These Instant Pot Hawaiian Chicken Tacos are out of this WORLD. Juicy pineapple and spiced chicken crisped under the broiler, tucked into tortillas, and rolled up with creamy jalapeño ranch slaw.

Instant Pot Hawaiian Chicken Tacos with Jalapeño Ranch

1.25 lbs. boneless skinless chicken thighs

pineapple,

jalapeño, minced (remove ribs and seeds for less heat)

red onion, minced

garlic,

chili powder

cumin

salt

sriracha

yellow mustard

water

mayonnaise

olive oil

white vinegar

jalapeño (remove ribs and seeds for less heat)

garlic

dill (or about 1/4 cup fresh)

parsley

chives (or sub 1/2 teaspoon onion powder)

black pepper

Cabbage

Tortillas

Prep

Preheat the oven to 475 degrees (broil setting).

Instant Pot

Place all chicken ingredients in the Instant Pot. Cook on high pressure for 10 minutes (20 if frozen). Release the pressure and shred chicken directly in pot.

Broil

Transfer shredded chicken to a baking sheet lined with foil. Broil for 10-15 minutes until browned. 

Sauce

Pulse jalapeño ranch ingredients in a food processor until smooth. Toss some of the dressing with finely shredded cabbage to make a slaw.

Done

Serve chicken in warm tortillas with slaw and an extra drizzle of jalapeño ranch, slices of avocado, extra pineapple, cilantro, red onion, etc.

I absolutely loved this recipe! It was amazing and quick and easy, restaurant quality. Pleased the whole family. Will make again and not a thing beside maybe doubling the recipe!!

I omit most of the water and oil from the slaw dressing, it was just to thin. The flavor is out of this world though. This is in the monthly rotation.

We left out the seeds and ribs of the peppers, and used half the siracha. It was a very mild spice level. Those who wanted more spice, added siracha to their own tacos.

My family absolutely  LOVES this meal. We use Naan bread instead of tortillas! It is super tasty and incredibly  filling! Thank you again for the recipe

These were so deliciously different!!!  We made them according to the Instapot instructions and after every bite, we looked at each other and said, "this is amazing!"  The dill was a unique flavour to a taco experience. Will definitely be adding this to our favourites list!

Made this for dinner tonight.  It is delicious!  Hard to describe the taste -- calling it "Hawaiian" seems almost misleading  -- the flavor is much more complex (no disrespect to Hawaiian flavors!) than that would suggest.

Instant Pot Hawaiian Chicken Tacos with Jalapeño Ranch Slaw

I made 2 batches in the IP, and broiled all of it together.  9 people devoured it, with sides. All 9 loved it....definitely a keeper, and inexpensive to put together. I made the sauce 2 days in advance,  to meld the flavors...delicious.

Ashley when I don’t have the fresh herbs on hand I mix the first 5 ingredients with a 1/2 packet of ranch dressing mix (in the packet). Not exactly the same but it has worked for us!!

This is one of my favorite recipes! I’ve always get rave reviews from everyone!

Jalapeño Ranch is perfect as a dressing, dip or sauce. It has a thick sour cream base, and is lightened up with fresh cilantro and lime juice and a hint of spice.

Jalapeño Ranch Recipe

sour cream

Tbsp cilantro (chopped)

jalapeno (Seeded and chopped (2 Tbsp))

tsp lime juice (freshly squeezed)

onion powder

garlic powder

Combine all dressing ingredients in the bowl of a food processor, blender or magic bullet and blend until creamy and smooth (about 30 seconds).

A quick &amp; easy vegan dinner idea, these Sheet Pan Burrito Bowls are filled with vegan &quot;beef&quot; crumbles, fajita veggies &amp; a cilantro yogurt sauce!

Sheet Pan Burrito Bowls

beef

bell peppers (sliced)

onion

avocado oil

taco seasoning

cilantro (stems removed)

jalapeño (roughly chopped)

non-dairy yogurt (unsweetened)

chives

dill

pepper

apple cider vinegar (to taste)

salt (to taste)

leftover rice

romaine (chopped)

corn

avocados (sliced)

cilantro

lime wedges

tortilla chips

Preheat the oven to 425 degrees and line a baking sheet with parchment paper.

Add the bell peppers &amp; onion to one side of the baking sheet and the beef crumbles to the other side. Drizzle the oil over everything and sprinkle with the taco seasoning. Toss to coat (keeping the beef and veggies on separate sides) and place in the oven for 15 minutes. Toss and place back in the oven for 10 minutes.

Meanwhile, add all of the cilantro sauce ingredients to a food processor or blender and blend until smooth. Taste and adjust the seasonings as needed. Set aside.

To assemble, add romaine to each bowl and top with rice, beef, peppers/onions, corn and avocado. Drizzle with cilantro sauce and finish the bowls off with some more cilantro, lime wedges and tortilla chips.

Jalapeño Ranch! Creamy, tangy, thick but drizzly, a little classic dill flavor, and a subtle kick of fresh jalapeño. SO GOOD.

Jalapeño Ranch

plain Greek yogurt

1 clove garlic

jalapeño

tablespoon freeze-dried dill

Blend all the sauce ingredients together in a small blender or food processor until smooth and creamy.

Update: I made this as a sauce for chicken burrito bowls and nearly died it’s so good!! I made some for my 2 year old without the jalapeño and she devoured it. She even asked to dip her toast in the it next morning! Thanks for another great recipe.

We made this for dinner to go with the Hawaiian Chicken Tacos on this site. My toddler ate everything and you are my hero. Seriously! The only reason I can imagine this picky two year old, on a steady diet of cheese, suddenly decided he loves cabbage is because it was coated in this amazing sauce.  I had to banish him from the kitchen because he was grabbing handfuls of slaw from the bowl. Thank you!
Also, we subbed cilantro for the parsley because it’s what I had on hand and it was super tasty.

I think I will try the version with mayo next time. Seemed to be lacking in a little depth, but maybe I just messed something up.

It's a little thick for my liking. Can I use a little to milk to make it a bit thinner? Also, can I use a combination of milk and oil to cut the fat just a bit? If so, what amounts do you recommend?

Loved this so much!! Tasted a lot like Chuy’s creamy jalapeño if you’ve ever tried that!! Only changes I made was added a pinch or two of pepper and Mexican crema to think it out and it turned out great!!

Hi.  Your jalapeno ranch is really good.  And I have even added an avocado half to it (in the FP) to blend.  It is my Granddaughter's favorite! This would be good on a mexican mixed salad AND...  on sweet potato fries, which I know sounds weird, but is really amazing.  Also might try on crispy oven roasted artichokes.

I can never not have this in my fridge! It is so delicious and versatile. I didn’t have jalapeño today so I used chipotle’s in adobo instead, lights out just as delicious! 12/10 baller sauce, use that sh*t on everything!

Good sauce.  It was too much dill for me.  I used “tamed” jarred  jalapeño..so did not taste them as much possibly.  I will make again for sure.
