Add all ingredients into a bowl. Mixed together. Marinade 500g of protein and leave overnight in the fridge.

Preheat oven to 200 C Melt butter in a bowl. 

Add the zest &amp;amp; juice of 1 lemon + 3 tbsps of Mingle&#39;s Hunny Mustard seasoning. 

Place the onions &amp;amp; potatoes at the bottom of cast iron dutch oven. Pour over olive oil &amp;amp; remaining seasoning. 

Rub the slightly solidified butter mixture over the inside and outside of the chicken + under the skin above the breast. 

Place on top of the potatoes in the dutch oven. Roast the chicken uncovered for 15 minutes. Then reduce the heat to 180 C and roast covered for 60 minutes. 

Allow the chicken to rest for at least 10 minutes. Serve chicken with your potatoes &amp;amp; onions which should have absorbed all the juices.
