomato sauce over and around the browned chicken.

Sprinkle a little grated parmesan over each chicken breast.

Cover with tin foil and bake for 10 minutes.

Then, remove the tin foil, and place back in the oven for 5 more minutes, until the cheese melts and the chicken is cooked through.

(16 ounce) jar marinara sauce

Preheat oven to 425 degrees F.

Spray a large baking dish (about 9-inch by 13-inch) with cooking spray. Spread half of the marinara sauce in the bottom of the dish. Add the chicken on top of the sauce. Sprinkle chicken with Italian seasoning, salt, and pepper, to taste.

Pour remaining sauce over chicken. Cover with foil and bake for 20 minutes. If you are using larger chicken breasts you will need to increase the baking time to at least 30-35 minutes.

Remove foil, place mozzarella slices and grated Parmesan on top of chicken. Return chicken to the oven (uncovered) for an additional 10 minutes, or until cheese is melted and chicken reaches an internal temperature of 165 degrees F.

mozzarella cheese shredded (I buy block cheese and grate.)

Preheat the oven to 400 degrees. Line a sheet pan with parchment paper.&nbsp;

Slice the chicken breasts in half horizontally to create 4 thinner chicken breasts. Place the chicken breasts on a hard surface and pound them to completely flatten.

Combine the almond meal, parmesan cheese, Italian Seasoning, salt and pepper in a bowl large enough to dip the chicken breasts. Stir to combine.

Place the egg in a bowl large enough to dip the chicken.

Dip the chicken in the egg and then the almond meal mixture.

Place the chicken on the parchment paper and repeat for the remaining chicken. Your hands will get sticky. You may want to keep a moist towel nearby and wipe your hands after breading each.

Spray the top of each breast with cooking oil.  Bake for 15 minutes. Use a meat thermometer to test if the internal temperature of the chicken has reached 165 degrees.

Remove from oven, spoon the marinara sauce over each piece of chicken and top each with shredded mozzarella cheese.

Bake for 5-8 more minutes or until cheese is melted

Allow the chicken to cool before serving.

In a wide, shallow bowl (a pie dish works well), combine the Italian breadcrumbs, whole wheat Panko breadcrumbs, Parmesan, garlic powder, and pepper. Arrange your work station in the following order: pounded chicken, egg whites, breadcrumb mixture, baking sheet. Prep

Preheat the oven to 425 degrees. Toss the breadcrumbs, panko, and Parmesan in a shallow dish with the Italian herbs, salt, and pepper. Heat the oil in a medium ovenproof skillet over medium heat.

Cut the chicken breasts into a total of four pieces (for example, if there are two breasts, cut each in half &#8211; pound them a little thinner and wider if you want) and dredge the chicken in the breadcrumbs so that they stick all over the surface of the chicken. Add the chicken to the hot skillet and fry for 3-4 minutes on each side. You want the outside to be golden brown &#8211; the inside can finish cooking in the oven.

Transfer the skillet to the oven and bake for 5-10 minutes or until the chicken is fully cooked. Add the sauce and place a slice of mozzarella cheese on top of each piece of chicken. Return to the oven for a few more minutes or until the cheese is bubbling and lightly browned.
