Peel and grate the cooked &amp; cooled potato.

Add in the caramelized onion or onion powder (optional), sea salt and pepper and mix well.

Form into cylinder shapes and place on lined baking sheet.

Bake for 25-30 minutes, rotating every 8-10 minutes to brown each side.

Homemade tater tots with bacon are golden and crispy on the outside, yet soft and tender inside. They're packed with flavour and a total family favourite.

Homemade Tater Tots with Bacon

russet potatoes (1 lb.), peeled and cut in half

bacon,

tablespoon all purpose flour

cup mozzarella cheese, shredded

Italian seasoning

teaspoon salt

teaspoon ground black pepper

fresh parsley, finely chopped (for garnish)

Place potatoes in a large pot of cold water and bring to a boil over medium high heat. Reduce heat to low and let it simmer for 5-6 minutes until softened but not completely cooked. Drain well and let cool.

Meanwhile, sauté bacon (no cooking oil needed) in a large pot or 4 qt. Dutch oven over medium high heat until crisp, about 3-4 minutes. Save bacon fat in a bowl and chop bacon into small bits

Shred potatoes into thin strips with a box grater. Wash off excess potato starch under cold water and drain well. Squeeze out excess water with a cheesecloth or dish towel and place shredded potato into a large mixing bowl.

Add bacon bits, flour, mozzarella, garlic powder, Italian seasoning, salt and pepper. Mix until well combined. Shape the mixture into 1.5-inch tater tots, and place on a large half sheet baking pan lined with parchment paper.

Cook the tater tots:

Bake in the oven: Spray some cooking oil spray over the tater tots and bake in a 400F preheated oven for 25 minutes until golden brown, turning the tater tots halfway through baking. Turn the broiler on high for an additional 4-5 minutes to achieve extra crispy browned tater tots, if desired. Keep a close eye on the broiler as things can burn quickly.

Deep fry: Fill oil about 1-inch high in a shallow saucepan or cooking pot. Heat on medium heat until sizzling hot, about 3-4 minutes. Add tater tots and cook until golden brown and crispy on all sides, about 3-4 minutes.

Air fry: Add tots in a single layer in the air fryer basket (you may have to cook in multiple batches). Cook at 400F for 12-15 minutes until golden brown and crispy.

Serve immediately with ketchup or your favourite dipping sauce.

My kids devoured these! Everything is better with bacon. :)

Increase the oven temperature to 425 degrees F. Scrub and peel the potatoes. Place potatoes in a large pot and cover with 1 inch of cold water. Bring to a simmer over medium heat and cook for 6 minutes (the potatoes should be about halfway cooked). Drain and let cool for 15 minutes.

Grate

Once cooled, grate the potatoes into a large bowl.

Combine

Add the olive oil, flour, salt, garlic powder, and black pepper. Gently combine by hand so that the ingredients are as evenly distributed as possible.

Stir

Spoon

Generously coat two 24-cup mini muffin tins with nonstick spray, or make the tots in two batches. With a spoon, scoop about one heaping tablespoon of the potato mixture into each muffin cavity, then with your fingers, press each scoop flat.

Bake

Bake until the potatoes are brown at the edges, about 15 minutes, then remove from the oven and coat the tops with cooking spray. With a small offset spatula or table knife, flip each tot. Coat tops with nonstick spray once more, then return the pan to the oven and bake until browned, 12 to 15 additional minutes until golden brown. Let cool in the pan for 2 minutes, then serve with Greek yogurt or sour cream.

Divide the dough into 25 parts and create tots by grabbing a piece of dough and squeezing it gently in your hand. Use a tiny bit of water on your fingers to avoid the dough sticking to them. Repeat until you&#039;ve made all the tots. Meanwhile, preheat the air fryer to 400°F (200°C).

Place the tots in a bowl and pour over the oil. Mix gently to avoid breaking apart the tots.

Place tots in a single layer in the air fryer basket and air fry at 400°F (200°C) for 15 minutes. Remove the basket every 5 minutes and shake gently to turn them.

Serve immediately with your favorite dipping sauce!

Add peeled potatoes to a large stockpot or Dutch oven and cover with water, then bring to a boil. Boil for 6-7 minutes or until parboiled but still firm.

Allow to cool, then using a box shredder, shred potatoes.

Line a mesh sieve or a colander with a cheese cloth or thin dish towel, then place over a bowl. Salt potatoes then allow to sit for 10 minutes, pressing down onto potatoes halfway through and at the end to remove moisture.

Add potatoes to a clean mixing bowl, discard water.

Add flour and seasonings to shredded potatoes and mix well with your hands or a large wooden spoon.

Using your hands, squeeze potato mixture into a ball, then roll into a 4–6-inch tube shape. Repeat with remaining mixture. Using a sharp knife or kitchen scissors, cut tubes into 1 ½ inch long tater tot shape and place on baking sheet. Repeat with remaining potato mixture.

Fill a stockpot or Dutch oven with about 2 inches of oil, then heat to 370-375 degrees F.

Add tots to oil in batches of 7-8 for about 5 minutes or until golden brown, moving frequently to prevent sticking to the bottom of the pan.

Move to a paper towel lined plate or baking sheet.

Immediately salt the top, cool slightly, top with optional chopped parsley. then serve.

In a large bowl, combine the mashed potatoes, eggs, and flour. Season to taste with salt. (If your mashed potatoes weren’t seasoned, make sure to go generous on the salt.) Stir to combine.

Shape

Place the panko bread crumbs in a bowl. Drop about a tablespoon of the mixture into the crumbs, then roll to coat. Use your hands to shape into a tater tot shape. Place on a plate or baking sheet. Continue with the rest of the potatoes.

Heat

Heat about an inch of oil in a heavy duty skillet over medium heat. (I like to use my cast iron skillet.) Heat the oil to 350ºF.**

Place the tots in the hot oil in batches, cooking until they are golden brown, flipping often. Remove to a paper towel lined plate and immediately sprinkle with coarse salt.

Cook All

Continue until all of the tater tots have been cooked.
