Cardamom Honey Granola

oats ((1/2 pound))

whole, raw almonds ((2 ounce))

light brown (or unrefined sugar) ((2 ounces))

black cardamom

unsalted butter ((6 tablespoons / 3/4 stick))

mild-flavored honey ((2 ounces))

sea salt (yes, 1 teaspoon)

unsalted pistachios, lightly toasted ((2 ounces))

Position a rack in the center of the oven and preheat to 325º. Line a rimmed baking sheet with parchment paper. Have a second rimmed baking sheet and piece of parchment ready.

Combine the oats, almonds, sugar, and ground cardamom together in a large bowl. In a small saucepan, melt together the butter, honey and salt, stirring to dissolve the salt. Pour over the oat mixture, tossing to combine thoroughly.

Dump the mixture onto the lined baking sheet, and spread it into a thin sheet no thicker than an almond. Ideally, the edges will be slightly thicker than the center as they will bake faster. Lay the second piece of parchment over the granola, and place the second sheet pan on top, right-side up, making a little granola sandwich.

Slide the whole thing into the oven and bake for 20 minutes. Rotate and continue baking another 10 - 20 minutes, peeking under the parchment to make sure the edges aren't burning, until the granola is a rich golden brown. It will still be soft, but should crisp up as it cools. (If the granola is still soft after cooling, return it, uncovered, to a low oven (around 150º) and let it dry out for 20 minutes or so.)

Let the granola cool completely in the sheet pan sandwich, then break up into large sheets or clumps, add in the pistachios, and store in an airtight container for up to a month (or possibly more.)

Enjoy over fruit and yogurt for breakfast, alone for a crunchy snack, or over ice cream (saffron?) for a decadent dessert.

Preheat the oven to 180C / 350F / 160C fan forced. Line a baking tray with baking paper.

In a large bowl, mix together the wet ingredients: honey, oil, vanilla extract. Mix them really well.

Add the remaining ingredients (except the cranberries). Mix well - this is easiest with your hands.

Tip onto the prepared baking tray. Press it down into a thick layer.

Bake for 20 minutes, giving it a mix around and flattening out again halfway through.

Add the cranberries and stir it around, then press down again.

Bake a further 7-10 minutes until it is deep golden in colour.

Remove from oven and let it cool at room temperature until completely cooled.

Break into clusters and store in an airtight container for 4-6 weeks.

Healthy Homemade Granola

oats (old fashioned or quick oats

whole wheat flour flour

salt

melted coconut oil

cup honey

chopped nuts or seed

fruit

unsweetened coconut flakes

chocolate chips (add after it bakes and cools, and probably not more than a cup of them total)

Preheat oven to 225 degrees F. Line a big cookie sheet with parchment and grease lightly.

In a large bowl combine the oats, flour, salt, and cinnamon if using, stir to combine.

In a small bowl whisk together the coconut oil, honey, and vanilla.

Pour the wet ingredients over the dry ingredients. Mix everything together making sure there are no dry spots.

Add any additions you would like and stir to combine.

Spread granola onto the prepared cookie sheet in an even layer. The pan will be nice and full. Bake for 1 hour.

Remove from the oven and let the granola cool, it will be a deep golden color. 

Once the granola has cooled break it into smaller pieces as you see fit (we like some chunky and eat it like a cookie and some we break up small in our bowls for cold cereal). 

Store in an airtight container and keep it in the fridge if you aren&#8217;t going through it very quickly.

rolled oats (Old Fashioned oats)

almonds (chopped)

walnuts (chopped)

pecans (chopped)

vegetable oil

Pre-heat oven to 250℉. In a large bowl, mix together the rolled oats, almonds, walnuts, and pecans. Set aside.

In a small bowl, combine the remaining ingredients until well mixed. Then pour the wet ingredients over the dry ingredients and toss/mix until the dry ingredients are wet. Spread the mixture on a baking sheet and put in the oven.

Bake for 1 hour 15 minutes. Every 15 minutes, remove from the oven and stir the mixture to evenly bake.

Remove from the oven and allow to cool before transferring to a container.
