Homemade Sushi: Tips, Tricks, and Toppings!

bamboo sushi mat

STEP ONE: Make your sushi rice on the stove top or using a rice cooker. Quinoa works excellent too!

STEP TWO: Season the rice with seasoned rice vinegar or a combination of plain rice vinegar, sugar, and salt. Pour over your rice, fluff with a fork, taste, and adjust as desired. Remove rice from heat, fluff into a bowl and set aside.

STEP THREE: While the rice cooks/cools, prep your veggies! Slice into matchsticks and set aside. Once the rice is done you'll be ready to roll!

STEP FOUR: To avoid messy clean-up and scrubbing, wrap your bamboo mat in plastic wrap. Lay a sheet of nori on top and grab your rice!

STEP FIVE: Use a spoon to spread a thin layer of rice on the seaweed sheet.

STEP SIX: Place your toppings in the center, very close to one another and practically in a little veggie dogpile.

For rice on the inside, line your veggies/seafood on top of the rice.

For rice on the outside, flip the sheet of nori so the rice touches the plastic wrap and then add your vegetables to the seaweed-only side.

STEP SEVEN: roll, squeeze, repeat: This one's hard to explain... but it's easy to do! The first roll will bind the ingredients into the center. Roll approx 1/4 of the mat and gently squeeze (so it sticks) and unfold the bamboo mat. Repeat the process until you've rolled the sheet of rice, seaweed, and veggies into a spiral. Give it one last squeeze to seal the deal.

STEP EIGHT: Slice into bite-sized discs with a freshly sharpened chef's knife. If you're topping your sushi with sashimi or avocado, first tightly wrap the roll in plastic wrap prior to slicing. This will keep everything neat and pretty an avoid the horrific act of flinging avocado slices all over the kitchen. Though if that sounds like fun to you, fling away! I'll stick with the saran wrap!

Next pile on all your favorite toppings and set up a few sauces for dunking.

Using a rice cooker or a stove-top method, start cooking your white rice. I've found that two rice cooker cups (3/4 cup each) provides enough rice for 4-5 sushi rolls. While your rice is cooking prepare all your vegetables and clear a space for rolling up your sushi rolls.

When your rice has finished cooking, lay out one nori sheet on a flat surface. Using a plastic spatula that comes with your rice cooker), scoop out some hot, steaming rice onto your nori sheet and spread it out to cover almost all of the nori sheet, except for about 1 inch on the end farthest away from you. (See photo). You want your rice to be as thin as possible, but fully cover the nori sheet. Use the back of your spatula to smash down the rice and spread it out thinly.

Then, starting with the end closest to you, fold the nori sheet over your fillings and roll the sheet tightly until it seals at the end, pressing down hard at the end to help the seal stick.

Korean Avocado Tuna Sushi Roll

1. In a bowl, combine the rice, rice vinegar, and a pinch of salt.2. In medium bowl, combine the sesame oil,&nbsp;gochujang, ginger and soy sauce. Add the tuna and toss to coat. Drain off excess marinade before adding the tuna to your sushi roll.3. Fold a clean kitchen towel into a rectangle and place a piece of plastic wrap over the towel. Place 1 sheet of nori on the plastic wrap. Wet your hands and then lightly press them on the nori sheet to dampen. Spread a thin layer of rice over the nori and then arrange the drained tuna, kimchi, carrots, pineapple, and avocado toward the top of the end closest to you.4. Begin to roll the nori sheet over the tuna until it has made one turn, now begin to roll the towel up to help shape the roll. Don't worry if it's not perfect. Do your best to use the towel and plastic to help shape the roll.&nbsp;5. Slice the roll and serve with spicy "mayo" (recipe below).&nbsp;

These healthy cucumber sushi rolls are an easy and refreshing way to enjoy sushi, without all the hassle!

Cucumber Sushi Rolls

Rice: Cook rice by instructions on package. When finished, do not stir rice and allow it to cool. This will make for a stickier to hold everything together.

Deseed: Cut each cucumber in half and remove seeds with either a small spoon or knife to create a long, hollow tube (see pictures).

Stuff: Spoon in a small amount of rice, then compress towards one side of the tube.&nbsp;Gently insert a slice of avocado and a few slices of pepper, then add more rice to fill gaps, compressing and adding more rice until packed full.

Slice: With a sharp knife, slice cucumber into 1/2 inch thick pieces. If you start to notice the filling is loose as you cut, stuff in more rice and peppers where needed.

Serve: Serve with soy sauce or spicy mayo*.&nbsp;

This is the EASIEST way to make sushi at home! All you need to make Temaki Sushi (aka &quot;hand-rolled&quot; sushi), is yakinori seaweed, sushi rice and your favourite fillings. Wrap them up into a roll or cone shape and you are done! 

Temaki Sushi - Easy Hand-Rolled Sushi

sushi rice (cooked)

tbsp sushi vinegar

nori sheets (per person, sliced in half)

tuna

mayonnaise

carrot (finely sliced)

Transfer cooked sushi rice to a wide, flat-bottomed pan or dish.

Pour the sushi vinegar over the cooked rice and mix gently with a flat rice paddle so as not to break any of the grains. Allow the rice to cool completely before serving.

Next, place your tuna in a small bowl and top with kewpie mayo. Mix until well combined, adding more mayo if needed until you have a smooth texture and delicious flavour.

Take up a sheet of nori (remember to slice or break it in half first) and place it in your hand or on a plate. Top with a scoop of rice in the top left corner in a rough, triangular shape.

Layer up with your chosen fillings such as the tuna/kewpie blend, carrot and cucumber, then fold up the bottom left corner and roll into a cone shape. If you&#039;re unsure how to do this, check out our video.

Baked Chipotle Salmon Sushi Cups

1. Preheat the oven to 400° F. Lightly oil a cupcake tin. 2. In a bowl, toss the salmon with the mayo, chipotle in adobo, and tamari. Season with pepper. 3. Arrange the nori sheets on a cutting board. Add 3 tablespoons of rice to each, then gently fold and fit into the prepared cupcake molds. If the rice is sticking to your fingers, just wet your hands. Lay 1 to 2 pieces of ginger over the rice, then spoon the salmon chunks evenly over the ginger. Drizzle the tops with olive oil. 4. Bake for 10-15 minutes, until the salmon is cooked to your liking. During the last minute of cooking, switch the oven broil. Broil 1-2 minutes, until crisping. Use a butter knife to lift the cups up, then serve as desired. I do avocado, spicy mayo, green onions, and sesame seeds. Place the tamari on the side for dipping. 5. To make the mayo, melt the cream cheese in the microwave for 20-25 seconds. Whisk in all remaining ingredients.
