healthy lettuce wraps

An easy, healthy and low-carb Asian inspired appetizer or light meal for lunch or dinner. Flavorful ground pork or chicken tossed with shiitake mushrooms and water chestnuts in a savory sweet sauce, wrapped around crunchy lettuce. Super simple and yummy!

Asian Lettuce Wraps

lbs pork

onions

garlic (minced)

shiitake mushrooms

water chestnuts (canned)

vegetable oil

salt and pepper (to taste)

butter lettuce lettuce

soy sauce

tbsp oyster sauce

tsp rice wine

tbsp sesame oil

tbsp sugar

tsp ground ginger

tsp corn starch

water

tsp dark soy sauce (optional)

green onions (sliced)

red pepper flakes (optional)

If you are using dried shiitake mushrooms, soak them in warm water for 10-15 minutes, or until they are soft. Then cut them into small pieces.

Drain water from canned water chestnuts and dice water chestnuts into small pieces. Mince onions and garlic. Slice green onions.

Combine all the sauce ingredients in a small bowl and mix well.

Add vegetable oil to a large skillet and heat skillet. Add garlic and onions. Sauté briefly until fragrant - do not brown or burn garlic and onions. Quickly add ground pork and break pork into small pieces. Season with a few pinched of salt and pepper.

Once pork is cooked and no longer pink-ish, add shiitake mushrooms, water chestnuts, and sauce. Stir to combine and bring to a boil.

Cook for another 1-2 minutes, or until liquid thickens. Remove from heat.

Fill lettuce with pork filling. Garnish with green onions and red pepper flakes (optional). Serve and enjoy!

Lettuce Wraps

red bell pepper (, finely chopped)

green onions (, chopped)

ginger root (, minced)

water chestnuts (, chopped)

Boston Bib lettuce (,

olive oil

Sriracha hot sauce (, for topping)

chicken (,

Tablespoon low-sodium soy sauce

Tablespoon rice vinegar

sesame oil

Tablespoons low-sodium soy sauce

Tablespoons rice vinegar

sugar

hoisin sauce

cornstarch

Place marinade ingredients in a bowl and mix well. Add chicken and stir to combine. Set aside.&nbsp;

For the Marinade:

Combine all of the sauce ingredients and mix until smooth.&nbsp;

Heat 1 Tbsp. of olive oil in a large skillet or wok.  Add the chicken mixture and stir fry 2-3 minutes.&nbsp;

Push the chicken to the side of the pan and add the bell pepper, ginger, green onions, and water chestnuts. Stir fry 1-2 minutes.

Add the sauce and cook over medium heat, stirring as needed, until thickened.&nbsp;

Serve in lettuce cups, topped with sriracha hot sauce, if desired.

Thai Chicken Lettuce Wraps

chicken

sweet chili sauce

peanut butter (, smooth or crunchy)

freshly grated ginger ((or 1/4 teaspoon ground ginger))

cilantro (, chopped)

red pepper flakes (to taste)

Boston Bib lettuce ((or romaine))

Heat oil in a large skillet over medium.&nbsp;

Add chicken, garlic, onions, salt and pepper and cook, tossing occasionally, until chicken is cooked through.&nbsp;

Add the carrots, cabbage, and green onions, and cook for 2 more minutes.

In a small bowl combine the sweet chili sauce, ginger, peanut butter, soy sauce, and crushed red pepper. Stir until smooth.&nbsp;

Add sauce to the pan. Add cilantro. toss everything until combined.&nbsp;

Spoon mixture into individual lettuce cups. Should fill about 8 lettuce cups.

Spicy Vegan Lettuce Wraps

Cook the brown rice, according to the package instructions or use our Instant Pot method. When its done, season the rice with some kosher salt and a drizzle of olive oil.

Drain the tofu by wrapping it in a paper towel, placing it on a plate, and covering it with a heavy object for 5 minutes or more.

In a large non-stick skillet, heat the olive oil. Add the tofu and it break down it into very small pieces with a spatula. Sauté for about 15 minutes, until brown.

Add the frozen corn and stir for a few minutes until most of the liquid has cooked out of the tofu. Add the chili powder and cashew halves, and stir to combine. Add the soy sauce and hot sauce and stir until liquid is absorbed. Remove from heat.

Meanwhile, peel and grate the carrots (we use this Handheld Julienne Peeler). Wash and dry the lettuce leaves.

To serve, place rice, tofu cashew mixture, and grated carrots within a lettuce leaf, and roll up the leaf.
