Over medium heat, place the dried black-eyed peas, 6 cups of water, salt and ham hock. Cook covered over medium heat until tender, about 2-2 1/2 hours.

Separately, in a large sauce pan, with a tight-fitting lid, add the rice, 2 cups of the the pea liquid, 2 cups of water, 2 cups of the cooked black-eyed peas, sautéed onions, bacon grease, crumbled bacon and red pepper flakes. Cook covered over medium-low heat until rice is done, about 15-20 minutes. If needed add more pea liquid if rice gets too dry.

Enjoy this flavorful and classic Southern black-eyed peas dish, seasoned with onions, garlic, peppers, and thyme. This recipe is so comforting on cold winter nights or all year long.

Southern Black-Eyed Peas (Vegan)

water or vegetable broth

onion

garlic

bell pepper

thyme

Cayenne pepper

sea salt

olive oil

Tofu pups hot dog or 1 teaspoon smoked paprika

Add peas to 6 cups of water in a large bowl and soak overnight. Drain peas and rinse. Place peas in a large pot with 6 cups of water and bring to boil on medium-high. Cover and reduce heat to a  simmer for about 45 minutes or until peas are tender. If they are drying out before being tender then add extra water or vegetable broth.

Meanwhile, heat a small skillet over medium, cut each hot dogs into coins and saute until golden brown. Set aside.

Stir in onion, garlic, bell pepper, thyme, cayenne, hot dog coins or smoked paprika and salt into the peas and continue to cook until sauce is thickened. Delicious served with cornbread and collards greens.

I first used your recipe for New Year's 2020, and in the past year, your recipe has become the foundation for a lot of bean-based soup/stew stuff that I make now. Sometimes we have it as is, sometimes throw in tomatoes and whatever veggies we have on hand. I've spiced it up and down with different kinds of flavors. My kids love it! Once, I even made it too spicy for them but they powered through it drinking a lot of water because they loved the flavor of the black eyed peas. Happiness and health in the new year!

Very tasty even though I had to use black eyed peas from a can since I couldn't find the dry ones. I combined it with the Southern Style Collard Greens and the Cajun Quinoa Pilaf and we had an excellent meal.

This dish is delicious!  I added thinly sliced collard greens right to the pot at the end and cooked till wilted.  Used 1/2 tsp of smoked salt and 1/4 tsp of plain sea salt.  After plating I added just a dash of homemade Worcestershire!  Perfect!  Thanks for sharing this wonderful dish.

That was good thanks. I add better than bouillon cude, and liquid smoke cause I only had regular paprika to add. I would have never guessed to put tyme in there thanks so much. I added it to my go to recipe book. Very delicious.

It's a fantastic recipe!  I'm not a fan of tofu so I took your advice and used chipotle sauce to smoke it up.  I also used a poblano pepper instead of a green pepper and I had some mini sweet peppers I needed to use.  I didn't add any chili pepper because I figured it would be spicy enough with the poblano and the chipotle peppers.  I love that this recipe is versatile and that it's very flavorful!

This was my first time ever cooking with Black Eyed Peas and your recipe is delicious! 
 I didn't have any cayenne pepper so I substituted with a can of jalapeno peppers.  I also chopped the onion and garlic in the blender and softened them with the bell peppers , jalapenos , thyme and smoked paprika in a skillet before adding to the black eyed peas. I'm looking forward to trying more of your recipes!

I've always been interested in southern style cooking (particularly liked the idea of black eyed peas, okra, grits, collards and cornbread). Having grown up on the Canadian prairies my mother's cooking style was a far cry from it. The only spices I recall being used in my childhood were very basic...salt, pepper and seasoning salt. My mother was a fantastic cook but the meals were shy on creativity and plants, and very heavy in the animal sourced fats and meat department. All that meant that by the time I was in my late 40's I had a wealth of health issues...heart, arthritis, overweight, psoriasis, etc, etc. I've started experimenting with all kinds of amazing plant based recipes and particularly LOVE beans, any and all. Really loved your Southern Black Eyed Peas recipe shared here. I followed your recipe to the T, opting for the smoked paprika you  as suggested as an option. I grew collards in my garden the past 3 years so I could have it on hand for my southern style meals since it's difficult to find consistently in the stores here. I'll be whipping up a batch to go along with this recipe. Thank you so much for helping me turn my health around with nutritious recipes like this one.

I sauteed the onion &amp; garlic &amp; added the spices.  There was too much water in the peas, so I dumped a bunch of it. (But mine had been soaking for a day and a half, due to me not getting around to cooking them, so they'd absorbed a lot of water already.)  After dumping the water, I added the onion/garlic/spices and a tablespoon of olive oil.  Soooo good!  Thank you Michelle!

Vegan Southern-Style Black-Eyed Peas

A lucky New Years black-eyed bean stew with smoked bacon.

Hoppin' John Soup (Black-eyed Bean Stew)

onions

bell pepper, deseeded and diced

celery

tbsp minced ginger

bacon

beans

chicken stock

bay leaves

Salt

black pepper

Place onion, pepper, celery, garlic, chilli and ginger into a food processor and chop roughly.

Heat oil in a large cooking pot and fry bacon till it is nice and crispy. Remove a quarter of the bacon and set aside for garnish.

Add the chopped vegetable mixture to the bacon and fry the mix for about 10 minutes, stirring occasionally.

Then add in the beans, stock, bay leaves and thyme, mix well, bring to the boil.

Then reduce heat and cover and simmer for between 60 -90 minutes depending on how soft you want your beans. You may need to add in more stock if it dries out.

