Blueberry Protein Balls

Place the cashews and pecans in a food processor and pulse until finely chopped.

Add the remaining ingredients and pulse until the dates are broken down and the mixture clumps together.

Roll a half-tablespoon-size of the mixture into a ball with your hands. Repeat with remaining mixture. This will make about 14 balls. 

Keep in the fridge or freezer in an airtight container.

Place the cashews in a food processor and blend until finely chopped.

Add the remaining ingredients and pulse until the dates are broken down and the mixture clumps together. Add more almond meal or cashew butter as needed, for the mixture to stick together.

Use a small cookie scoop or scoop out a tablespoonful of mixture and roll into a ball with your hands. Place on a parchment lined baking sheet. Repeat with remaining mixture.

Place the baking sheet in the freezer for 10 minutes.

Meanwhile, melt the coconut butter over a double broiler on the stove or in the microwave. Stir frequently and if using the microwave only do for 15- 20 seconds at a time till completely melted. Remove the bliss balls from the fridge and drizzle the melted coconut butter on top. Allow to set and transfer to an airtight container and store in the fridge for up to 7 days.

Over medium heat, heat 2-3 popcorn kernels on a thick-bottomed skillet stove or cooking pot with the lid on until the kernels pop, about 2-3 minutes. This ensures the hot skillet is ready. Once the kernels pop, spread the rest of the popcorn kernels in a single layer in the skillet and close the lid. The kernels will start popping quickly, about 30 seconds. Shake the skillet gently and let the kernels cook over medium heat until you can no longer hear kernels popping, about 2-3 minutes.

Transfer the popcorn into a large mixing bowl. Add seasoning (oil, salt, garlic powder, and nutritional yeast) and toss well to coat. Serve immediately.

Fresh homemade Beef Jerky Sticks are a delicious snack full of flavor and packed with protein. They are easy to make and healthier because there's no additives or preservatives!

Ground Beef Jerky Sticks

lbs Ground Beef

tbsp Sweetener

tsp Black Pepper

tsp Garlic Powder

tsp Cayenne Pepper

tbsp Soy Sauce (use less sodium if sensitive to sodium intake)

Worcestershire Sauce

Gather all the ingredients.

Preheat the oven to 300F.

Use a small mixing bowl to combine the dry ingredients sweetener, salt, black pepper, garlic powder and cayenne pepper.

In another mixing bowl, combine liquid ingredients soy sauce and Worcestershire sauce.

Transfer the ground beef into a large mixing bowl, combine half of the dry and liquid seasoning and mix.  Once mixed, pour the other half of the seasonings and continue to mix until well combined.

Load the ground beef mix into the jerky gun as shown below.

Use the jerky gun to create the beef strips/sticks on top of a baking rack as shown below.

Bake at 300F for 10 minutes.

After 10 minutes, open oven door to let the moisture escape, reduce oven temp to 170F and cook for 2 hours and 30 minutes for beef strips and 3 hours for beef sticks.

Let beef sticks cool before enjoying.  We recommend storing in the fridge in an airtight container.
