Make the Gravy

Melt butter in the same cast iron skillet over medium-low heat. Whisk in flour; stir until thickened, 2-3 minutes. Whisk in the milk, about 1/2 cup at a time, until a smooth gravy comes together. Add salt, diced green chiles, and sausage back to the gravy. Stir to combine.

Assemble the Egg Bake

Preheat the oven to 350 degrees. Place half of the biscuits over the bottom of a greased 9&#215;13 pan. Pour eggs over top. Sprinkle with cheese and dollop with some of the gravy (but save some gravy for later). Arrange with remaining biscuits. Bake for 35 minutes, until eggs are set.

The sausage gravy recipes i use call for the flour to be incorporated into the sausage before slowly adding the milk.
Is there a particular reason you wait until the gravy is thickened to add the sausage and green chili?
PS, I can hardly believe I've never thought of adding green chilis to my gravy! Thanks for the tip!

I made these this morning for Sunday breakfast. Absolutely perfect with plenty of left overs to start off the week! Love the chilies in the gravy.  We loved the gravy so much that next time I may double the gravy!

This was the first recipe I've tried that I didn't like... And it's all because of the processed biscuits. I generally make everything I can from scratch but decided to give this a try. A good reminder that I'll never buy biscuits like this again.  It surprised me that they were used actually, as generally all your recipes are from scratch!

This was SO GOOD! I have made biscuit and gravy for years ad never thought to put green chiles in the gravy. I also put some in the egg mixture. We have fabulous green chilies here in Colorado that made this so good. thanks!

So delicious!  I loved the gravy with the green chiles.  I added a little cayenne for a little extra heat as well.  I'll definitely make this again.

Easy and tasty! Great for kids, not too fancy so perfect to pop in the oven while opening gifts Christmas morning. It was still soupy in the middle after 35 mins, so I extended the cooking time. Probably by 20 mins? But may be due to the pan I used (smaller). I think next time I make it I will use pimentos in the gravy in place of green chilies.

This baked omelet is easy as whisking together eggs, milk, ham, cheese, green onions, and baking. It’s great for breakfast, holiday brunches, family get togethers, or as breakfast-for-dinner when you want to change things up. If you’re not into ham, try bacon or sausage. Or make it vegetarian by omitting the meat and adding mushrooms and extra veggies like bell peppers or tomatoes.

Baked Ham and Cheese Omelet

milk (I used unsweetened cashewmilk)

Preheat oven to 350F and spray an 8-inch square baking dish with cooking spray; set aside.

To a large bowl add the eggs, milk, salt, pepper, and whisk to combine.

Add 1 cup cheese, ham, green onions, and stir to combine.

Pour mixture into prepared baking dish.

Evenly sprinkle with remaining 1/2 cup cheese.

Bake for about 55 to 60 minutes (I baked 58 minutes), or until eggs are cooked and omelet is set. Because all ovens and pans vary, start checking at 40 minutes and bake until done.

This breakfast casserole is a delicious mixture of smoke salmon, potatoes, eggs, cream and  seasoned with fresh chives ,dill,  shallots and a touch of Dijon mustard.

Smoked Salmon Breakfast - All Our Way

Preheat oven to 400 F. Arrange bread on rimmed baking sheet. Bake until pale golden, about 5- 8 minutes, then cool.

Butter a large glass baking dish (4 quart 15 x 10-inch).

Melt 4 tablespoons butter with the olive oil in a heavy large skillet over medium-low heat. Add potatoes. Stir to coat and arrange in single layer. Cover and cook until potatoes are almost tender, about 8 minutes. Uncover; increase heat to medium-high, and cook until potatoes are lightly browned and tender, stirring occasionally, about 8 minutes. Add shallots and sauté until soft, about 2 minutes. Remove from heat. Gently mix in bread, salmon, chives, minced dill. Transfer mixture to prepare dish.

Whisk eggs, cream, sour cream,Dijon mustard, salt and pepper in medium bowl to blend well. Pour custard over potato mixture in dish. Let stand 15 minutes, occasionally pressing bread into custard.**

Preheat oven to 350 F. Bake casserole, uncovered, until custard is set, about 30 - 45 minutes. Cut into squared and top with additional sour cream, capers, and dill sprigs; serve hot.

OMG this sounds delicious. We just had a smoked salmon dish for breakfast this past weekend. It was a recipe from a cookbook that I will be giving away on my blog. Love the tradition of this for Christmas breakfast. I think it would be a great Christmas Eve dinner too...and am printing it off right now and filing it in my HOLIDAY MENU folder.
