This is a mouth numbing, tingling, super spicy homemade chili oil. The chili oil is filled to the brim with red pepper flakes, sichuan peppercorns (red and green!), garlic and a ton of aromatics for complexity.

3” piece of ginger, sliced into coins

bay leaf

tbsp sesame seeds

soy sauce

Grind red and green sichuan peppercorns in a spice grinder or mortar and pestle until a fine powder forms, then set aside.

Heat oil, red pepper flakes, star anise, ginger, scallion, cinnamon, bay leaf, cumin and coriander in a large, heavy bottomed saucepan over medium heat. Cook, stirring frequently, for about 3 minutes, or until spices have darkened and are fragrant and oil is gently bubbling.

Stir in garlic and cook about 15 seconds, or until garlic just begins to turn golden.

Remove pot from heat, stir in ground peppercorns and continue to stir until oil stops sizzling. Stir in sesame seeds and soy sauce and let oil sit for at least 2 hours.

Fish out ginger slices and scallions. Transfer chili oil to a glass jar (strain the spices if desired) and refrigerate.

This easy Sichuan-style garlic chili oil (辣椒油 - là jiāo yóu) comes together in just minutes and makes for a delicious spicy condiment that you'll want to drizzle on everything. Loaded with crisp garlic, fiery chili flakes, and nutty sesame seeds, my take on this classic Chinese condiment features a boost in savory umami thanks to some dried scallops and a splash of soy sauce.

Spicy Sichuan Chili Oil

chili pepper flakes ((I used Korean Gochugaru))

To grind the Sichuan Pepper, first pick through the peppercorns to remove any black seeds or twigs. Add the peppers to a spice grinder, or use a mortar and pestle to grind them into a powder.

If you're going to add dried scallops, put them in a spice grinder or small food processor and pulse until coarsely ground. Add this to the chili peppers mixture and mix.

Add the chili pepper flakes, sesame seeds, dried scallops, Sichuan pepper, and five-spice powder to a bowl and stir to combine.

Add the soy sauce to the pepper mixture and stir to distribute evenly.

Add the oil to a saucepan over medium heat and heat preheat until hot. Add the garlic and ginger and fry until golden brown and not sizzling as much. The idea is to get the garlic crisp, without burning it.

Once the garlic is golden brown, immediately pour the hot garlic and ginger oil into the chili flake mixture. The oil is extremely hot, and it will sizzle as you add it to the chilies, so be very careful.

Stir your chili oil until the sizzling subsides and then let the mixture come to room temperature before bottling, it's best to let the mixture steep for a day or two to get the maximum flavor into the oil. Store the chili oil in the refrigerator.

Infuse the oil:Add everything except the Chinese dry chili peppers into a saucepan (oil, shallot, ginger, garlic, cinnamon, bay leaves, Sichuan peppercorns, star anise, and cardamon).

Place the saucepan over medium low heat and bring the temperature of the oil up to 235°F. Keep the oil between 230°F and 240°F. Let the aromatics fry in the oil for 25 to 30 minutes.*You can also watch the bubbles to help you gauge the temperature of the oil. The dry aromatics should be giving off constant stream of small bubbles. As the shallot fries, the bubble will become more lively, but it should never be violent.*

Strain the aromatics:After 25 to 30 minutes, strain the aromatics out of the oil. The oil should be very fragrant and the shallots and ginger should look golden brown.

Make the chili oil:Keeping the oil temperature between 230°F and 240°F, add about half of the dry chili peppers. Gently stir and cook the pepper for 30 seconds to a minute.

Remove the saucepan off of the heat and add the remaining chili pepper. Gently stir until well combined. Add the salt and give the chili oil a few more mixes.

Cool and store:Carefully transfer the homemade chili oil into a sterilized jar. Let the oil cool completely before covering. Store in a cool, dry place and use when needed.*You can also wait until the oil is cooler before transferring if you prefer.*

Cut the ends off of each cucumber and smash them, one at a time, with the flat side of your knife. Smash them until the cucumbers crack. They don&#39;t have to be totally broken apart. *Do use a knife with a thick blade, like a cleaver or chef&#39;s knife.*

Cut the smashed cucumbers diagonally, into bite size pieces. Then, place them in a bowl. Sprinkle the salt over the cucumbers and give them a couple mixes. Let the cucumbers salt for about 5 minutes, then drain the cucumber juice. You don&#39;t have to rinse the cucumbers.

Add the remaining ingredients to the cucumbers (garlic, black vinegar, soy sauce, sugar, sesame oil, chili oil, and cilantro). Give everything a good mix and serve immediately.
