To the cooker, add UNCOOKED PASTA, CHICKEN BROTH, DICED TOMATOES with their juice, ITALIAN SEASONING; SALT, and PEPPER.

Press the &quot;Cancel&quot; function on the Instant Pot. Secure and turn pressure release valve to the &quot;Sealing&quot; position.

Select &quot;Manual&quot; or &quot;Pressure Cook&quot; for 1 minute on HIGH pressure (yes, you heard that right...1 min) or 2 min if using thicker pasta like macaroni, bow tie, or penne.

When the cycle is complete, a Quick Pressure Release (QPR) is needed to depressurize the cooker and prevent overcooking the orzo pasta. If you use a thicker pasta, allow 10 min natural pressure release.This is done by turning the pressure release valve from &quot;sealing&quot; to &quot;venting&quot; position, using an oven mitt for protection.CAUTION: The steam shoots upward from the pressure valve when depressurizing. Always stand back from the cooker when releasing the steam.

Heat olive oil and butter in a Dutch oven set over medium-high heat.

Add the onions and carrots; cook for 4 minutes, stirring occasionally.

Stir in the garlic and cook for 20 seconds.

Add the sausage and cook for 6 minutes, or until completely browned, breaking it up into pieces with a wooden spoon.

Stir in the Italian seasoning, salt, pepper, and tomato paste.

Add crushed tomatoes, diced tomatoes, and sugar; stir to combine.

Add in the chicken broth and water; add in the bay leaves and bring mixture to a boil.

10-12 oz sweet Italian sausage, (or a mix of sweet and hot)

bourbon, (or brandy)

chickpeas,

tsp dried oregano, (or 2 tsp fresh)

tsp dried thyme, (or 1 tsp fresh)

kosher salt and black pepper, (to taste)

Heat the oil in a large pot. Add the onion, carrots, garlic, and salt. Cook over low heat until the the vegetables are very soft, about 15 minutes.

Transfer the vegetables to a blender with the chicken stock. Blend until fully pureed.

Heat up the pot to medium. Add the Italian sausage, breaking it up into small pieces. Saute until the sausage is browned and has lost its pink color.

Add the bourbon and deglaze.

Stir in the chickpeas, oregano, and thyme. Then pour in the pureed stock. Bring to a boil, then lower the heat and keep at simmer for 20 minutes.

Add the broccolini and cook until crisp/tender, about 3-4 minutes. Stir in the cream.

Stir in beef broth, tomatoes, tomato sauce, carrots, basil, and oregano. Bring to a boil. Reduce heat; simmer uncovered for 20-25 minutes.

Stir in beans, tortellini, and parsley. Bring to a boil and cook for 10-12 minutes or until beans and tortellini are tender. Sprinkle with Parmesan cheese on top of each serving. Serve with warm garlic bread.

*Just be aware that if you save this soup for leftovers the pasta tends to drink up the broth so the result is a really thick soup if you eat it the next day.

Heat olive oil in a large pot over medium-high heat. Break sausage into chunks into pot.

Let brown on bottom about 3 minutes, then turn and break up sausage and cook until no longer pink. Transfer to a paper towel lined plate, leave rendered fat in pot over medium-high heat.

You should have about 1 Tbsp fat in pot, if needed add a little more olive oil or drain off some excess fat if there&#039;s too much.

Add onions, carrots, celery and bell pepper and saute until starting to soften, about 6 minutes. Add garlic and saute 1 minute longer.

Pour in broth, tomato sauce, tomatoes, and add Italian seasoning. Return sausage to pot and season mixture with salt and pepper to taste (you shouldn&#039;t need much salt).

Bring to a simmer then cover, reduce heat to medium-low and let simmer 5 - 10 minutes until veggies are almost soft.

Add orzo. Cover and let simmer, stirring occasionally (while scraping along bottom of pot as orzo will tend to stick). Cook until nearly al dente. About 8 minutes.

Remove from heat. Stir in some ice (1/2 cup or so) if you want to help stop the orzo from cooking and getting mushy. Stir in fresh parsley and basil.

Serve warm, topping servings with grated parmesan if desired.
