Medjool dates stuffed with peanut butter and coated in dark chocolate. If you like snickers you'll love these vegan snickers stuffed dates! They're deliciously sweet but contain no added sugar, and are super quick & easy to make.

3 Ingredient Snickers Stuffed Dates

Medjool dates, pitted

peanut butter

sugar-free dark chocolate, finely chopped

peanuts (optional)

Fill each pitted date with peanut butter. You'll need about 1/2 tsp of peanut butter for each date, depending on the size of your dates. Place filled dates on a plate and chill in the freezer for 10 minutes.

Put dark chocolate in a microwave-safe bowl. Melt chocolate in the microwave. Alternatively, you can melt the chocolate using a double boiler.

Line a tray or a large plate with parchment paper.

Take dates out of the freezer. Dip each one in the melted chocolate using a fork, let excess chocolate drip off, then transfer to parchment paper lined tray.

Top stuffed dates with some chopped peanuts if you wish.

Let the chocolate set in the fridge for 30 minutes.

Blackberry Fruit Leather

fresh blackberries (or about 3 cups of frozen blackberries, thawed)

applesauce (applesauce makes the leather more flexible and adds sweetness)

Prepare the Blackberries: If using fresh blackberries, rinse them under cold water and remove any stems. Fully thaw and drain frozen blackberries. For firm berries, place in a small stockpot and smash with a potato masher. Cook gently until soft.

Make the Puree: For seedless blackberry fruit leather, strain the mashed berries through a fine mesh strainer or food strainer to remove the seeds. This step is optional but recommended for a smoother texture. Alternatively, blend the blackberries in a blender or food processor.

Sweeten the Puree: Add the applesauce to the blackberry puree in the blender or food processor. Add the honey (or maple syrup) if desired. Blend briefly to combine. Taste the puree and adjust the sweetness if necessary. Add lemon juice if desired.

Drying Using a Dehydrator: Pour the puree onto the dehydrator trays lined with fruit leather sheets or parchment paper. Spread the puree evenly to about 1/8 inch thick. Even thickness helps with even drying.

Set the dehydrator to 135°F (57°C) and let it run for about 6-8 hours. Your blackberry fruit leather is done when it’s no longer sticky and peels away easily from the tray.

Drying using an Oven: Line a baking sheet with parchment paper or a silicone baking mat. Pour and spread the puree evenly on the prepared baking sheet to the same thickness as mentioned above.

Set the oven to its lowest temperature, usually around 140°F to 150°F (60°C to 65°C). Place the baking sheet in the oven and leave the door slightly ajar to allow moisture to escape. Drying can take anywhere from 4-8 hours. Check regularly and rotate the sheet if needed to ensure even drying.

Once the fruit leather is completely dried and no longer sticky, let it cool to room temperature. Peel the leather off the parchment paper or baking mat. Cut it into strips or squares using kitchen scissors or a knife. Store in an airtight container. Should last around a month or more at room temperature. Refrigerate or freeze for long term storage, especially in warm and humid climates.

Making Blackberry Fruit Leather

VIral high protein Frozen s’mores are a refreshing frozen treat made with a combination of melted chocolate, whipped topping mixed with protein powder (optional), stuffed between graham crackers! This high protein dessert can be made vegan, gluten-free, and is refined sugar-free!

Frozen S'mores (High Protein!)

Graham crackers

tub coconut whipped topping

protein powder

peanut butter (*optional)

chocolate chips

tsp coconut oil (*to help thin the chocolate chips)

vanilla extract & good pinch sea salt

Prepare the Protein Filling: Add the protein to your tub of whipped topping, along with the peanut butter, if using. Mix well until no lumps remain and it&#39;s smooth, thick, and creamy.

Assemble the S&#39;mores: Lay half of the graham crackers flat on a parchment-lined square baking pan. Scoop a generous amount of the protein filling onto the crackers and spread evenly. You can use the whole tub, half, 3/4 - however much you want! I like a thick layer. Leave leftovers in the freezer or fridge to use for your next batch.

Dip in Dark Chocolate: In a small bowl, melt the chocolate. Use the double-boiler method or simply heat in the microwave in 30 second increments mixing between each, until smooth. Pour this over the whipped topping layer, gently spreading it out. Place the remaining graham crackers over top and just slightly and gently press them down to stick.

Freeze: Freeze the assembled s’mores for at least 3-4 hours or until firm. The longer they freeze, the more the whipped topping layer will firm up!
