Jamaican Jerk Seasoning

garlic powder

tsp smoked paprika ((regular paprika is fine))

tsp allspice (ground)

tsp salt

tsp black pepper (ground)

tsp red pepper flakes

tsp cumin (ground)

tsp nutmeg (ground)

cinnamon (ground)

brown sugar

thyme

parsley

Mix all the ingredients together in a bowl. Recipe will yield about 1/2 cup. Store in a spice jar in your spice cabinet.

Grilled Jamaican jerk chicken wings are crispy, bold, and oh-so-memorable. The homemade marinade makes for a fantastic snack or appetizer.

Jamaican Jerk Chicken Wings

lbs chicken wings,

garlic,

white onion, chopped (about 1 cup)

ginger

jalapeno,

Tbsp honey

limes (about 1/3 cup)

orange juice

tsp black pepper

tsp smoked paprika

nutmeg

tsp cinnamon

bay leaves

olive oil

Add chicken to a large resealable plastic bag.

Add garlic, onion, ginger, jalapeno, soy sauce, honey, lime juice, orange juice, salt, pepper, paprika, thyme, allspice, nutmeg, cinnamon, cayenne, bay leaves, and oil to a medium-sized bowl. Stir to combine. Transfer marinade to the bag.

Seal the bag and place in the refrigerator for at least 2 hours, up to overnight.

When ready to cook, preheat grill to 400˚F.

Remove wings from marinade and discard the excess. Transfer chicken to the grill and cook for 30-40 minutes, flipping every 10-15 minutes, until skin is crispy and chicken registers 165˚F internally on a meat thermometer.

DIY Jamaican Jerk Seasoning

Tbsp garlic

Tbsp allspice

½ tsp sea salt

½ tsp dried thyme

½ coriander

½ tsp ground black pepper

- 1 ½ tsp ground cayenne* ((start with less if your cayenne is especially spicy))

Add all spices to a small jar (or bowl) and shake (or stir) to combine, breaking up any stubborn clumps of brown sugar.

Taste and adjust as needed, adding more cayenne if it&#39;s not noticeably spicy. It should taste sweet, salty, and quite spicy. Flavor will vary with the freshness and heat level* of your spices, so feel free to adjust further to taste (we added the full amount of cayenne)! Will keep at room temperature for several months.
