Skillet Huevos Rancheros - a healthy vegetarian version of one of our favorite Mexican-style breakfasts! Eggs are baked over flavorful beans &amp; crispy tortillas, then topped with avocado, fresh tomato and cilantro...a simple healthy vegetarian brunch recipe!

Skillet Huevos Rancheros

x 6 inch tortillas corn

eggs (1 per serving….you can add more if you want)

beans

onion- sliced or diced

garlic cloves-

tomatoes- diced

cumin

coriander

chipotle powder

smoked paprika

salt

cracked pepper

water

Olive oil

Avocado-sliced

cilantro

lime

cotija, queso fresco, feta or goat cheese (optional)

Hot Sauce

In a large pan, saute onion in a little olive oil until tender, about 5 minutes (at this point, if you are adding other veggies, do this now, cooking until tender). Add garlic, sauté for a minute or two. Add 1/2 of the diced tomatoes (saving half for garnish) and cooked rinsed beans, spices, salt, and 2 T water. Let simmer on med low for a few minutes, stirring occasionally.

Brush cast iron skillets ( or one large skillet) with olive oil, coating the edges too. Lay tortillas down and brush tops of tortillas with a little oil.

Divide bean mixture, making little indentations with the back of a spoon, for the eggs to rest, so they stay in place (if using large skillet, layer the tortillas so they come up the sides of the skillet a bit (you may need a couple extra), and spread all of the beans evenly over the tortillas, making indentations for the eggs).

Carefully break the eggs and place them in the indentations . Sprinkle eggs with salt and pepper, and if you want, crumbled cheese, and place in the hot oven.

Check after 10-12 minutes. Cook until egg whites are white and yolks are to your desired doneness. Serve with avocado, lime, cilantro, hot sauce, and fresh tomatoes.

I’m wondering if there’s a way to make it without the tortilla - do you think that you would just do the same thing?

This is probably the best thing I've ever cooked. I put zucchini in as I sauteed vegetables and green onion on top right before taking it out of the oven. Using a single Skillet works out just fine. Sour cream as a great addition after you're done.

I've made a variation of this countless times. It's always a crown pleaser!

I tried this recipe today for breakfast.  I used canned black beans and frozen corn and it was ready in less then 20 minutes.  Really good!  Will definitely make it again!

Drizzle olive oil (or use bacon grease) in a large skillet and add the diced potatoes. Cook for 10 minutes over medium heat, stirring just often enough to prevent burning.

extra virgin olive oil (plus more as needed)

½ medium yellow onion – diced

jalapeño pepper – seeded (cored and finely chopped)

Heat a frying pan over medium-high heat. Add the olive oil and heat until shimmering. Add the onions and jalapeño and season with a pinch of salt. Cook, stirring occasionally, until onions are soft and translucent, around 5 minutes. Add the garlic and cook, stirring, 60 seconds. Add the cumin and oregano and cook, stirring, 60 seconds.

Add the beans and cook, stirring to coat, until they start to soften, around 3 minutes. Add water and cook, stirring to lift any brown bits off the bottom of the pan, until they form a loose paste. Using the back of a spatula, gently mash half of the beans. Taste for seasoning and adjust with salt as desired. Cover with a lid to keep warm and set aside.

Authentic Huevos Rancheros Recipe

Roma tomatoes (plum tomatoes)

SALSA

Roughly chop the tomatoes, onion, garlic and serrano chile.

Add to your blender jar.

Add 1/2 teaspoon thyme to the blender jar.

Add 2 tablespoons of water.

Blend until smooth. About 1 minute.

Heat 1 tablespoon of cooking oil in a saucepan to hot.

Carefully, pour the contents of the blender into the saucepan with the hot oil. (Be careful, the liquid tends to spatter.)

Simmer for about 10 minutes until the salsa is deep red in color and has thickened slightly.

Salt to taste.

TORTILLAS

Pour 1/2 cup of cooking oil into a medium sized frying pan. The oil should be about 1/4 inch deep.

Heat the oil to medium hot.

Place the tortillas in the oil and fry for about 20 seconds on both sides. Fry them one at a time. Don&#039;t allow the tortilla to harden.

Drain the tortillas of excess oil on paper towles and set aside.

SUNNY SIDE UP EGGS

Use the same cooking oil that you used to fry the tortillas to cook the eggs. Maintain the oil medium hot.

Add two eggs to the hot oil and slightly tilt the pan to one side so that the eggs set closely together.

Cook until the white are just cooked through and the yolks are still runny.

SERVING

Place 2 tortillas on your serving plate and add a good sized spoonful of refried beans.

Gently place the eggs on the tortillas.

Spoon the warm spicy tomato salsa over the eggs.

Garnish the beans with 3 tortilla chips.

Serve immediately.

In a small saucepan, combine the tomatoes, onion, green chiles, 2 teaspoons cumin, and 1 teaspoon salt. Cover and cook over medium-low heat, stirring often, until the onions are softened and the tomatoes break down, 15 to 20 minutes. Remove from the heat.

Transfer the salsa to a blender. Remove the center lid insert and cover with a clean kitchen towel to allow steam to escape. Puree until smooth, about 20 seconds. Set the salsa aside.

Return ½ cup of the salsa to the saucepan. Add the beans, 1 tablespoon of the oil, ¼ teaspoon salt, and ¼ teaspoon cumin. Cook over medium-low heat, stirring often and lightly mashing with a fork, until heated through and well combined, about 4 minutes.

In a large skillet, heat 5 tablespoons of the oil over medium-high heat. Fry the tortillas, two at a time, turning occasionally, until crisp and the edges are lightly browned, 2 to 3 minutes. Transfer to a paper towel-lined plate to drain.

Reduce the heat to medium. Crack 2-4 of the eggs into the skillet, leaving space between each egg. Sprinkle with salt to taste. Fry until the whites are set and the yolks are still runny, 3 to 4 minutes. Transfer the eggs to a paper plate. And repeat with the remaining eggs.

Spread some of the salsa on each serving plate. Top with crispy tortillas, and spread about 2 tablespoons of beans over each one. Place an egg on top of the beans. Spoon the remaining salsa evenly over top. Garnish with desired toppings.
