Instant Pot Steamed Broccoli is a perfect way of cooking crunchy tender broccoli in just few minutes.

Wash and chop the broccoli into florets.Spread the florets in layer on the steamer basket.

Add water into the instant pot insert.Place the trivet and then the steamer basket in the instant pot insert.

Close the lid on the pot, and turn pressure valve to SEALING position.Set the pot to MANUAL/PRESSURE COOK (High Pressure).Set timer to 0 minute for crunchier tender broccoli  ORSet timer to 1 minute for softer tender broccoli

When the instant pot beeps, Quick Release the pressure manually.Open the lid.

Sprinkle some salt and black pepper and serve.

Instant Pot Method:

A creamy risotto with sweet delicata squash, grana padano cheese, and fresh mint … made so much easier by cooking it in the instant pot.

Risotto with Delicata Squash (Instant Pot)

salted butter

cipollini onion (chopped)

chicken bone broth

arborio rice

garlic (minced)

grana padano cheese (grated (can also use parmesan))

mint leaves (chopped)

Prep your ingredients to make it easier to put this meal together.

Dice the onions into small pieces, these will melt away, so don’t stress too much over them. Peel the squash, slice in half lengthwise, and scoop out the seeds with a spoon. Chop the squash into bite-sized pieces. I cut the halves into 1/2″ slices and then cut those down to size.&nbsp;

Also grate the cheese. I used a fairly large grater, this will melt in so it doesn’t need to be grated fine.&nbsp;Note: grana padano is not the easiest cheese to find, feel free to swap for your favorite hard italian cheese like asiago, or parmesan.

Prep

Now you are ready to start cooking! Turn your pot to sauté. In the inner pot, add the butter and chopped onions. Stirring occasionally, let the onions cook till they are softened and translucent, but not browned.Note: I have two inner pots, the stainless steel one it came with, and this ceramic coated non-stick one. I find this pot works better for rice, keeping it from sticking to the bottom and burning. If you don’t have one, no worries, just use what you hav

Add the rice and minced garlic and stir to coat. Let that cook for another minute, stirring often.

Add one cup of the broth and stir. Let simmer for 3-4 minutes, rice will start to absorb the liquid.

Add the squash, remaining 2 cups of broth, cheese, mint, and seasonings. Stir to mix. It will be soupy at this point, that’s what we want. Turn off the sauté mode.

Put the lid on the pot, close the steam vent, and set the pot to cook on high pressure for 10 minutes. At the end of that time, do a natural pressure release for 10 minutes, then release the remaining pressure manually. (If you get a burn warning, open the lid and give the rice a stir, then close it up and continue.)

The rice may look wet when you open the lid, but give it a stir, gently scraping the bottom of the pot with a silicone spatula. Give it a taste, checking to see that the rice is cooked through. (If it’s still under-cooked you can close it up and let it sit to cook on warm for another few minutes.) Adjust seasoning as needed. I tend to add less salt at the beginning and a bit more at the end as needed.

Transfer to a serving platter or small bowls, and top with chopped fresh mint. Risotto will be creamy, a bit cheesy, with some sweetness from the squash. And with so much less work than traditionally cooked risotto!

This simple braised BBQ beef short ribs recipe bakes a long time in the oven but it is so easy and delicious.

Easy Oven Baked Beef Short Ribs

Salt and pepper the beef.  Lay the beef (bone side down) in a baking dish, snuggle the ribs close together and cover tightly with aluminum foil. I use 2 sheets of foil.

Cook ~ 3 1/2 - 4 hours or until bone starts to separate from the meat and meat is tender.

Uncover, drain off any liquid or excess fat (you don't want to start a fire if your broiler runs uber hot.  Ribs are fatty and the grease could catch on fire so don't skip this step) OR place ribs on an aluminum lined baking sheet if you don't want to drain the hot baking dish (see video).

Remove any excess fat from the top of the ribs with a butter knife (see video).

Baste on bbq sauce (my favorite bbq sauce is Sweet Baby Ray's).  Broil on low for 2-4 minutes (watching carefully so it doesn't burn) or until caramelized.

