Hobo Dinner Foil Packets combine lean beef, tender seasoned veggies and a simple gravy to create a simple meal cooked to tender perfection!

Hobo Dinner Foil Packets

lb beef

onion soup mix

potatoes

carrots (chopped)

(or 2 small onions, sliced)

olive oil

garlic powder

salt & pepper

mushroom soup

Preheat oven to 375 degrees F.

Combine ground beef and dry soup mix in a bowl.  Form into four patties and set aside.

In a large bowl combine all remaining ingredients except mushroom soup. Toss until well mixed.

Spray a 12″x18″ piece of foil with non-stick spray.

Place 1/4 of the vegetable mixture in the center of the foil.  Top with 1 beef patty.  Add 2 tablespoons of condensed mushroom soup on top of each patty.

Seal foil packets well.  Place beef side up on a large baking sheet and bake 35-45 minutes or until potatoes and carrots are tender.

Foil packets are a quick and easy way to prepare potatoes for the grill, oven or even the campfire!

Grilled Potatoes in Foil

lbs potatoes (cut ¼" slices)

onion

butter

salt & pepper (to taste)

mushrooms

real bacon bits

Place foil packets on the counter and spray with cooking spray.

Wash and slice potatoes (and onions/mushrooms if using).

Place potato slices (approx 1 potato per packet) and any optional toppings on each foil piece. Top with a generous pat of butter and salt/pepper to taste. Fold each packet closed.

Grill over medium heat for 30 minutes or until soft.

This Chicken Foil Packet is made with a Mexican flair, combining black beans, corn and salsa! Cook on the grill, in the oven or over the campfire for a delicious flavor-packed meal.

Santa Fe Chicken Foil Packets

chicken breasts (7-8 ounces each)

chili powder

black beans (drained & rinsed)

kernel corn

diced bell peppers (any color)

Mexican cheese (or monterey jack, shredded)

cilantro (tomatoes & jalapenos for garnish)

Preheat grill to medium-high heat.

Place four large pieces of foil on work surface and spray each with cooking spray. Place 1 chicken breast on each piece of foil and season with chili powder, salt &amp; pepper.

Divide beans, corn, peppers, and salsa over top of chicken breasts.

Fold in the ends to seal each packet. Place packets the grill vegetable side down for 10 minutes.

Flip packets over and grill an additional 10-12 minutes or until chicken is cooked through and reaches 165°F.

Place packets on a large baking pan. Carefully open packets and top with cheese. Place the baking pan back on the grill to melt the cheese.

Top as desired.

Cut four sheets of heavy duty aluminum foil.  Combine ground beef, garlic powder, onion powder, and salt and pepper.  Shape into four patties and place in the center of the aluminum foil.

In a medium sized bowl toss potatoes, carrots, onion olive oil and Italian seasoning.  Divide evenly between the four packets.  Fold the foil over and seal each packet.

Place the packets on the grill or over the coals of a fire.  Cook for about 45-60 minutes or until the potatoes are tender.  Carefully open the foil packets and top with cheese.

Cheeseburger Hobo Dinner Packets

ground beef, 80% lean

eggs lightly beaten

salt and pepper,

red baby potatoes,

baby carrots,

heavy duty aluminum foil

Prep your vegetables.  I used baby carrots that I cut in half, small red potatoes cut in half or quarters, and chopped a medium onion.  Set aside.

In a medium bowl, combine the ground beef, egg, garlic powders, salt and pepper, and mix together.  Make 8 patties, set aside.

Tear off 8 sheets of heavy duty aluminum foil (about 12&quot; x 18&quot;).  I like to stack the sheets and do one packet at a time. Spray the first sheet of foil with non-stick spray.  Place about 1/8 of the potatoes, carrots, and onions in the center of the foil packet. Season vegetables with salt and pepper.

Top with a hamburger patty.

Seal up the packets and place on a tray. REPEAT these steps for the remaining 7 packets.

Assembling the packets

Keep in mind that your cooking time may vary depending on how much or little you have in your packets.

Oven: Foil packets are easy to cook in the oven. Preheat the oven to 375 degrees Fahrenheit. Place the hobo dinner foil packets on a rimmed baking sheet and cook for 45 minutes or until vegetables are tender and the ground beef reaches an internal temperature of 160 degrees.  I like to to turn the packs halfway through.Over the Fire/Camping:  Cook the packets right over the coals. Avoid flames for they will burn through the packet. This will take 30 to 45 minutes depending on the size of the packet.On the Grill: Grill for 35-45 minutes or until potatoes and carrots are tender and the ground beef reaches 160 degrees. I flipped mine over during the last 20 minutes of cooking.**With any of the methods, during the last 5 minutes of cooking time, open packets and add the cheese to the burgers.  Allow cheese to melt with the foil open, and then serve.

Hobo Dinner in the Slow Cooker

lb. 10% fat ground beef

eggs

white onion (diced)

ketchup

salt

pepper

Saltine crackers (crushed)

russet potatoes (sliced)

sharp cheese (shredded; add at the end)

ketchup for topping meatloaf

In a large bowl, combine the meatloaf ingredients, be careful not to over mix.

Shape the meatloaf on one side of the slow cooker, trying to keep the meatloaf from touching the sides.

Make a foil &quot;bowl&quot; out of a foot or so of foil.

Shape it next to the meatloaf.

Add the potatoes and onions.

Season the potatoes and onions with the salt, pepper, and onion powder; toss them by hand.

Drizzle over the melted butter.

Cover and cook on LOW for 5 hours. DO NOT OPEN THE LID WHILE THIS IS COOKING, or the potatoes will not get tender.

After the cooking time is up add the cheese on top of the potatoes, and cover for about 5 minutes more or until the cheese is melted.

Add ketchup to the top of the meatloaf and serve.
