Let me show you how easy it is to make my Malaysian Curry Powder for that Far East classic Malaysian Curry used most often in curry sauces and satays. You’d be surprised most of the spices are already on hand in your pantry.

Malaysian Curry Powder

red chiles

cardamom pods

cinnamon

coriander seeds

tbsp cumin seeds

fennel seeds

((12-15))

tsp black peppercorns ((20))

Toast the whole spices in a hot, dry skillet over medium heat for 2-3 minutes until fragrant.

Grind to a powder in a grinder or mortar and pestle. Store in an airtight container. This makes about a third of a cup.

Homemade Curry Powder - Japanese S&B Style

turmeric powder

tsp ground coriander (sub 6 tsp coriander seeds)

tsp fenugreek seeds

tsp cumin

tsp orange peel (dried)

tsp black pepper

tsp chilli powder (sub Korean chilli flakes

fennel

ginger

star anise (sub 1 tsp ground anise powder)

thyme

bay leaf

cloves

tsp nutmeg

tsp sage (dried)

cardamom (whole, sub 1/2 tsp ground)

Grind

Grind any whole spices you&#39;re using in a mortar and pestle (or spice grinder) from largest to smallest. Putting in 1-2 at a time, grinding to a powder, then add more. For us, this was star anise, cardamom, bay leaf, fenugreek seeds, thyme and sage.

Scoop out the ground spices from the mortar and place into a small bowl alongside the remaining ground spices. In our case, this was turmeric powder, ground coriander, cumin, dried orange peel, black pepper, chilli powder, cinnamon, fennel, ground ginger, ground cloves and nutmeg. Mix it all together until well combined.

Toast

Spread out the curry powder on a medium saucepan on the lowest heat setting possible. Dry toast for 1-2 minutes to bring out the flavours. Stir as you go, so the curry powder is evenly toasted and heated through.

Remove from the heat and allow to cool before storing in an airtight container in your pantry.
