This high-protein Tuna Poke Salad with Wasabi-Soy Vinaigrette is made with sushi-grade tuna, avocado, edamame and cucumbers.

Tuna Poke Salad

tuna

scallions (plus more for garnish)

soy sauce or gluten-free tamari

sesame oil

sriracha

tbsp less sodium soy sauce (or GF Tamari)

tsp wasabi (in tube)

tbsp rice wine vinegar

tbsp sesame oil

baby greens (arugula

cucumbers ((from 2 Persian) peeled and diced 1/2-inch cubes)

Hass avocado ((4 ounces) sliced)

edamame

furikake (for topping (I like Eden Shake))

Combine the vinaigrette ingredients in a small bowl and set aside.

In a medium bowl, combine tuna with scallions, soy sauce, sesame oil and sriracha. Gently toss to combine and set aside while you prepare the salad.

In 2 bowls, layer the salad greens, 1/2 of the tuna, edamame, avocado, cucumber and drizzle with Soy-Wasabi Vinaigrette.

Top with furikake and scallions, for garnish.

This healthy salad recipe is perfect as a healthy lunch option and can be prepped up to 3 days in advance.

Mango Chicken Salad with Cilantro Lime Dressing

C. Mango, peeled u0026 chopped

1.5 C. Cucumber, chopped

C. Tomato, de-seeded u0026 diced

C. Bell Pepper, de-seeded u0026 chopped

C. Red Onion, chopped

C. Kalamata Olives

oz Boneless, Skinless Chicken Breasts (pre-seasoned u0026 cooked, shredded)

Small Bundle Cilantro (or 1/2 of a large bundle)

C. Extra Virgin Olive Oil

C. Raw, Unroasted, Unsalted Cashews

Lime

tsp Raw Honey

Garlic Clove

Jalapeno, de-seeded u0026 roughly chopped

Sea Salt

Pepper,

Water,

Add all ingredients to a large salad bowl.  Toss to combine.

For the Salad

Add all ingredients to a blender and blend until smooth.

For the Dressing

Pour 1/2 of the dressing mixture over the salad and toss to combine.  Cover and store in fridge for up to 3 days.  **Remaining salad dressing can be used for later in the week to make another serving of this salad or frozen for up to 30 days.
