Packed with almonds, hemp hearts and dates, these naturally sweetened hemp hearts power cookies will be a vegan favourite for breakfast or snack.

Hemp Hearts Power Cookies

tbsp ground flax seed

tbsp unsweetened vanilla almond milk

almond flour

rolled oats (gluten free if needed)

½ tsp cinnamon

½ tsp baking powder

salt

banana (mashed)

tbsp coconut oil (melted)

almond butter

maple syrup

vanilla extract

dates (minced)

almonds

Manitoba Harvest Hemp Hearts plus more for topping

To make a flax egg, combine the flax and the almond milk in a small bowl and let sit in the fridge for an hour.

Meanwhile, preheat oven to 350 F and place a silpat on a baking sheet.

In one bowl, mix together the almond flour, oats, cinnamon, baking powder and salt.

In another, mix the banana, coconut oil, almond butter, maple, vanilla and flax egg. Mix the dry into the wet until combined, then fold in the dates, almonds and Manitoba Harvest hemp hearts.

Roll into small 2 tbsp balls and flatten them out on the baking sheet so they’re 1/2 inch tall. Sprinkle generously with more hemp hearts and bake for 12-15 minutes until golden brown.

These tasty muffins make the perfect morning snack, and have an extra crunch from granola on top!

Preheat oven to 350°F.

Combine nondairy milk and apple cider vinegar in a mixing bowl and set aside to thicken while you prepare the rest of the batter.

Mash bananas in another small mixing bowl.

In a large mixing bowl combine flour, baking powder, baking soda, cinnamon, and sea salt.

Add coconut sugar and vanilla extract to the nondairy milk and vinegar, as well as the mashed bananas and whisk until well combined.

Pour this into the dry ingredients and fold together until just combined. Be sure you don’t over mix - small lumps are good!

Lightly grease the cups of a 12-cup muffin pan with vegan butter, a vegetable oil spray, or line with paper liners. Divide the batter amongst the cups evenly.

Add about 1 heaping tablespoon of granola on top of each muffin, covering the entire top of the batter. Slightly press the pieces of granola just into the top of the batter so it sticks after baking.

Bake for 20 to 25 minutes. To check, you can stick a toothpick in the center and it should come out clean.

Iron Rich Recipes: Super Seed Butter

pumpkin seeds (pepitas)

raw sunflower seeds

Place the pumpkin seeds, hemp seeds and sunflower seeds in a food processor and process them until they turn into a nice crumb.

Next, with the motor running, drizzle in the oil to help get the butter process going. At this stage, the seeds will start to look like a dry dough and require lots of scraping.

Keep going, scraping as necessary, and slowly it will form a paste that seems close to ready by 15 minutes. However, it&#39;s not quite creamy. What you&#39;re waiting for is the machine and the butter to start really heating up and the oils of the seeds to release. Some will toast the seeds in the oven first to get the oils releasing…but here I&#39;m relying on the motor of the food processor to do my bidding.

At about 20-25 minutes, it will look like a thick, glossy butter and then it is ready. When ready, add the salt and cinnamon and give it another whir to combine. Now, you&#39;ve got a decision about sweeteners.

If you add liquid sweeteners to a butter, you run the risk of it seizing and turning into a dough. So the safest bet is to add sugar and dried ginger and whir again.

However, if you like living dangerously…which I do…then turn off the machine and add a bit of maple syrup and fresh ginger by hand. Now, it&#39;s ready to transfer into a glass jar and store in the fridge for up to a month. Or, eat it all on freshly toasted bread with a few of your closest friends and call it brunch.

These wholesome strawberry oatmeal bars are bursting with juicy strawberry flavour and whole grain goodness. SO easy to mix up, they’re the perfect, not-too-sweet, fruity treat for dessert, tea time or even breakfast!

Fresh Strawberry Oatmeal Bars with Hemp Hearts

quick oats (see note if you want to use rolled oats)

whole wheat

baking powder

extra virgin olive oil (or avocado oil)

vanilla

strawberries (diced, see notes for frozen)

sugar

arrowroot powder (cornstarch works too!)

lemon juice

Preheat the oven to 350℉ (175℃). Line an 8 x 8 square baking dish with parchment paper to prevent sticking.

In a large bowl, mix together the oats, flour, hemp hearts, baking powder, salt, oil, maple syrup, and vanilla until well combined. Reserve 1 cup (250 mL) of the mixture for the topping.

Using damp hands, press the remaining mixture firmly and evenly into baking dish. You want to use firm pressure as it helps the base come together!

