Easy Fluffy Homemade Waffles

(260 grams) all purpose flour

(52 grams) sugar

tsp baking powder

tsp salt

(56 grams) unsalted Challenge butter

(480 milliliters) milk

eggs

tsp vanilla extract

2. In a medium sized bowl, whisk together the flour, sugar, baking powder and salt. Set aside.

3. In a small bowl, add the butter and few tablespoons of the milk. Melt the butter in the microwave and stir to combine it with the milk.

4. Add the butter mixture to the rest of the milk, then add the eggs and vanilla extract. Whisk well to combine.

5. Add the wet ingredients to the dry ingredients and gently whisk together to combine. Don&#8217;t over mix. A few lumps are fine.

6. Add waffle mix to your hot waffle iron and cook according to your waffles iron&#8217;s instructions.

I usually use a recipe that separates the eggs, beats egg whites stiff....that is a lot of work, IMO.

This recipe actually received more raves from the family (and in the end that is what really matters, right?).  It was so simple.  Only thing I did different was a -- doubled the recipe with 3 eggs instead of 4, and b--added a fair amount of cinnamon and bada bing bada bang!  It was magic!  Beautiful waffles that were raised and completely lovely --never mind they were delicious!

These are the best waffles I’ve ever made. Buttery and fluffy. I will make a double batch at once, break them into quarters and freeze with wax paper in between them. They are just as delicious pulled straight from the freezer and into the toaster.

These easy homemade Belgian waffles come together in no time at all and they result in crisp, beautifully bronzed waffles that are the perfect base for any of your favorite  toppings. The batter for these, quite literally, comes together in a few stirs.

When it comes to the milk, use whole milk (full-fat)— it works best here. If you’ve buttermilk, feel free to use that instead. I’d steer clear of the lemon / vinegar and milk substitute; it’s okay to use a powdered buttermilk substitute, however.

Oil is best for making these; butter just won’t cut it. If you’ve the time to make clarified butter, it works well here. For those of us that haven’t the time to do so for a batch of waffles, feel free to use any neutral-tasting oil. I used sunflower oil, but vegetable oil, canola, etc. would work well too. For a bit of flavor, coconut oil is a great option.

If you’re making a double batch, and want to keep your waffles warm, preheat the oven or toaster oven to 350ºF/ 180ºC and switch it off once it’s preheated. After that, make the waffles as per the directions and put them in the warm oven on a wire rack set on a rimmed baking sheet (avoid stacking them). I’ve also been known to put the cooked waffles straight onto the oven rack in the warm oven– whatever works best for you.

How To Make Mickey Mouse Waffles

Preheat waffle iron.

Place flour, sugar, baking powder and salt into a large mixing bowl, stir to combine.

Place egg whites into a medium mixing bowl, whisk continuously until stiff peaks form.

Place buttermilk, milk, melted butter, vanilla and egg yolks into a large bowl, whisk to combine then slowly stir into dry ingredients. Once combined, fold in egg whites until just combined.

Spoon batter into each Mickey shape filling close to top. Close lid and let cook until golden brown and crisp, about 1 1/2-2 minutes depending on the heat setting of your waffle iron. Remove hot waffles and place on cooling rack. Continue cooking waffles until all batter is used.

To prepare buttermilk syrup, place butter, sugar and buttermilk into a small saucepan. Stir until melted and comes to a low boil. Remove from heat and stir in baking soda and vanilla. Syrup will foam up. Let sit aside and stir occasionally until foam has gone down.

To serve, place waffles onto serving plates, top with fruit of choice and drizzle with warm buttermilk syrup.

I used 1/2 the amount of everything (However I used 2 eggs And only 3/4 cup of  rice milk instead of buttermilk and skim milk). I also added cinnamon to the batter. These were absolutely delicious ! I came across this page on Instagram.
The waffles were fluffy and I was able to make about 15 with 1/2 the amount of batter mix :D

It is my second time using this recipe.

I made both the waffles and syrup today. Both were absolutely delicious. My family loved them.
