This heavenly ice cream recipe is perfect for the warm months ahead.

Two-berry ice cream

1kg strawberries, hulled (to give 900 grams)

raspberries

thickened cream

(200 grams) pure icing sugar

Top a chocolate-dipped candy-filled ice cream cone with a scoop of plain or strawberry, chocolate, or mint chocolate chip Rice krispie treat scoops. You can even decorate your cones with melted chocolate and rainbow sprinkles.

salted butter

Jet-Puffed Marshmallows

Kellogg's Rice Krispies Cereal

ice cream cones ((cake cones with flat bottoms work best))

dark cocoa candy melts

candy (like M&M's, Skittles, or chocolate-covered raisins

Begin to melt the butter over low heat in a medium or large saucepan.

Add the marshmallows to the saucepan and stir.

Continue to stir often, until about 75% of the marshmallows are melted.

Remove the pan from the heat and continue to stir, smashing the marshmallows using a rubber spatula or the back of a wooden spoon, until the marshmallows completely melt and become smooth.

Stir in the Rice Krispies cereal and set aside to cool slightly.

Rice Krispie Treat &quot;Ice Cream Scoops&quot;

Hold one ice cream cone in your hand, turn it upside down, and dip the top edge into melted dark cocoa candy melts.

Lift the cone out of the chocolate and shake it until all the excess chocolate drips off.

Turn the cone right side up and set on the counter.

Immediately fill the cone with candy.

Spray an ice cream scoop with non-stick spray or grease it with butter.

Scoop out a nice round mound of the rice krispie treat mixture and place it on top of the chocolate-dipped candy-filled ice cream cone.

Pop the ice cream cone into the freezer for 3-5 minutes just until the chocolate candy melts harden.

Repeat dipping, filling and topping one cone at a time until all 16 are created.

These treats are adorable. I'm pinning so I can make them with my kids this summer.

I just had to tell you that my girls loved these treats. I made all the flavors and they couldn't decide which they liked the best. They are all delicious. We are bringing the little ice cream cones to a party this weekend. I'm sure they will be the hit of the party. They are so cute and so yummy.

These treats were so much fun to make. I sold them at a bake sale and they were the first desserts to sell.

Lemon sorbet

215.00 gm caster sugar

20.00 ml finely grated lemon rind

lemon juice

eggwhites, lightly whisked

Step 1

Combine sugar, 2 cups warm water and lemon rind in a saucepan over medium heat. Cook, stirring, for 5 minutes or until sugar is dissolved. Simmer, without stirring, for 10 minutes or until mixture thickens slightly. Remove from heat. Cool completely.

Step 2

Strain sugar mixture over a bowl. Stir in lemon juice. Pour into a 3cm-deep, 20cm x 30cm (base) lamington pan. Cover and freeze for 1 to 2 hours or until almost firm.

Step 3

Transfer fruit mixture to a food processor. Add eggwhites. Process until smooth but not melted. Pour mixture into a 6cm-deep, 11.5cm x 21.5cm (base) loaf pan. Cover and freeze for 3 hours or until firm. Serve scoops of sorbet in waffle cones.
