This healthy tuna noodle casserole is super easy, absolutely delicious, and the last tuna noodle casserole recipe you'll ever need!&nbsp; Say hello to delicious and healthy comfort food!

Healthy Tuna Noodle Casserole

oz brown rice pasta (I use farfalle)

olive oil

onion

garlic (minced)

celery

tsp sea salt

tsp black pepper

chickpea flour

chicken broth

almond milk

mushrooms (diced)

peas (frozen)

tuna*

tbsp parmesan cheese (grated)

almond meal

parsley

Preheat oven to 375 degrees F and grease a 9x12 casserole dish with olive oil, then set aside.

Add the noodles to a deep stock pot of boiling water and cook until al dente, about 6-7 minutes. Then, drain and set aside. (I use brown rice farfalle noodles for this recipe, but you could also use quinoa noodles if you prefer.)

Heat olive oil in a large deep skillet, and add the diced yellow onion and sliced celery. Cook on medium-high until soft, about 5 minutes.

Add the diced mushrooms and minced garlic, and cook until tender and beginning to turn golden, about 3-4 minutes.

Sprinkle in the chickpea flour and stir well to incorporate.

Slowly stir in the low sodium chicken broth and unsweetened almond milk until well combined, increasing the heat to bring to a low boil.

Reduce heat to a simmer and cook, stirring frequently, for 5-8 minutes, or until the mixture starts to reduce and thicken.

Add in the tuna along with the frozen peas, and stir another minute to heat through.

Add the cooked, drained noodles to the sauce and mix well until evenly coated.

Pour into the casserole dish and top with a mixture of parmesan cheese and almond meal.

Place into the oven and bake for 20-25 minutes, or until the top becomes crisp and slightly golden.

Sprinkle some fresh Italian parsley over the top and serve.

Tablespoons all-purpose flour

broth

milk of choice

salt

pepper

thyme (or 1 Tablespoon fresh)

peas (frozen

Dijon mustard

cheddar cheese

egg noodles (or pre-cooked pasta)

tuna,

parmesan cheese

breadcrumbs

broccoli (optional)

kale (optional)

Preheat Oven

Oil &amp; Onion in Dutch Oven

In a large pot or dutch oven, add the olive oil and diced onion.

Saute

Add Carrots, Garlic, &amp; Mushrooms

Add in the carrots, garlic and mushrooms. Saute an additional 5-7 minutes.

Add Sauce Ingredients

Whisk in the flour, then add in the broth, milk, salt, pepper, thyme, peas, dijon mustard and stir.

Add Cheese, Noodles, &amp; Tuna

Stir in the cheddar cheese until melted, then fold in the noodles and drained tuna. Stir to combine.

Transfer to Baking Dish

Transfer to a 9x13 or similar sized baking dish. 

Top with Parmesan &amp; Breadcrumbs

Whisk together the parmesan and breadcrumbs and sprinkle on top.

Bake

Cover and bake for 25 minutes, then uncover and bake for an additional 5-10 minutes to let the top brown (or simply broil for 1-2 minutes, keeping a close eye so it doesn’t burn).

Easy Healthy Tuna Casserole

Tablespoons Olive Oil

170 g Mushrooms (Chopped)

White Onion (Chopped)

Pepper (Chopped)

Teaspoons Minced Garlic

½ Teaspoon Black Pepper

Salt

Teaspoon Thyme

Peas

Ounces Pasta (Your Choice (Dry Weight))

Greek Yogurt

Cans

Tablespoons Parmesan Cheese

Cup Cheddar Cheese

Ounces Bone Broth

Ounces Milk Substitute (or Milk)

Serving Bread Crumbs

Take out a stovetop pan and turn your burner on Medium-High heat

Add your Olive Oil into your pan

Chop up your Mushrooms, Onion, and Pepper

Add those into your pan once it heats up along with your Salt, Black Pepper, and Thyme

Mix everything around and let them cook for a couple minutes

Add in your Peas

Mix everything around again and let it cook for another couple minutes (longer if you used frozen peas)

Prepare your Pasta 1-2 minutes less than your box says to

Into a large bowl add your cooked pasta, vegetable mix, Greek Yogurt, Tuna, 30 Grams Parmesan Cheese, Cheddar Cheese, Bone Broth, and Milk

Mix everything around until incorporated

Pour your mix into (at least) a 2 quart casserole dish

Top with 10 Grams Parmesan Cheese and your Bread Crumbs

Cover with foil and put it into the oven on 375F/190C for 35-40 minutes

Optionally remove your foil and put it on broil for a few minutes or until the top is browned