Give the bowl a quick wipe if desired, and then mix the diced strawberries, maple syrup, lemon juice, arrowroot and salt. Gently smash the berries as you mix. If the mixture isn&#39;t getting juicy at all, this is your sign that you might need some more maple syrup.

Evenly spread the strawberry mixture over the oat base. Then, crumble the reserved oat mixture over the strawberries.

Bake until the strawberries are jammy and bubbly, and the oat crumble looks golden, about 38-45 minutes.

Let cool completely in the pan, set on a cooling rack. Once cool, carefully lift the bars onto a cutting board and cut into 9 or 12 squares.

These are a-MA-zing!!  They were so good when we made them for guests I made them a second time already.  They are tasty, filling and not too sweet.

Just a quick question. Are you measuring the berries prior to dicing, or using 4 cups diced in this recipe? My strawberries from the market are super gigantic, and there would be a lot of space between them, if I measure prior to chopping.  So,, I chopped then measured. Took a little longer to cook, but so delicious!

Place yogurt, hemp hearts, green onions, lemon juice, nutritional yeast, onion + garlic powder, salt and pepper in a food processor and process until smooth. Place in a bowl.

Squeeze out excess water from thawed spinach and stir into dip. Taste, adjust seasoning and serve with your favourite bread, crackers, chips or sliced veggies.

If using silken tofu, you might like a tiny bit of extra lemon juice and oil to make up for the low fat content and lack of tang. Use those tastebuds!

Leftovers will keep, covered, in the fridge for 3-4 days.

Fast Vegan Spinach Dip Recipe (no nuts!)

This yummy green pasta might be one of the most delicious ways to eat kale! The green pasta sauce comes together in a few minutes in the blender with no sauteing - the kale leaves are quickly blanched in the pasta pot for fewer dishes. It’s a kid friendly, weeknight dinner that just so happens to be gluten free and low FODMAP.

30 Minute Green Pasta Recipe with Kale

curly green kale (de-stemmed, see note)

mint leaves

lemon (juiced, about 2 tablespoons)

pasta

pasta water (you won't use it all!)

Bring a large pot of water to boil. Once boiled, salt water and add kale. Blanch for 2 minutes. Remove using tongs, shake excess water, and place directly in the blender.

Let water come back to a full boil, add pasta and cook according to package directions.

Meanwhile, add hemp hearts, nutritional yeast, lemon juice, mint and salt to blender. Set aside.

Before pasta is done, reserve 1 cup of pasta water. Add 1/3 cup to the blender and blend green pasta sauce on high for 45-60 seconds, until perfectly smooth. Taste and adjust salt, nutritional yeast or lemon if need be. You want it to taste very bright and vibrant as it mellows on the pasta.

Drain pasta in a colander and rinse quickly with cool water. Return pasta to the pot - off of the heat - and toss with green sauce. Add 1-2 tablespoons of pasta water at a time if you find the sauce is too thick (I rarely need it).

Serve with some flaky salt, chile flakes or extra nutritional yeast if you like.

Low FODMAP Green Pasta with Kale

What’s yummier than a creamy, tangy, vegan Caesar salad dressing? Made with hemp hearts, not cashew nuts, and with no added oils, this healthy vegan Caesar dressing recipe takes just 5 minutes to make, with 6 simple ingredients (not including salt and pepper!). Amazing with a classic romaine or kale Caesar salad or even a slaw!

Healthy Vegan Caesar Dressing with Hemp Hearts

lemon juice (about 2 lemons)

nutritional yeast

water

Dijon mustard

garlic powder

maple syrup (or pure cane sugar)

pepper (to taste)

Place the lemon juice, hemp, nutritional yeast, water, Dijon, salt, garlic powder, maple syrup and pepper in a blending cup or bullet. Blend 1-2 minutes until smooth. Taste, and adjust salt and pepper as you like.

The BEST Caesar salad dressing ever!!!  I did use 2 cloves of micro planed garlic in place of the garlic salt, otherwise prepared recipe as written.  Even my non vegan fam loved it!  😊

You are absolutely right, this dressing is delicious!  I just made it and had some with my spring mix salad.   I think this dressing would also work well as a mayo substitute for no-tuna salad sandwich made with chickpeas instead of tuna, what do you think?   Thank you for the recipe, it is fabulous and I have enough left over for several more salads.   I replaced the maple syrup in this recipe with one date.

This dressing is everything! It’s well balanced and just so fresh! I just had to try it and it did not disappoint. I added roasted chickpeas to my kale Cesar and was perfect. 

I added Nori (sea algae). 
Next time I will cut some of the vinegar and Dijon down a bit, it was quite bitter. I added some Veganaise to help with that.
