Slow Cooker Italian Chicken Soup

chicken breasts (cubed)

onion

zucchini (diced)

red pepper

beans

oz diced tomatoes (low sodium)

kale

chicken broth (low sodium)

basil

oregano

garlic powder

salt

chili flakes (or black pepper)

parsley (optional garnish)

Place all ingredients except for the fresh parsley in a slow cooker and heat on Low for 8 hours or High for 4 hours.

Garnish with fresh parsley to serve.

Italian Chicken Soup

½ Box (8 Oz Ditalini Pasta)

Chicken (Cubed)

Chicken Broth

tbsp Canola Oil

½ White Onion (Peeled And Cubed)

Orange Pepper (Deveined,Seeded And Diced)

Whole Jalapeno (Seeded And Diced)

Stalks Celery (Diced)

Petite Cut Tomatoes)

Water

Heavy Cream

tsp Dry Oregano

tsp Dry Basil

Cook pasta( al dente) following the directions on the back of the box.

Rinse the cooked pasta with cold water.  Set aside

Heat oil to medium-high. Add onions, celery, green pepper, and jalapeno. Sauté until tender.

Add the cubed chicken, chicken broth, water, tomatoes with juice, and the sautéed vegetables. Stir in the herbs.

Taste test. Add salt and pepper to taste. Increase heat to a boil.

Reduce heat and cook on simmer for 20 minutes. Stir in cooked pasta. Add and stir in heavy cream.

Ladle soup in soup bowls. Serve with hot rolls.

Pastina Soup

pastina pasta ((210 grams))

chicken broth

chicken carcass (skin and meat removed)

carrot (, whole or cut in half)

celery (,

onion (, cut in half)

garlic

bay leaf

rosemary

Remove as much cooked chicken meat and skin from the carcass as possible. Add the chicken carcass and any other chicken bones to a large, deep pot and add the vegetables and herbs (you don’t need to peel any vegetables.

Fill the pot with water until the chicken is covered then cover and bring to a boil.

Once boiling uncover and reduce to a simmer. Skim off any scum that comes to the surface.

Simmer the stock (uncovered for 2-3 hours or longer (the longer you leave it the more concentrated the flavour will be but the less stock you’ll have as it will keep reducing.

Pass through a sieve or colander so you’re left with the homemade stock and discard the bones, vegetables and herbs.

To Make Homemade Chicken Broth

Bring 6 cups of chicken broth to a boil.

Add the pastina pasta and boil for 3-4 minutes or until al dente. Ladle into bowls and serve with crusty bread or parmesan croutons.

chicken breasts (about 3-4 chicken breasts)

tomato sauce

Ditalini pasta (or any small pasta)

parmesan cheese

Heat the olive oil over medium heat in a 5 1/2 quart Dutch oven or large pot. Add the carrot, celery, and onion and saute until the onion is translucent about 5 minutes. Please note that the carrots and celery will continue to cook in the broth.

Stir in the garlic and Italian seasoning; cook until fragrant, about 3 minutes.

Add the chicken breast with veggies, and then pour the chicken broth and tomato sauce into the pot. Give the soup ingredients a couple of stirs.

Bring the soup to a boil, then reduce to a simmer and cook for 10-15 minutes or until the chicken is cooked. Carefully remove the chicken and set it aside until it&#39;s cool enough to handle, about 3-5 minutes.

Shred or chop the chicken into small bite-sized pieces.

Add the chicken back into the soup and cook for another 20 minutes or until the vegetables are soft—taste for salt and pepper.

Prepare the pasta separately according to the package instructions. 

Place about 1/4 cup of the cooked pasta into a bowl and then ladle the soup over the top. Grate fresh parmesan cheese over the top.

I could not believe how much flavor this soup has, with so little ingredients!  We loved it, and highly recommend this to anyone.  Especially those trying to lose weight or doin WW like me.
