Ice Cream Sandwich Cake Recipe

6-7 rectangle shaped ice cream sandwiches (depending on the size)

candy bar, chopped (I used Twix)

chocolate syrup, to drizzle

With just graham crackers and pudding, you can make the most delicious Ice Box Cake—no cooking or baking required. It&#039;s a deliciously easy dessert to make and share with the kids.

3-Ingredient Ice Box Cake

vanilla pudding vanilla

chocolate pudding from mix ((or 2 cups prepared chocolate pudding))

graham crackers ((full-size sheets; 2 standard packages))

If using pudding mix, make the pudding according to package directions.

Layer graham crackers in the bottom of a 9x11-inch (2-quart) baking dish. Break some up to fill in edges as needed.

Cover with 1/2 of the vanilla pudding, spreading to cover.

Top with another layer of graham crackers.

Cover with 1/2 of the chocolate pudding, spreading to cover.

Repeat the layers to finish, ending with chocolate pudding.

Top with crushed graham crackers.

Cover and refrigerate for at least 2 hours and up to overnight to soften the graham crackers. Serve cold.

This Reese's Peanut Butter Chocolate Icebox Cake is a peanut butter and chocolate lover's dream. It's a no bake dessert that's so easy to make!

Reese's Peanut Butter Chocolate Icebox Cake

oz cream cheese, room temperature (I use Challenge Cream Cheese)

(155 grams) sugar

tbsp milk

heavy whipping cream, cold

tsp vanilla extract

(144 grams) powdered sugar

peanut butter

tbsp natural unsweetened cocoa powder

milk

Two 15.25 oz boxes peanut butter Oreos

sugar

6-7 Mini Reeses, chopped

Prepare a 9-inch springform pan by lining the sides with parchment paper that sticks about an inch above the sides of the pan.

2. To make the mousse, beat the cream cheese and sugar for together in a large mixer bowl until smooth.

3. Add the milk and beat until smooth. Set cream cheese mixture aside and make whipped cream.

4. Whip heavy whipping cream on high with a mixer until it begins to thicken. Add vanilla extract and powdered sugar and continue to whip on high until stiff peaks form.

5. Carefully fold 1/3 of the whipped cream into the cream cheese mixture until combined. Add the remaining whipped cream and fold mixtures together until well combined.

6. Divide the mousse into two bowls. You’ll want twice the amount in one bowl as the other. You should have about 2 1/3 cups in one bowl and the rest in another.

. Add the peanut butter to the bowl with the larger amount of mousse and fold to combine.

. Add the cocoa to the smaller amount and fold to combine.

. Pour the milk for the cookie layers into a small bowl. Place a single layer of cookies into the bottom of the pan, dipping each into the milk before adding.

0. Top the cookies with half of the peanut butter mousse and spread into an even layer.

1. Add another layer of cookies on top of the peanut butter mixture, dipping each into the milk before adding.

2. Top the cookies with the chocolate mousse and spread into an even layer.

3. Add another layer of cookies on top of the chocolate mixture, dipping each into the milk before adding.

4. Top the cookies with the remaining peanut butter mousse and spread into an even layer.

5. Refrigerate cake until firm, 4-5 hours. Once firm, remove icebox cake from pan.

6. To make whipped cream for topping, whip heavy whipping cream on high until it begins to thicken. Add the powdered sugar and cocoa powder and continue to whip on high until stiff peaks form.

7. Pipe the whipped cream around the top edge of the cake, then drizzle with chocolate sauce. Finish off cake with chopped mini Reeses, if desired.

Pour the cream into the bowl of an electric stand mixer. Add the sugar, 6 tablespoons Kahlua, and vanilla extract. Using the whip attachment, whip until firm peaks form. Add 1/2 cup shredded coconut and mix to combine.

Pour the remaining 8 tablespoons of Kahlua into a shallow dish. Make a large 22-inch square piece of plastic wrap by pressing two sheets together in the middle. Then line a 9x5-inch bread loaf with the sheet of plastic wrap, so the edges hang over on all sides. Spread a thin 1/4- to 1/3-inch layer of whipped cream over the bottom of the pan.

Place 4 graham crackers in the dish of Kahlua. Flip so both sides are coated. Then trim the edge of each cracker so they can fit into the bottom of the pan side-by-side. Press until the crackers are even. Spread another 1/4 - 1/3 inch layer of whipped cream over the crackers.

Repeat dipping and layering the chocolate graham crackers, with even layers of cream in between, until you have 5 layers of graham crackers in the pan. Pull the plastic wrap up on the sides as needed. Spread the top of the pan with a level layer of cream. Wrap the plastic over the top and freeze for at least two hours.

Cover the remaining whipped cream and place in the refrigerator.&nbsp;Meanwhile, measure 1/2 cup shredded coconut into a skillet. Set over medium heat and lighting toss until the coconut is toasted. Watch carefully so it doesn't burn. Turn off the heat and cool.

Use a vegetable peeler to shave the dark chocolate for a garnish.

Once the icebox cake is frozen solid, unwrap the top and flip the cake onto a platter. Remove the plastic. Then spread the remaining whipped cream over the side and top to cover the creases. Sprinkle the top with toasted coconut and chocolate shavings. Then place back in the freezer until ready to serve. If making more than 12 hours ahead, cover with plastic once set, to avoid freezer burn.

Easy Strawberry Icebox Cake (only 3 ingredients!)

tub whipped topping (Large tub, 16 oz)

Graham Crackers

strawberries (sliced)

Spread a layer of whipped topping in the bottom of your baking dish, about 1/2" thick.

Add a layer of graham crackers, covering the whipped topping as much as possible. You may need to break the graham crackers into smaller pieces to fit.

Add another layer of whipped cream.

Lay a layer of sliced strawberries.

Repeat until the baking dish is full. For us, this was three rounds of the layering described above.

Cover and refrigerate until ready to serve, or at least 3-4 hours.
