This Mentsuyu Recipe (Cold Soba Noodle Sauce) is ready in minutes! Made from soy sauce, mirin, sake and dashi powder, it's a super refreshing dipping sauce for a hot summer's day.

Quick Mentsuyu Recipe (Cold Soba Noodle Sauce)

soy sauce

mirin

tbsp cooking sake (rice wine)

dashi powder

Stir together your soy, mirin, sake or rice wine and dashi powder in a saucepan and gently bring to the boil, stirring occasionally.

Take it off the heat and set aside, allowing it to cool completely before use.

(Optional) Garnish with a sprinkling of aonori powder or thinly sliced nori for extra flavour.

For the sauce:

If you’re ready to eat, go ahead and bring a medium pot of water to the boil, then add in your soba noodles. Cook according to packet directions (usually around 3 mins or so), then drain and remove from the heat.

For the most refreshing experience, allow your noodles to cool completely before serving. You might like to run them under cold water to speed this up, or pop them in the fridge for 10 mins or so before serving so they cool down more quickly.

How to Make Mentsuyu - Japanese Cold Soba Noodle Dipping Sauce

A quick and easy recipe for homemade Takoyaki Sauce, PERFECT for drizzling over crispy golden takoyaki (Japanese octopus snacks). Sweet, tangy and oh-so-delicious, it’s also an amazing sauce for other Japanese dishes like okonomiyaki (savoury pancakes) and yakisoba (crispy fried noodles).

Takoyaki Sauce

tbsp mentsuyu (homemade or store-bought)

tbsp worcestershire sauce

tbsp oyster sauce

tsp tomato sauce / ketchup ((tomato sauce))

tsp honey

½ tsp garlic (minced

ginger

Simply pop all your ingredients into a small bowl and mix together. 

Taste your sauce and add more of any ingredient until you’re satisfied with the flavour.

A souped-up version of a common Japanese ramen condiment that combines the powerful flavors of three common aromatics, allowing you to add a delicious punch of flavor to any Asian soup dish

tbsp garlic (finely minced)

tbsp ginger (finely minced or grated)

tbsp Bragg's Liquid Amino

Combine onion, ginger, garlic, and oil in a small pan.

Saute over medium heat approximately 15 minutes or until most of the moisture is cooked out and a deep brown color develops. Stir frequently to prevent burning. Keep a close eye on the pan. Once the browning begins, it will advance fairly quickly.

Remove from heat just before it reaches your desired doneness as the carryover heat will finish it off. Carefully stir in Bragg’s Liquid Amino to avoid splashing.

lime juice

dashi powder (dissolved in 2 tbsp water)

¼ tsp mirin

tsp rice wine vinegar

Pour all ingredients (soy sauce, lemon juice, lime juice, dashi powder, mirin and rice wine vinegar) into a small bowl.

Whisk together and taste test. Add a little more of any ingredient til you&#039;re happy with the flavour.

Garnish with spring onion. (Omit if storing for later use in the fridge.) Serve beside your favourite dipping foods such as gyoza or udon, as a sauce for steak or seafood, or as a zesty salad dressing.

Quick Japanese Ponzu Sauce [6 Ingredients / 2 Mins!]

This Homemade Yakisoba Sauce Recipe is like barbecue sauce on steroids. Mix a few easy ingredients together and this bad boy is ready for your noodles, beef, pork or even on an omelette. AND - it&#x27;s ready in less than 5 minutes.

Yakisoba Sauce Recipe

Worcestershire sauce

tbsp oyster sauce (or vegetarian oyster sauce)

tbsp rice vinegar

tomato sauce / ketchup

tsp raw sugar

hoisin sauce

tsp minced ginger

Japanese 7 Spice (to taste, or chilli powder)

Add the soy sauce, Worcestershire sauce, oyster sauce, rice vinegar, tomato sauce (or ketchup), raw sugar, hoisin sauce, ginger and Japanese 7 Spice powder into a small bowl and mix well.

Taste

Taste, and add a little of any ingredient until you&#039;re satisfied with the flavour.

Store

Store in an airtight container in the fridge until you’re ready to use. Aim to use within a couple of days for the best flavour.
