One Skillet Butternut Squash Gnocchi with Italian Sausage

unsalted butter (divided)

sausage

butternut squash

yellow onion (diced, about 1 cup)

garlic (minced)

salt

black pepper

sage

nutmeg

chicken broth

potato gnocchi*

spinach

Parmesan

red pepper flakes (optional)

Melt

Melt 1 tablespoon of butter in a very large skillet with a tight-fitting lid over medium high. Once the butter is melted, add the sausage. Cook, breaking apart the meat, until it is browned and cooked through, about 5 minutes. Transfer the sausage to a plate.

Cook

Reduce the skillet heat to medium. Add the remaining 4 tablespoons butter. Once melted, add the squash and onion. Cook, stirring occasionally, until the squash is tender and golden, about 8 to 10 minutes. Add the garlic, salt, pepper, rubbed sage (if using fresh sage, wait to add it until the end), and nutmeg. Continue cooking until the garlic is softened and fragrant, about 1 additional minute.

Add 1 1/2 cups chicken broth and gnocchi to the skillet. Increase the heat to medium high. Stir to coat the gnocchi, then cover the pan. Cook, covered, until the gnocchi is just tender, about 5 minutes. Uncover and stir in the sausage. Stir in the spinach a few handfuls at a time, allowing it to wilt. If you’d like a looser sauce, add a bit more chicken broth. Sprinkle with Parmesan and season to taste with additional salt, pepper, and red pepper flakes. Enjoy hot.

Butternut Squash Sausage Gnocchi Video

This Creamy Gnocchi Recipe is an easy one skillet recipe loaded with fresh gnocchi, sweet Italian Sausage, sundried tomatoes, fresh baby spinach, and garlic all in a rich creamy Parmesan Cheese Sauce.  It is the ultimate comfort food meal and guaranteed to please.

Creamy Gnocchi Recipe

lb. Italian sausage

onion

garlic

parsley

oregano

rosemary

thyme leaves

marjoram

red pepper

butter

vegetable oil

lb fresh gnocchi

sundried tomatoes (drained)

heavy cream

baby spinach

Parmesan cheese

Salt and pepper

In a large skillet over medium heat brown the sausage.  When the sausage is about halfway browned add the onion; cook until soft.  Reduce heat to low. Add the garlic, parsley, oregano, rosemary, thyme, marjoram and crushed red pepper.  Cook for 1 minute stirring constantly.  Remove from the skillet and plate. Drain any excess grease and carefully wipe out the skillet.

Melt butter and heat oil in same skillet over medium heat.  Add gnocchi and sundried tomatoes cooking until the gnocchi are lightly browned; stirring several times.

Add the chicken broth and heavy cream simmering until slightly thickened; 5-6 minutes. Add the spinach and cook just until wilted.  Reduce the heat and add the Parmesan cheese stirring gently until it melts.

Add the cooked Italian Sausage mixture back to the skillet and heat through. Season with salt and pepper to taste.

The Best Gnocchi alla Sorrentina Recipe

lb (450 grams) potato gnocchi

San Marzano tomatoes, crushed

mozzarella,

garlic,

basil leaves,

Olive oil for sautéing

Salt and pepper,

Prepare the Tomato Sauce

In a saucepan, heat olive oil over medium heat. Add garlic and sauté until fragrant. Pour in crushed tomatoes, season with salt and pepper, and let simmer for 15-20 minutes. Stir in basil leaves.

Cook the Gnocchi

Bring a large pot of salted water to a boil. Add gnocchi and cook until they float, about 2-3 minutes. Use a slotted spoon to transfer gnocchi into the sauce.

Assemble and Bake

Preheat oven to 400°F (200°C). Transfer gnocchi and sauce to a baking dish. Top with mozzarella and bake for 10-12 minutes, until bubbly. Broil for a few minutes for a golden top.
