1- 1.5 lb Imitation Crab

Refrigerate 2-3 hours or overnight to blend flavors.

Kani Salad is loaded with thin strips of crab, julienned vegetables, and a creamy mayo dressing (which can be made spicy for a Spicy Kani Salad).

crab sticks (about 8 ounces), shredded into thin strips

Persian cucumbers, shredded

carrot,

corn,

lemon juice,

sesame oil

sriracha

black sesame seeds

salt

black pepper

Prepare the salad ingredients by shredding the crab sticks using a box grater. Use a knife to julienne the cucumbers and carrots into thin strips, or use a grater to shred then. Transfer to a serving bowl and add the corn.

In a medium mixing bowl, make the dressing by stirring together mayonnaise, lemon juice, sesame oil, hot sauce, sesame seeds, salt, and pepper until smooth.

Add the dressing to the salad and toss well to coat evenly. Serve immediately.

In a large bowl combine the imitation crab meat, red onion, celery, and chives.

In a separate mixing bowl mix together the mayo, sour cream, fresh lemon juice, dijon mustard, Old Bay seasoning, salt, and black pepper.

Pour the creamy mayo dressing over the crab and gently mix to combine. Season with additional salt and black pepper, to taste.

Serve immediately or transfer to an airtight container and keep stored in the refrigerator for up to 2 days.

Toss together the imitation crab, celery, and red onion in a large mixing bowl.

If your crab sticks are frozen, defrost them in the fridge for a few hours until they are pliable before using them.

Toast the sesame seeds it in a dry pan for 1-2 minutes. Make sure you watch it carefully and keep moving the sesame seeds so it doesn&#39;t burn. Set it aside and let it cool

If your crab sticks come individually wrapped, remove the plastic wrap and hand shred the crab into thin slices. If you are using imitation crab chunks, use a knife and roughly chop them into big chunks. Place it into a large mixing bowl.

Finely slice the green onions and place them into the bowl with the crab.

(Optional) If you are using Japanese fish roe/eggs, add them into the bowl with the crab meat.

Finely slice the cucumber into matchsticks. If you are mixing it with the crab salad, put it in the bowl with the crab. If you are placing the crab salad on top of the cucumber, set aside the cucumber.

In a small bowl, mix all the kani salad dressing ingredients together (including the toasted sesame seeds) and pour it into the bowl with the crab meat.

Mix everything together and garnish with toasted sesame seeds and green onions

Serve it on top of the cucumber slices and enjoy!

Great recipe - very detailed too with alternative ingredients (I liked that as I didn't have it all, but still was delicious!). I like that you have a way to multiply up the ingredients too - good time saver.

This imitation crab salad with sesame soy dressing is packed with imitation crab, glass noodles, lettuce, and fresh herbs!

Imitation Crab Salad with Sesame Soy Dressing

lb imitation crab sticks

oz lettuce mix (preferably romaine mix)

cilantro (or other herbs

Persian cucumbers (or 1 house cucumber)

tbsp sesame oil

tbsp brown sugar (or white sugar)

rice vinegar

sesame seeds (optional)

Prepare imitation crab. If you&#39;re using refrigerated imitation crab, simply remove imitation from plastic packaging. Most imitation crab will have an additional wrapping on each crab stick. If imitation crab sticks are individually wrapped, remove plastic covering on each. Refrigerated imitation crab sticks are ready to eat as is. However, if you have frozen imitation crab, defrost in the fridge overnight. Alternatively, you can also soak entire package in warm water for 15 to 30 minutes or until defrosted.

Once imitation crab has been defrosted and removed from all packaging, cut into bite sized pieces. Set aside.

Prepare glass noodles according to package instructions. Most glass noodles can be prepared by simply soaking in hot water for 10-15 minutes. Once noodles are soft, drain excess water. Use food scissors to cut glass noodles into bite sized pieces. Set aside.

Wash lettuce, cucumbers, and cilantro or other herbs you are using. Cut lettuce and cucumbers into bite sized pieces. Finely chop herbs.

In bowl mix soy sauce, sesame oil, brown sugar, rice vinegar, and lemon juice. Mix until all sugar as dissolved. Add in toasted sesame seeds and mix.

In a large salad bowl, add lettuce, glass noodles, cucumbers, imitation crab sticks, and herbs. Enjoy salad immediately or store in a tight container in fridge for up to 5 days. Mix in sesame soy dressing when ready to serve. Store salad dressing in fridge for up to a week and mix well before serving.

Just made this and had it on some crackers and it was so good! It’s not super bold in flavor but very clean and fresh. The dill adds a nice touch. Next time I might throw in a pinch of Old Bay or paprika just my preference but it was good as is. Thanks for the recipe.
