lean beef mince

(1/2 cup) fresh breadcrumbs, from day-old bread

(1/2 cup) finely grated carrot

(1/2 cup) finely chopped baby spinach leaves

brown onion, grated

tbsp milk

tbsp finely grated parmesan

white pepper

olive oil

boiled chickpeas

peanuts (roasted)

tsp sea salt

tsp Paprika/red chilli powder

tsp herbs

First dry all the chickpeas with kitchen towel.Roast peanut in microwave for a min then remove from it's skin.

Add all ingredients in a bowl and toss them well.

Spread in a baking tray and bake for 25 -30 mins in microwave .convection mode.

Spinach Dip in Mini Pumpernickel Bowls

pumpernickel dinner rolls

chives, chopped

vegetables peas

Using a small serrated knife, slice tops off rolls and hollow out gently. Reserve tops for serving. Place bread bowls on rimmed baking pan and divide dip between bowls (about 2 tablespoons in each bowl).

Bake 8 &#8211; 10 minutes or until dip is warmed through. Sprinkle bowls with chives and serve with vegetables and reserved roll tops.
