Grinder sandwich pasta salad takes the picnic classic and turns it into a full on meal with all the flavors of your favorite sub sandwiches. This hearty pasta salad features a blend of chopped deli meats, cheeses and hoagie vegetables tossed in a tangy combination of mayo and vinegar.

Grinder Sandwich Pasta Salad

lb rotini pasta

lettuce

pickled banana peppers (+ 1 tbsp of the brine)

provolone cheese (roughly chopped)

onion

deli turkey (chopped)

hard salami (chopped)

deli ham (chopped)

mayonnaise

red wine vinegar

salt & pepper (to taste)

oregano

red pepper flakes (optional)

Cook the pasta in salted water according to the instructions on the package. When done, transfer it to a strainer and run it under cold water to stop the cooking process and cool it. Set it aside.

To a large mixing bowl add the mayo, vinegar, seasonings, and brine. Whisk together until evenly combined.

Add the cooled, cooked pasta to the bowl and gently toss until it&#39;s all evenly coated.

Add the remaining ingredients, gently tossing again just until combined.

Serve immediately and enjoy!

First add the iceberg lettuce, red onion, banana peppers, grape tomatoes, salami, pepperoni, turkey, provolone cheese, and parmesan cheese to a large mixing bowl.

Next in a small bowl or jar combine the mayo, red wine vinegar, banana pepper juice, garlic powder, oregano, and salt until smooth. Season with black pepper to taste.

Pour the dressing over the lettuce mixture. Toss the salad thoroughly until all salad ingredients are combined.

That was fantastic!! I just finished it for dinner!! I could eat twice as much since I didn't have all the carbs from bread,  lol! The dressing is really a must for that authentic sub taste!

Just made this salad and had a hard time not eating the whole bowl myself!! So good😊 I made it exactly according to the recipe but did add diced cucumbers.

Love this as a side or a meal. Excellent taste! The second time I made it, I didn't have provolone or parmesan, so I chopped up slices of pepper jack and it was still delish! Love the added spice as well. Def adding to our favorites 😍

In a large bowl, combine the lettuce, onions, tomatoes, pepperoncini, turkey, ham, salami, prosciutto, cheddar or provolone, and Parmesan. Toss with tongs to combine.

In a small bowl, combine the mayonnaise, pepperoncini juice, vinegar, garlic, Parmesan, Italian seasonings, salt, and pepper. Stir to combine. Taste the dressing and adjust the vinegar for more tanginess, if desired. Adjust the salt and pepper, as desired.

When ready to serve, pour the dressing over the salad ingredients and toss with tongs to coat. Sprinkle with red pepper flakes and serve immediately.
