Sweet potato chocolate pudding is a delicious, healthy, and dairy-free sweet treat with only five ingredients. Vegan and gluten-free.

Sweet Potato Chocolate Pudding

350 g baked orange-fleshed sweet potato (without skin)

hazelnuts

g cacao powder

coconut cream

maple syrup

Preheat oven to 200°C.

Wash orange-flashed sweet potatoes thoroughly and pat them dry with a dishtowel.

Place on a baking sheet and put them in the oven to bake for 30-45 minutes depending on size.

Check at 30 minutes by inserting a fork into the center. They should be soft. If not, return to the oven and check again in 10 minutes. Let them cool down a bit before peeling.

Baked sweet potatoes

Place sweet potatoes, coconut cream, roasted hazelnuts, raw cacao powder, and maple syrup into a blender and process until smooth and creamy.

Serve in jars and top with chopped roasted hazelnuts.

Pipe a crisscross pattern of chocolate across the pomegranate seeds. Add another layer of pomegranate seeds, then more chocolate, and then the last layer of pomegranate seeds. 

Finish with a pinch of sea salt on...

Finish with a pinch of sea salt on each of the pomegranate chocolate bites.

Refrigerate for at least one hour before serving....

Refrigerate for at least one hour before serving. After removing from the fridge, serve immediately.

dark chocolate, chopped (around 100 grams)

Tbsp chopped nuts

Tbsp coconut oil

In a bowl mix the peanut butter, oats and chopped nuts.

Melt the dark chocolate and the coconut oil....

Melt the dark chocolate and the coconut oil. I did it using the microwave, heating in 30s intervals, mixing in between - it took me 2 times.

Add the dark chocolate to the peanut butter...

Add the dark chocolate to the peanut butter mixture and mix them until combined.

Take a Tbsp of this chocolate mixture and...

Take a Tbsp of this chocolate mixture and place on a baking sheet or a large plate that's been lined up with parchment paper. 1 Tbsp is for 1 cookie. Don't be discouraged if the mixture loses its shape and becomes more of a bark and not that much of a cookie - still tastes great.

Leave in the fridge for around an hour...

Leave in the fridge for around an hour and then eat some. Store in the fridge in an airtight container (these melt at room temperature).

A quick and healthy chocolate dessert by Jamie Oliver made with dates, cocoa, tofu and fresh orange – silky, naturally sweet and ready in minutes. Make it vegan with non-dairy yogurt.

Jamie Oliver's Chocolate Orange Pots

Medjool dates

tbsp skinned hazelnuts

oz silken tofu

cocoa powder

orange

generous tbsp Greek or plant-based yogurt

Seasonal fruit (ie. oranges, cherries, strawberries, raspberries, to serve)

In a bowl, just cover the dates with boiling water and let soak for 5 minutes, then drain. Toast the hazelnuts in a small frying pan until lightly golden, shaking regularly, then crush in a mortar and pestle until fine.

Add the dates to a blender with the tofu and cocoa. Finely grate in the orange zest, squeeze in the juice, add 1 ice cube, if you have it, and blitz until super-smooth, stopping to scrape down the sides with a spatula a few times.

Divide the mixture between little pots, glasses or cups, and either eat right away, or cover and stash in the fridge until you want them (up to 3 days). Serve each pot with a spoonful of yogurt, a sprinkling of crushed hazelnuts and some extra fruit, of your choice.
