This recipe for spaghetti with spinach sauce is an indulgent pasta dish that's quick and simple to make.&nbsp;&nbsp;Whip up this cheap, easy and satisfying meal in just 15 minutes.

Spaghetti with Spinach Sauce

olive oil

garlic

oz fresh baby spinach (washed)

salt and pepper (to taste)

spaghetti

grated Parmesan or Pecorino Romano cheese (plus more for serving)

Heat the olive oil in a large deep frying pan on medium-high heat.&nbsp;&nbsp;Add the garlic and cook to soften, but not quite brown.

Add the spinach and sauté with the garlic until wilted. Season with salt and pepper, remove from heat and set aside.

Cook the pasta according to the package instructions. Reserve a cup of the pasta water before draining. Drain, and set aside.

Add the spinach and garlic mixture to a food processor or blender with the cheese and half of the pasta water. Puree until it forms a sauce (adding more pasta water if needed).

Add the sauce back into the pan to combine and heat through, again adding more pasta water if needed.

Once heated through, taste and season with more salt and pepper if necessary. Serve sprinkled with extra grated cheese.

This healthy veggie pasta sauce is loaded with hidden veggies and dairy-free cream cheese for a creamy, flavorful, and nutritious vegetable sauce the entire family will love!

Healthy Veggie Pasta Sauce

300 g tomatoes (chopped)

g bell pepper (chopped)

zucchini (chopped)

onion

tsp Italian spice blend

Salt & black pepper (to taste)

cream cheese

vegetable broth

200 g uncooked pasta (gluten-free, if needed)

basil (for garnish)

You can watch the short video in the post for visual instructions.Preheat the oven to 390 °F (200 °C) and grease a medium baking dish with a little oil.

Add the tomatoes, bell pepper, zucchini, onion, garlic, Italian spice blend, salt, and black pepper. Stir to combine.

Next, add the vegan cream cheese and pour in the veggie broth.

Bake for 20-22 minutes, or until the cream cheese is starting to turn golden.

Meanwhile, cook pasta according to package directions, then drain most of the pasta water, but keep a small amount (see notes).

Remove the baking dish from the oven and blend the veggies using an immersion blender or regular blender.

Add the cooked pasta to the veggie sauce and stir to combine.

Serve in bowls, garnish with chopped basil and enjoy!
