My Veggie Beef Soup is not only hearty and delicious but also incredibly easy to make and low-calorie.

Veggie Beef Soup

1.5 lbs Beef Milanesa

beef broth ((8 cups total))

oz bag of frozen mixed vegetables

olive oil

TBSP minced garlic

Salt & pepper

TBSP Italian Seasoning

oregano

Heat olive oil in a Dutch oven or large pot over medium heat.

Cut beef into small cubes.

Add the beef to the pot and season with salt & pepper.  Add garlic.

Cook until no longer pink.  Drain.

Add the beef broth, Italian seasoning, oregano, and frozen vegetables.

Turn the heat to medium-high and bring to a low boil.

Reduce heat to low, cover, and simmer for at least 20 minutes.

Veggie Beef Soup is a favorite in our house.  It’s easy to make, warm, filling, and healthy.  I ordered the thin steak, 2 cartons of low-sodium beef broth and 1 bag of the Pictsweet vegetables for soup. My Slow Cooker Creamy Tuscan Chicken Pasta is not only incredibly flavorful but also simple to prepare, making it perfect for busy weeknights or lazy weekends.

Slow Cooker Creamy Tuscan Chicken Pasta

chicken breast

Italian seasoning

onion powder

¼ tsp black pepper

sun-dried

chicken broth

parmesan cheese

oz block of cream cheese

baby spinach (chopped)

4.5 oz jar of sliced mushrooms (drained)

Protein pasta (reserve pasta water)

Parmesan cheese

Parsley

Lemon

Add all ingredients except spinach and mushrooms to a slow cooker and cook on HIGH for 3.5 hours or LOW for 5-6 hours.

30 minutes before serving, prepare pasta and reserve 1 cup of pasta water.

While the pasta is cooking, stir the chicken.

Chicken should break apart easily.

Stir in baby spinach and mushrooms.

If the sauce is thick you can use up to 1 cup of reserved pasta water to achieve your desired consistency.

Serve your Creamy Tuscan Chicken over the pasta and top with Parmesan cheese, parsley, and a squeeze of fresh lemon juice.

I made this last night and I have to say I can't wait to make it again!!  This meal is delicious!!  I used chicken thighs instead of breasts because I had them on hand and for the other tweak I did, I used the oil from the jar of sun-dried tomatoes because of all the flavor in the oil.  This is going to be a meal I make for friends and family, again, it is so good!!  Thank you for sharing this recipe!!
