Irish Soda Bread Recipe

buttermilk (cold)

flour ((480 grams))

sugar

baking soda ((9 grams))

kosher salt ((9 grams))

butter (cold, diced (57 grams))

raisins

Preheat oven to 425F.

Whisk the buttermilk and egg together then set aside.

Combine the flour, sugar, baking soda and salt in a large bowl then whisk together. If you’re adding raisins or currants then mix those in now.

Add the butter to the flour mixture then work into small pea sized pieces with your hands or a pastry cutter.

Create a well in the middle of the flour mixture and pour the buttermilk mixture in. Use a spatula to fold the mixture together until all the flour has been worked in.

Transfer the dough to your lightly floured surface, form into a loaf and place onto a parchment lined baking sheet or seasoned cast iron pan.

Score the top with an “X” and bake for 25-30 minutes or until the top is golden brown and the center is set. Tent the bread with foil if the top is getting too much color.

Allow to cool then serve.

Irish soda bread uses simple ingredients to create a flaky bread with a crispy crust.  Many recipes call for raisins, but I made it with chocolate chips so my kids would love it too.

Cups all purpose flour

baking soda

baking powder

salt

Tablespoon sugar

butter

Cup chocolate chips

buttermilk

Mix together first flour, baking soda, baking powder, salt and sugar.  Cut in butter with a pastry blender until resembles corn meal.

Stir in chocolate chips.  Add buttermilk and until it forms a dough.  Knead 8-10 times on a floured surface.

Roll into ball and then flatten until approximately 7 inches in diameter.  Place in greased pie plate.  Cut across the top in cross pattern.  Brush with buttermilk.

Bake in preheated 400˚ F oven for 15 minutes and then 375˚ F for additional 25-30 minutes or until fully baked.  Cool on rack.  Eat warm.
