Hot Chocolate Cookies are a chewy, chocolate cookie that is flavored with Hot Chocolate powder! The extra semi sweet chocolate chips and mini marshmallows create the whole hot cocoa experience right in the palm of your hand! These cookies are the perfect addition to your Christmas Cookie list!

Hot Chocolate Cookies

butter

sugar

brown sugar

eggs

vanilla

flour

chocolate mix

salt

tsp baking soda

miniature (dehydrated marshmallows (optional))

Preheat the oven to 350°.

Cream together the butter, both sugars, eggs and vanilla.

In a separate bowl, sift together the flour, hot chocolate mix, salt and baking soda.

Mix the dry ingredients with the creamed mixture. Mix well.

Fold the chocolate chips and mini marshmallows into the cookie dough.

Scoop onto a greased cookie sheet.

Bake at 350° for 9-11 minutes or until the tops are no longer glossy.

Cool on the pan. Store in an airtight container for up to 3 days.

Hot Cocoa Cookies

unsalted butter (1 stick)

oz semi-sweet chocolate

cocoa powder

baking powder

vanilla extract

marshmallows (approximately)

unsalted butter (1/2 stick, melted)

water

assorted sprinkles

In a medium saucepan (or in a microwave safe bowl, using 50% power), melt the butter and chocolate, stirring frequently. Once melted, set aside to cool slightly.

In a medium bowl, whisk together the flour, cocoa powder, baking powder and salt.

In the bowl of an electric mixer, beat the sugar, eggs and vanilla on low speed until well combined.

Add the cooled chocolate mixture and blend until just combined.

While mixing, add the flour mixture slowly and blend until just combined.

Scrape down the sides of the bowl, then cover the dough and refrigerate at least 1 hour.  The dough should be firm.  If making the dough a day ahead, let sit at room temperature for 30 minutes before shaping.

Preheat oven to 325*F. and line 2 baking sheets with parchment paper or a silpat type liner. Use a tablespoon (or a tablespoon sized cookie scoop) to scoop the dough, then roll the dough in your hands to create balls. Arrange the balls about 2 inches apart on your baking sheets, then flatten slightly.

Bake cookies about 12 minutes.

While the cookies bake, cut the large marshmallows in half (crosswise). When the cookies have baked, remove from oven and press one marshmallow half (cut side down) into the center of each cookie. Return the cookies to the oven and bake another 2-3 minutes. Allow the pan of cookies to cool a few minutes, then transfer cookies to cooling rack.

Make the cookies

Prepare cookie icing by combining all ingredients in a medium bowl and mixing together with a whisk. Place wire cooling rack (with cookies on it) over a baking sheet (to catch any excess icing). Spoon a small amount of icing onto the top of each marshmallow, and use the back of the spoon to spread it a bit. After icing just a couple cookies, top with sprinkles before the icing dries.

Allow icing to set up about 30 minutes before serving.

Fudgy Hot Chocolate Cookies with Marshmallow Filling

light brown sugar, packed

Xl egg

Xl egg yolk

chocolate extract

all-purpose flour

dutch processed cocoa powder

butter, unsalted and melted

mini chocolate chips

marshmallow bits

marshmallows

Place the fresh regular marshmallows in the freezer.

Preheat the oven to 350 F and line a cookie sheet with parchment paper.

Add the egg, egg yolk, and brown sugar to a bowl. Beat until light and creamy. Add in the chocolate extract and mix until combined.

In another bowl, add the flour, hot chocolate mix, dutch processed cocoa powder, salt, and baking powder. Whisk to combine.

Add the dry ingredients into the egg mixture and mix until almost fully incorporated. If desired, you can use a mixer fitted with the paddle attachment to combine. Or, just use a spatula. Add in the melted butter, and mix to incorporate.

Add the chocolate chips and marshmallow bits in and using a spatula, mix to evenly incorporate.

Grab the frozen marshmallows from the freezer and slice them in half (if not already sliced). Using a large cookie scoop, scoop up about 3 tablespoons of cookie dough.

With damp hands, place the cookie dough into your hand and make an indent in the middle pressing the dough outwards.

Place half of a frozen marshmallow into the cookie well/indent and then form the rest of the dough around the marshmallow, closing it up. Repeat until all of the dough is used up.

Add the dough balls to the prepared baking sheet leaving 2&#8243; apart. Bake for 11-14 minutes or until the cookie is set but still slightly soft. They will firm up while cooling.

Allow the cookies to rest on the tray for at least 10 minutes before transferring them to a cooling rack. Cool completely before storing in an air-tight container.

What an amazing cookie. The way you laid that marshmellow in the middle is brilliant. It reminds me of how did the get the caramel in the Cadbury chocolate bar! Lol! I can only imagine how decadent these are! Well done!

Hot cocoa but in cookie form make for the perfect holiday treat and chocolate fix. The chocolate cookie with gooey marshmallow in the middle is the ultimate indulgement.

butter (browned)

tbsp vanilla extract

chocolate packet

cornstarch

tbsp baking soda

10 oz bag of marshmallows

flaky sea salt (optional)

Preheat your oven to 350°F and line you’re baking sheet with parchment paper.

