Mushroom and Spinach Risotto is hearty cold weather comfort food at its best. An easy weeknight meal, but special enough for date night too.

Mushroom and Spinach Risotto

tbsp Olive oil

150 g Risotto rice

Celery rib ( diced)

Shallots (peeled and diced)

Garlic (crushed)

g mushrooms

500 ml Homemade vegetable stock

Lemon ((juice only))

tbsp Fresh parsley (chopped)

Sea salt and black pepper

Spinach

g Shaved parmesan

Add the olive oil to a large pan and then add the shallots, celery and garlic and gently cook for 3 minutes.

Add the rice, salt and pepper, stir and cook for 1 minute.

Drain the mushrooms and add to the pan with a ladle of the stock. Keep adding a ladle of stock at a time and waiting until the rice has absorbed the stock before adding another until you have used all the stock. This should take around 20-25 minutes.

Add the spinach.

Stir the spinach and lemon juice in and serve with fresh parsley and parmesan on top.

It doesn't get much more comforting than a creamy pasta bake and this&nbsp;Creamy Tomato and Chicken Pasta Bake is an easy weeknight meal that will feed a hungry family.

Creamy Tomato and Chicken Pasta Bake

300 g chicken breasts (cut in to chunks)

280 g rigatoni pasta

shallots (diced)

garlic

oregano

courgette (zucchini) (grated)

plum tomatoes (canned)

100 ml vegetable stock

tomato puree (paste)

tbsp reduced fat cream cheese

cherry tomatoes (halved)

g mature cheddar cheese

g mozzarella cheese (torn)

basil (chopped)

Cook pasta

Put the pasta in a pan of boiling water and simmer for 10 minutes.

Cook chicken

Heat some olive oil in a large pan over a medium heat and then add the chicken and cook for 5 minutes. Add the shallots and garlic and cook for a further 2 minutes.

Add tomatoes

Add the tomatoes, stock, tomato puree and oregano to the chicken and mash the tomatoes a little and simmer for 2 minutes.

Mix pasta

Drain the pasta and add the grated courgette and cream cheese and stir well.

Add the pasta mixture to the chicken mixture along with the cherry tomatoes and stir well.

Bake

Transfer to an oven safe baking dish and sprinkle with the cheddar, mozzarella and basil and put in a pre-heated oven at 190°C/375°F/Gas 5  for 15 minutes.

Finish

Once cooked, serve with chopped basil sprinkled on top.
