Homemade Dill Pickle Tartar Sauce

Finely chop 4-5 baby kosher dill pickles (small to medium size). This should yield 1/2-3/4 cup chopped pickles.

Mince 1 Tbsp. fresh dill.

Combine a heaping 1/2 cup of mayo, 3 Tbsp. fresh lemon juice, 2 tsp. pickle juice, 1/4 tsp. garlic powder, 1/2 tsp. sugar, and a pinch of salt and pepper in a small bowl. Stir to completely combine with a fork or small whisk.&nbsp;

Add the chopped pickles and minced dill to the bowl. Fold the pickles and dill into the dressing and stir until completely combined. Serve immediately.

Easy Homemade Tartar Sauce Recipe

Try this gourmet take on a classic with homemade salmon fish fingers, finished with a good dollop of tangy tartar sauce

Salmon fish finger sandwich

tbsp plain flour

breadcrumbs (we used panko)

vegetable oil (optional)

Little Gem lettuce

sub rolls

mayonnaise

capers

spring onions

tarragon

Make the tartar sauce: mix together all the ingredients and season to taste. Set aside.

Put the flour, egg and breadcrumbs on separate plates. Season the flour, then dip the strips of salmon in it to coat. Dust off any excess, then dip in the egg and finally roll in the breadcrumbs. Heat a grill to high and grill the fish fingers for 3-4 mins each side, or add the oil to a non-stick frying pan and cook for 3-4 mins each side.

Arrange the Little Gem leaves in the split sub rolls, then stuff each with a couple of fish fingers, followed by a good dollop of the tartar sauce.

Japanese Chicken Nanban with Homemade Tartar Sauce

chicken breasts

all purpose flour

egg (whisked lightly)

vegetable oil

Salt and pepper (pinch)

soy sauce

tbsp rice wine vinegar

mirin (sub sugar)

shichimi togarashi

onion (small,

ginger

tbsp Kewpie mayonnaise

egg (chopped finely)

onion

tomato sauce / ketchup

lettuce (or cabbage, sliced finely)

cucumber (sliced diagonally)

cherry tomatoes

seaweed flakes / aonori (sprinkled over the nanban sauce)

sushi rice

Prepare any serving ingredients such as a salad or sushi rice for serving.

In a small bowl, mix together the soy sauce, rice wine vinegar and mirin.

In another small bowl, mix together the nanban sauce ingredients (Kewpie mayonnaise, boiled egg, chopped onion, tomato sauce and a pinch of salt and pepper). Store in the fridge until you’re ready to serve.

Coat chicken breasts in flour and add a sprinkle of salt and pepper.

Heat the vegetable oil in a large frying pan over high heat. Coat the floured chicken breasts in the egg next, then place into the hot pan and fry for 5-6 minutes on both sides (around 10-12 minutes total).

Once the chicken is cooked through, turn the heat down to medium-low and pour in the sweet and sour sauce mix along with the optional ½ onion pieces, ginger and shichimi togarashi for extra flavour. Allow the chicken to absorb the sauce for a minute, before flipping and coating the other side.

Remove the chicken from the pan, and cut into slices. Place the slices on a plate alongside a salad or on a bowl of rice and top with your nanban sauce. Add any extra garnishes such as aonori or extra shichimi togarashi and enjoy!