In a sauce pan over medium high heat, add your butter and let melt. Once it&#39;s melted keep it on the heat and let it cook for 5-10 minutes until it foams up and then turns brown. Let cool.

In a large bowl, add your butter and sugars, and whisk until combined. Add your eggs and vanillas and whisk again until fluffy and nearly foamy.

Next, add your cocoa powder, flour, corn starch, baking soda, salt, and hot chocolate packet, and fold until just combined. Add your chocolate chips.

Scoop out your cookie dough into 1 inch balls, flatten it out and add one marshmallow. Wrap your dough around the marshmallow. (It’s ok if a little bit of the marshmallow is peaking out.) Continue with the rest of your dough and marshmallows.

Place your cookie dough ball on your baking sheet a few inches apart and bake in the oven at 350°F for 8 to 10 minutes. Don’t overbake as your marshmallows could burn easily.

Remove from oven, top with flaky sea salt, let set, share, and enjoy!!

C unsalted butter

C nestle semi-sweet chocolate

C flour

C hershey cocoa powder

tsp baking powder

tsp salt

C brown sugar

In a double boiler, melt the butter and chocolate, stirring frequently. Once melted, set aside to cool

In a standing mixer, beat the sugar, eggs and vanilla on low speed until combined.

Add the cooled chocolate and mix until combined

Gradually add in the flour ingredients and mix until combined

Scoop the dough (Will be brownie like texture) into a bowl and cover with foil and place into the fridge for 4 hours.

Preheat oven to 325 degrees and line a cookie sheet with parchment paper.

Using a small ice cream scoop, scoop some batter into your hands and roll into a ball

Place cookies about 2 inches apart

Bake the cookies for about 10 minutes

While cookies are baking, cut the marshmallows in half

Once cookies are baked, place a marshmallow into the center of the cookies and lightly press down

Place cookies back into the oven for another 2-3 minutes

Place a wire rack over another cookie sheet to allow the icing to drip off

Once cookies are done baking let cool for a few minutes before transferring to a wire rack while you make the icing

For the cookies:

Combine all ingredients into a large mixing bowl and mix until combined

If the icing is still to thick, add about 3 tbsp of hot water to it to thin it out

Using a spoon, spoon some icing onto the marshmallow on the cookie

Repeat step number 3 onto a few more cookies

Sprinkle a little bit of sprinkles onto the cookies

Repeat the last two steps onto the remaining cookies. Remember to only put icing onto a few cookies at a time because the icing will dry fast.

Once all the cookies have icing and sprinkles ENJOY!

Vegan Hot Cocoa Cookies

flaxseed

vegan butter (softened to room temperature)

cane sugar

all purpose flour

chocolate bar or chocolate chips (divided)

Prep: Preheat the oven to 350F and grease or line a baking sheet with parchment paper. Combine the ground flax with the water in a small bowl and mix well; let sit for 5 minutes, to thicken.

Cream the Butter: Add the butter, brown sugar, and cane sugar to a large bowl and use a hand mixer (or bowl of a stand mixer) to cream them together until smooth, 2 to 3 minutes. Add the thickened flax seed and vanilla to the butter mixture. Mix again until combined.

Make the Dough: Add the flour to the mixing bowl and sift the cocoa powder on top to prevent clumps. Add in cornstarch, baking soda, and salt to the bowl and mix well with a spatula. Add 1/2 cup of the chopped chocolate to the bowl and fold into the dough.

Roll: Divide the dough into 12 equal balls, roughly 3 tablespoons each. Place each cookie dough ball 2” apart on the baking sheet, then top with the remaining 1/4 cup (~40 g) of chocolate, pressing it into the top of the ball slightly so it sticks. Do not flatten the cookies on the baking sheet as they will spread when they cook.

Bake: Bake for 7 minutes, until the cookies have spread and are puffy. Remove the cookies from the oven and quickly press in 3-4 mini marshmallows per cookie; it’s ok if they flatten slightly as you decorate. Return the cookies to the oven and bake for an additional 2 minutes, to set the marshmallows.

Cool: Remove the cookies from the oven and let sit on the baking sheet for 10 to 15 minutes, to allow them to set. Use a spatula to transfer the cookies to a wire rack and let them cool completely (or enjoy warm!)

Serve &amp; Store: Let the chocolate fully cool and solidify before storing. Store cookies in an airtight container at room temperature for up to 4 days, or in the freezer for up to one month.

Preheat the oven to 375F. Line two baking sheets with parchment paper.

In a medium bowl, whisk together the flour, cocoa mix, salt, baking powder, and baking soda.

In a large bowl or the bowl of a stand mixer with the paddle attachment, beat the butter and sugars together on medium speed until light and fluffy, about 3 minutes. Scoop the dough into balls using a 1 1/2 tablespoon spring-loaded scoop, and place on the baking sheets 2 inches apart.

Bake 1 sheet at a time for 9 minutes. Remove the cookies from the oven, and place a marshmallow half, cut side down, or 3 mini marshmallows in the center of each cookie. Return to the oven and continue baking for 2 minutes. Cool for a few minutes on the baking sheet and then transfer to a wire rack to cool completely.