Serve with potato salad or corn on the cob.  Happy Eating!  Beckie

Super Alkaline Soup

bok choy

baby carrots, peeled

mixed greens, kale, spinach, collard greens

onion, chopped

garlic,

baby broccoli

butternut squash,

red or orange peppers, chopped

tbsp smoked paprika

tsp tumeric

tsp sea salt

tsp black pepper

pomegranate seeds

Add all prepared vegetables to Instant Pot.* (Stove top instructions below.) I like my vegetable soup chunky, so my vegetables are not chopped small.&nbsp; If you prefer, you can chop your vegetables.

Add spices and lemon juice.&nbsp; Add vegetable broth, making sure that your liquid does not go over the maximum line in the inner pot.

Set Instant Pot for 8 minutes to pressure cook.&nbsp; After cooking is complete, let pressure release naturally NR for 10 minutes.&nbsp; Release pressure and remove lid when valve goes down.

Transfer soup to large serving bowl and dish out into individual serving bowls.&nbsp; Garnish with parsley and pomegranate seeds.

Greek Turkey Meatballs & Tzatziki

lb ground turkey (93% lean)

½ onion, grated ((or chop in food processor))

¼ cup parsley, chopped

bread crumbs

Maldon sea salt flakes

parmesan, grated

½ tsp dried thyme

oregano

⅛ tsp black pepper

⅛ tsp ground red pepper

¼ tsp red pepper flakes (optional

tbsp grape seed, olive oil, or canola oil

tzatziki sauce

Add ground turkey, egg, onion, garlic, parsley, bread crumbs, sea salt, Parmesan, dried thyme, oregano, black pepper, ground red pepper and red pepper flakes* (optional) to a bowl. Mix by hand or using your stand mixer until ingredients are well incorporated.

Measure meatballs in heaping tablespoons or with a 1 ounce cookie scoop you should get about 25 meatballs. Wet hands with a little water or oil to help keep mixture from sticking as you form meatballs.

Turn on sauté and set it to 6 or 7 minutes (giving it a couple to preheat) after about a minute add oil to the pot.

Begin adding meatballs one by one until the bottom is covered leaving a little space to turn them. Lightly brown both sides, about 2 minutes (don&#039;t worry about fully cooking the meatball).

Add 1 cup of broth or water and switch instant pot settings to pressure cook on high for 3 minutes and seal lid (make sure pressure valve is also shut).

Once pressure cooking is done let it do a natural pressure release for 3 minutes. After 3 minutes quick release remaining pressure and open lid.

Serve meatballs with tzatziki sauce over rice with pita bread- Enjoy!

COOKING WITH INSTANT POT:

Preheat cast iron skillet over medium/high heat after a minute add oil to the skillet.

Begin adding meatballs one by one until the bottom is covered leaving a little space to turn them. Turn heat to medium to leave enough time for meatball to cook through without edges burning. Brown both sides, about 4 minutes per side around 8-10 minutes total.

Once meatballs have browned I like to add a splash of broth (chicken or beef both work) to deglaze the skillet and add a little extra flavor!

Instant Pot Chicken Udon Soup with Crispies

Make chicken soup via Instant Pot. Click here for the recipe. Save the chicken skin.

Make chicken skin marinade. Work the marinade into the chicken skin with hands. Wrap and refrigerate at least 30 min.

Bring water to boil in a pot. Add the frozen Udon noodles and cook until just soft. Can lesson cooking time if more chewyness is desired. Rince in cold water and set aside.

Heat a cup of oil in a wok and prepare for frying. During the waiting time, coat the chicken skin with frying powder, front and back. Shake any excess powder. Fry until golden brown in low heat, flipping often. Set aside on cooling rack.

In a soup bowl, add the Udon noodles, chicken meat on top. Ladle the hot chicken stock from the Instant Pot. Pour a generous amount of chicken broth then garnish with sesame seeds and scallions. Lastly, stack chicken crispies on top and serve immediately.

In a large pot, sauté diced zucchini, diced mushrooms, chopped onion, and minced garlic in olive oil (if using) until softened.

Saute Vegetables:

Create Tomato Base:

Stir in garlic powder, smoked paprika, nutritional yeast, and Italian Seasoning for additional flavor.

In a blender, combine the extra firm tofu, slivered almonds, sea salt, and nutritional yeast and blend until a smooth ricotta cheese texture has been achieved.

Prepare Tofu Ricotta:
