Separate eggs yolks and egg whites.

In the egg yolk bowl, combine sugar and vanilla paste. Whisk together.

Add bourbon and rum. Whisk until combined.

Add cream and whole milk.

Whisk, then refrigerate.

Whip egg whites.

Meyer’s Dark Rum

Bourbon (I prefer Bulleit)

Pure Vanilla Extract

Cinnamon

Nutmeg

Kosher Salt

Combine the egg yolks and sugar in a large container. Whisk until completely blended and creamy.

Add the remaining ingredients and stir until well combined.

Transfer to a one-gallon glass jar with a lid. Make sure and seal well. Store in the refrigerator for at least 3 weeks and up to 1 year.

When ready to serve, top with homemade whipped cream (see notes below) and freshly grated nutmeg.

When aging should it be periodically stirred/shaken/mixed, left relatively undisturbed, or does it matter?

Love this recipe second year making a batch. Now I doubled everything but the alcohol As the ppl who’d be drinking it this year w me said it was a little strong for them. which I’m sure it will still taste good what I’m curious is would that be enough alcohol to keep a sealed bottle for a year still or if I want to try a full year of aging should I make a small batch w the full alcohol and set it aside from the rest. A simple but delicious homemade eggnog recipe with some optional bourbon stirred in. I used tempered eggs in my version.

sugar (plus 1 Tablespoon)

Teaspoon fresh nutmeg

Bourbon or brandy (optional (sort of))

Separate your yolks and whites for four eggs.

Put the whites in the fridge and start with your yolks. Whisk yolks until they are light in color. Add in sugar and continue to mix or whisk.

Now combine your milk, cream and nutmeg in a medium saucepan and put it on medium heat. If you don&#8217;t want to pasteurize your yolks, skip this step entirely. Heat this to just below boiling temperature. Probably around 170 degrees. You shouldn&#8217;t be able to keep your finger in it.

To temper the yolks, slowly drizzle in a cup of the hot liquid into your eggs. Keep mixing the yolks while you do this.

Then once your cup of hot liquid is mixed in with your yolks, your yolks will be up to temperature and you can slowly add them back to your saucepan.

Return to medium-low heat until it reaches 160 degrees. Keep whisking it and it will only take a minute or two. You can then be assured that your eggs are safe. Add in your brandy if you are using it and stick the mixture in the fridge to chill out.

Meanwhile, whisk egg whites until light and fluffy. They should hold stiff peaks. Whisk in an extra tablespoon of sugar to help them out.

Fold egg whites into the yolk base.

Serve chilled eggnog with cinnamon.

Homemade Eggnog Recipe

In a medium bowl, beat eggs and sugar together with a handheld mixer (or vigorously with a whisk by hand), until, thick, light and fluffy (about 1 minute).

Heat milk, cinnamon, nutmeg, and sea salt in a medium saucepan until warm, whisking constantly.

Temper the eggs by slowly adding warm milk to the beaten eggs as you whisk vigorously.

Pour the tempered egg/milk mixture back into the saucepan and cook until it starts to thicken but does not boil (160 degrees F), whisking often. (it will lightly coat the back of a spatula).

Place the heavy cream into a bowl with a fine mesh strainer on top of the bowl.

Strain the egg mixture into the heavy cream. Discard what is left on the strainer.

Add vanilla extract, stir to combine.

Chill for 4 hours.

Serve cold with some homemade whipped cream and an extra sprinkle of nutmeg.
