A decadent chocolate lava cupcake with gooey chocolate center that you can't miss! It tastes indulgent but is actually healthy due to its higher protein and fiber content. It's also gluten free, vegan and very quick & easy to make.

Healthy Chocolate Lava Cake

oat flour (gluten free)

lupin flour

sugar free sweetener

tbsp cocoa powder

tsp baking powder

tsp baking soda

salt

ripe banana (1 small banana) -

milk

lemon juice

vanilla extract

chocolate

Pop all ingredients into a blender and blend until mixture is smooth.

Pour mixture into cupcake mold. The batter should make about 6 cupcakes

Poke a little block of dark chocolate or sugar free chocolate into the center of each cupcake. My suggested serving size is about 10g (0.35 oz) of chocolate per cupcake, but I used more because I like it better with more chocolate!

Bake for 15-20 minutes, then remove from the oven and allow to rest for a couple of minutes before serving.

These easy, creamy &amp; healthier NY Style Mini High Protein Cheesecakes have a crunchy biscuit base, creamy vanilla cheesecake filling and is drizzled with a healthy milk chocolate ganache. They can be mixed up and baked in less than 30 minutes. They are the perfect high protein and low calorie dessert that actually tastes good!

Mini High Protein Cheesecakes- New York Style

3.5 digestive biscuits (52 grams, can sub for equal parts biscuit of choice)

butter

ml milk

light cream cheese (room temp)

170 g yogurt (room temp)

egg (room temp)

egg yolk (room temp)

vanilla

g granulated zero calorie sweetener (or any granulated sweetener of choice)

vanilla protein (vegan

g sugar free milk chocolate (or normal milk chocolate)

yogurt

Preheat oven to 160c (320F)

Place 8 muffin liners in a muffin tin

Add digestive biscuits to a food processor and blend for 10-30 seconds. Add melted butter and mix until a slightly sticky crumble forms

Add 1.5 tsp of the base mixture to each cupcake liner, and press mixture down until even using the back of a spoon or a protein scoop

Bake for 10 minutes then let it cool slightly

Add cream cheese, vanilla, sweetener and protein powder to a bowl. Whisk by hand until well combined

Add yogurt and 1 egg and 1 egg yolk and using an electric hand mixer (or a normal whisk), whisk until just combined &amp; no clumps remain. Do not overmix

Add 2 tbsp batter into each cupcake liner over the cooled base

Optional: place the muffin tin containing the cheesecakes into a larger baking dish or pan filled with hot water, making sure that the water level comes up about 1 inch on the sides of the muffin tin

Bake for 20-25 minutes

Allow to cool slightly before refrigerating for minimum 1 hour

When ready to serve, melt down the chocolate in the microwave (in 30 second increments), or over a bain-marie.  Add the yogurt and mix until well combined and a thick ganache is formed

Drizzle the ganache over the cheesecakes and enjoy

VIral high protein Frozen s’mores are a refreshing frozen treat made with a combination of melted chocolate, whipped topping mixed with protein powder (optional), stuffed between graham crackers! This high protein dessert can be made vegan, gluten-free, and is refined sugar-free!

Frozen S'mores (High Protein!)

Graham crackers

tub coconut whipped topping

protein powder

peanut butter (*optional)

chocolate chips

tsp coconut oil (*to help thin the chocolate chips)

vanilla extract & good pinch sea salt

Prepare the Protein Filling: Add the protein to your tub of whipped topping, along with the peanut butter, if using. Mix well until no lumps remain and it&#39;s smooth, thick, and creamy.

Assemble the S&#39;mores: Lay half of the graham crackers flat on a parchment-lined square baking pan. Scoop a generous amount of the protein filling onto the crackers and spread evenly. You can use the whole tub, half, 3/4 - however much you want! I like a thick layer. Leave leftovers in the freezer or fridge to use for your next batch.

Dip in Dark Chocolate: In a small bowl, melt the chocolate. Use the double-boiler method or simply heat in the microwave in 30 second increments mixing between each, until smooth. Pour this over the whipped topping layer, gently spreading it out. Place the remaining graham crackers over top and just slightly and gently press them down to stick.

Freeze: Freeze the assembled s’mores for at least 3-4 hours or until firm. The longer they freeze, the more the whipped topping layer will firm up!