Add in salt and black pepper to taste.

Serve this over rice and top with the rest of the bacon and chopped spring onions.

What would New Year&#39;s Day be without Hoppin&#39; John? It&#39;s a traditional dish served in the South on New Year’s Day, consisting of a black-eyed pea mixture served over rice. Hoppin’ John is often accompanied by cornbread and greens.

One Pot Southern Hoppin' John

black-eyed

(16-ounces) smoked sausage,

large onion, chopped (1 1/2 cups)

celery, chopped (3/4 cup)

bell pepper, seeded and chopped (1/2 cup)

garlic,

chicken broth

can Original Rotel Diced Tomatoes with Green Chilies

Kosher salt

chives

white rice

Cook sausage over medium heat in a large Dutch oven until done, about 30 minutes). Drain well on paper towels. Pour fat from the pan, and wipe the interior with a paper towel to remove any residual fat.

Return Dutch oven to medium heat; add onion, celery, and bell pepper. Cook for 5 minutes, stirring often to loosen fond on the bottom. Add minced garlic; cook for 30 seconds until fragrant. Add Rotel Tomatoes and Chilies; continue to stir to loosen any remaining fond on the bottom of the pan. Add black-eyed peas, cooked sausage, thyme, salt, pepper, and chicken broth.

Cover and simmer over medium-low heat for one hour and 30 minutes or until peas are tender and creamy. Adjust seasonings, and garnish with chopped chives or green onions. Serve over rice. Yield: 8 servings.

Savory Southern Black Eyed Peas

black-eyed peas (dry)

garlic (minced)

bay leaf

Rinse peas thoroughly under cool water (Discarding any weird-looking peas)

Place peas in a bowl and cover with water.

Soak for 6 hours or overnight.

Drain and rinse peas. Set aside.

In a large skillet over medium heat, cook bacon until crispy.

Drain bacon on paper towels, while leaving about 1-2 Tablespoons of bacon fat in a pan.

Chop bacon into small pieces. Set aside.

Add onions to the pan and cook until translucent.

Add in garlic and cook until fragrant.

In a large pot, add soaked peas, onions, garlic, and chicken broth.

Add a bay leaf and red pepper flakes.

Bring to a boil.

Reduce heat and simmer just until peas are tender about 20-30 minutes.

When peas have reached your desired tenderness, add smoked salt and black pepper to taste.

Add in the bacon or sprinkle the bacon on top when ready to serve to keep it crispy.

Garnish with parsley and a few dashes of hot sauce.

Serve hot.

Rinse peas, add to crock pot with enough water to cover all ingredients. Add chicken broth, ham, garlic, celery and onion, salt and pepper. (If you just want black-eyed peas, stop here with recipe and cook on high for 4 hrs. or low for 7 hrs. or until peas and celery are cooked).

The tomatoes and okra can be added half way into the cooking for a recipe more like Hoppin John.You could also make this in a pot on top of the stove. Just cut the cooking time until the black-eyed peas are tender.

Louisiana Hot Sauce

Heat 2 tablespoons oil in a large pot or Dutch oven over medium-high heat. Add the kielbasa and cook, turning once, until browned, 2 to 3 minutes; transfer to a plate.

Reduce heat to medium, add the onions and remaining tablespoon oil, and cook, covered, stirring occasionally, until tender, 6 to 8 minutes. Add the garlic and cook, stirring, for 2 minutes.

Return the kielbasa to the pot and add the soaked peas, ham hocks, and 3 cups water; bring to a boil. Reduce heat and simmer, covered, stirring occasionally, until the peas are tender, 1 to 1 1/2 hours.

Twenty-five minutes before the peas are done, cook the rice according to package directions.

Transfer the ham hocks to a plate. When cool enough to handle, shred the meat, discarding the skin and bones. Stir the meat back into the pot along with the scallions, jalapeño, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Serve over the rice with additional jalapeño and hot sauce, if desired.

This savory, smokey, a bit spicy, and hearty black-eyed pea stew will warm your soul any day of the year. Southern classic soul food is super easy and richly flavored with Creole Seasoning and herbs. Pair it with rice, collard greens, and cornbread for a traditional New Year&#39;s menu!

(450 grams) black-eyed peas

-5 thick slices bacon, (chopped)

smoked turkey

large onion, (diced (about 1½ cups))

celery, (diced (about ½ cup))

(2 grams) fresh thyme, (minced )

bay Leaves

(1.5-1.7l) chicken broth (or water)

(8 grams) Creole seasoning

salt and pepper

(200 grams) cooked rice (for serving)

green onions (for garnishing)

Rinse dried black-eyed pea beans and add them to a large pot. Cover with 3-4 inches of cold water and let soak for 2-3 hours.

In a large, heavy sauté pan, saute chopped bacon until brown and crispy, 5-6 minutes. Then add smoked ham and saute for 2-3 more minutes.

Toss in the onions, celery, garlic, thyme, and bay leaf and saute for 3-5 minutes until onions are wilted and aromatic.

Then pour in the chicken broth or water.

Drain the soaked beans, rinse them, and place them in the pot. Season them with Creole seasoning and salt to taste. Mix and bring to a boil.

Reduce heat to a simmer and cook, uncovered, for 45 minutes or more, stirring occasionally, until beans are tender and slightly thickened to the desired consistency.

Add more stock or water if the mixture gets too dry and thick. The texture of the beans should be slightly thick and creamy but not watery.

Remove the bay leaves.

Taste and adjust for seasonings with salt, pepper, and Creole seasoning if needed. Serve over cooked rice and garnish with green onions.
